Regulations: Food Safety Modernization Act (FSMA) (1.25 CEUs)Presenter: Jospeh A. Levitt, Esq., Hogan Lovells

The Food Safety Modernization Act (FSMA) is the most sweeping set of food safety reforms since the original food and drug laws were enacted near the beginning of the 20th century.

Joe Levitt will explain what you need to know to get ready. Topics to be discussed include 1) what new responsibilities does this new law place on food manufacturers, including bottled water manufacturers; 2) what new controls will the law provide over imported food, including bottled water and bottled water components; 3) what new enforcement powers will FDA have; and 4) what new fees will be imposed on bottled water companies.

8:00 am - 9:45 am CEU

Lab Testing: Getting It All Right (1.75 CEUs)Presenters: Michael Neiheiser and Stephen R. Tischler, National Testing Laboratories, Ltd.

These days, there’s a multitude of instruments and procedures to follow in the process of bottling water. This session will explore the basic theory

and operation of some of the most important analytical instruments used in a modern drinking water laboratory. Special attention will be paid to those analytical methods used in the testing of source water and finished products. The main focus will be on instruments used to test physical factors, metals, inorganic ions, volatile organics, herbicides, and pesticides. Attendees will gain a fundamental understanding of how these instruments operate and how the analytical results are produced, interpreted, and reported for regulatory purposes.

8:30 am - 9:45 amResource Management: Why Do Some Companies Save More Energy Than Others?Presenter: Walt Tunnessen, U.S. EPA ENERGY STAR

Why do some companies save more energy than others? One reason is that they have established effective energy programs. The U.S. EPA’s ENERGY STAR program helps companies

develop and strengthen their energy management programs to improve efficiency and protect the environment. ENERGY STAR, a voluntary government program, is the national symbol of energy efficiency and environmental protection. This session will provide an overview of the ENERGY STAR program for industry, detail how EPA works with industrial sectors (such as food processing), and present the basics of the ENERGY STAR plant certification program and Challenge for Industry recognition.

Tap Water and Bottled Water: The Facts (1.75 CEUs)Presenter: Bob Hirst, IBWA

The activist and press communities have long misinformed the public about how bottled water is regulated and tested. They claim public drinking water is tested more frequently than

bottled water. They claim bottled water is regulated for quality less stringently than public drinking water. Come see and hear the truth about how bottled water compares to tap water. This session focuses on the facts, with factual illustrations and examples. After attending, you’ll be equipped with the facts to respond to local allegations about “shortfalls” in bottled water regulation.

10:00 am - 11:15 amSmall Bottlers: Issues Forum Presenters: Speakers TBA

The forum will give small bottlers the opportunity to engage in roundtable discussions on topics that are specific to their business practices and the challenges they may be facing.

10:00 am - 11:15 am CEU

Environmental Sustainability: Increasing Sustainability Efforts (1.25 CEUs)Presenters: John Friedman, Sustainable Business Network of Washington, DC; Kevin Mathews, Nestlé Waters North America

IBWA has offered its members multiple opportunities to learn how to make their businesses more environmentally sustainable. (For

example, IBWA published and distributed to members its Life Cycle Inventory (LCI) report, a lightweighting study on bottled water, and a best practices document.) This session furthers IBWA’s environmental education offerings by advising small bottlers on how to increase their sustainability efforts and lower their carbon footprints. If your company wants to make any production, operation, or distribution changes to positively influence your carbon footprint—this includes changes in solid waste production, energy use, carbon emissions, water use, recycling and reuse of materials—please attend this informative seminar.

11:00 am - 12:15 pmRevenue Streams: What To AddPresenter: David Carlile, 3M Purification Inc.

Recurring revenue can provide a stabilizing source to your revenue base. What are the alternative products and services you may want to consider? What statistics are available to help you make profitable decisions? What are the critical points to consider concerning vendor experience, quality, and training? And, most importantly, what are your next steps?

Raw Materials: Polycarbonate and BPA (1.25 CEUs)Presenter: Steven Hentges, PhD, American Chemisty Council

Polycarbonate and bisphenol-A (BPA) continue to be the source of research studies that end up receiving conflicting media coverage. What is the latest scientific data? Where does it fit in with

current health and environmental issues? How does all of this impact your company’s production and marketing? Attend this session to find out.

1:00 pm - 2:15 pm ceu

Audits: How to Avoid the Top 10 Failures (1.25 CEUs)Presenter: Chris Dunn, NSF International

Based on research drawn from NSF International’s experience in conducting IBWA audits, Chris Dunn will review areas where non-conformances most often occur. This will

include discussion of Prerequisite Programs (PRPs), Good Manufacturing Practices (GMPs), and Sanitary Standard Operating Procedures (SSOPs) on personnel, physical plant, and grounds, equipment, production/process control systems, food defense, and traceability.

limits thereby improving process consistency. This session covers how integral elements of SPC—control charts, Pareto

Attention Bottled Water Plant Operators!iBwa certified plant operator program

The IBWA Code of Practice requires members to have at least one Certified

Plan Operator (CPO) in each member facility. The 2011 IBWA Annual

Business Conference is an ideal time to become certified or to obtain

continuing education units (CEUs) to keep your certification current.

To become certified, use the IBWA Plant Technical Reference Manual and Bottled Water Code of Practice to study for the CPO exam, which is

scheduled for September 30, 2011.

To keep certification current, CPOs may either retake the CPO exam

every three years or accrue the required 18 CEUs within each three-year

period—which averages out to only six (6) CEUs per year. At this year’s

convention, 18 CEUs are available. Just look for the sessions marked

with the ceu

2:30 pm - 3:45 pm ceu

Emerging Contaminants: What To Know (1.25 CEUs)Presenter: Andrew Eaton, PhD, MWH Laboratories

Chrome-6, pharmaceuticals, nitrosamines, VOCs, and the list keeps growing. These “emerging contaminants” (as they are called) impact the bottled water industry at multiple levels, including

sources, treatment issues, and potential regulation. The California Office of Environmental Health Hazard Assessment (OEHHA) and NGOs (such as EWG) are playing a major role in moving emerging contaminants to the fore. Learn what you need to know and the potential impacts on your business.

3:15 pm - 4:30 pmProfitability: Achieving Net GrowthPresenter: Steven Keim, Hidell-Eyster International

This session explores the three stages of an HOD company’s life cycle. What is good growth versus bad growth? Why is steady growth critical to the success of your HOD business? What is the

financial value of adding one new cooler rental customer to your business? Ok, if the right type of growth is so critical, how do you get it?

Plant Tour: Southern Nevada Water Authority (1 CEU)

Have you ever wondered what exactly goes into treating water for distribution to the public? The Southern Nevada Water Authority’s River Mountains Facility treats up to 300 million gallons of water per day and is pleased to provide an opportunity for tour participants to become educated on what is involved in providing clean drinking water to the public. This state-of-the-art facility uses both ozone and chlorine in its disinfection process. Ozone is also intended to reduce the amount of organic material in the water and, as a result, reduce trihalomethanes in the finished water. Tour bus will depart from and return to the MGM Grand. Limited availability. (Ticketed Event)
