The current buzz surrounding Plymouth is evident in the number of newopenings across the city. As a result, existing restaurants are raising the bar to levels we’ve never seen before. Combined with Architect David Mackay’svision for the future, the end result is increased competition and greaterchoice, which can only be a good thing!

Tony Achilles has joinedhis brother Nick at Platters on the Barbican – maintaining a long-standing family tradition. Platters openedtwenty-seven years ago and their late father Rocky developed the restaurant’s reputation for fine seafooddishes. It attracts regular visitors from far and wide. REDSA former hotel on Ebrington Street has reopened as a lively new boutique bar. Reds, the former Trafalgar Hotel, has been transformed by its ownersAdmiral Taverns. Original features such as the ornate ceiling and doors have been restored and combined with a newbar, flooring, giant plasma screens.Landlord Mike Smith says “thetransformation is fantastic – far better than I ever imagined.”

BISTRO BACCHANALIAA new and eagerly awaited restaurant has now opened at Sutton Harbour,Plymouth. MORGAN’SBRASSERIE
Atrendy, energetic restaurant istaking the Plymouth diningexperience to exciting newheights. Morgan’s Brasserie,found slap in the middle of
Plymouth centre, is a city restaurant for citypeople. Everything about Morgan’s isdesigned to cater to the demands of thosewith active lives and who just love eating out.
Whether it’s express-service, qualitylunches or leisurely three-course dinners the staff will go out of their way to ensurecustomers have a pleasurable andmemorable experience.
Morgan’s Brasserie, which opened in July 2006, offers superb, affordable food in a friendly and welcoming setting. It is a large, modern establishment, with a fresh, contemporary vibe.
“People feel at ease when they come in -it’s important for people to feel relaxed andcomfortable as well as enjoy the goodfood,” said manager Craig Thompson.
The décor is striking and inviting, but not overstated. Customers can choose thealluring, romantic, red side with a low ceilingand soft lighting or the main room, which islight and spacious. With an open-plankitchen diners can witness the vivacity with which the chefs work.
The staff too were a lovely bunch. They knew the menu and were clearly welltrained but they weren’t over fussy. Afterordering the food they morphed into thebackground and were almost unnoticeable – the sign of good service.
Morgan’s comfortably caters for up to 120 diners on the lunch service. There is a lively and friendly ambiance, peoplearriving and leaving, chatting and eating –the restaurant really captures the energetichustle and bustle of city life. And the lunchmenu, which has around 15 choices rangingfrom moules marinieres to a beef opensandwich, is designed to be served within a matter of minutes.

Head Chef Ryan Marsland explained “Wehave such a wealth of fresh ingredients onour doorstep here in Plymouth, especiallyfresh fish and shellfish - I think we’ve got thebest seafood in the country. Tonight, forexample, we have enormous, juicy musselsfrom Fowey – they’re probably our best-
seller at the moment.”Aside from fish there is also a good
choice of meats and a handful of vegetarianoptions. All the ingredients are seasonal andsourced from the verdant fields and farmson the city’s doorstep.
“I just love the challenge of working withwhatever arrives each day – it’s so rewardingand I’m learning all the time,” said Ryan.
Customers might expect to pay through
the roof for such high quality ingredients,but the prices are very reasonable, day and night. Lunches start at as little as £3.95,the majority are around the £7-8 mark andthe dearest is only £9.95 for either sirloinsteak or seared scallops.
In the evening customers can expect
to pay around £5 for a starter and anythingbetween £9.95 and £16.95 for a main course.
On Sundays, what better to do thanspend the afternoon enjoying a generousroast dinner with friends and family. Withprices as little as £7.95 for a roast rib oflocally reared beef with Yorkshire puddingand all the trimmings, you can sit back andlet Morgan’s do the cooking for you, whileyou enjoy the Sunday papers. Other options
include roast pork loin, confit of duck,venison casserole and chargrilled vegetablesand halloumi risotto. For just £10.95,customers can add a traditional starter, suchas home-made soup or prawn cocktail.
The food is fresh, seasonal, well cookedand nicely presented, however Morgan’s is nota fine dining restaurant and doesn’t aim to be.The fish cuts are more generous than mostand the sides, including local vegetables,potato gratin and fries, are more than enough.They also come inclusive of the price.

Who taught you to cook?I was taught at Westminster College, which is renowned for being the best in the Country. I spent three years there. It was a fantastic experience and Irecommend it to anyone.
What is your speciality dish?I would have to say fish dishes. Plymouth isrenowned for its fish markets and the
choice available is enough to make anyone passionate about seafood. I love working with fish.
Which chef do you currently admire?It would have to be Raymond Blanc from Le Manoir aux Quat' Saisons, and AntonMosimann from the restaurant, Mosimann’s.For a short period I was very fortunate to beable to work with these talented chefs. Itwas a great experience and they taught mesome very valuable skills.
Where else do you eat out locally?I’m always busy at work, but I do enjoy going to a good Chinese restaurant. My favourite would have to be Ocean Palace in Plymouth.
Is there anywhere you haven't eaten that you're dying to try?The Rooftop Restaurant and the RoyalGarden in London. Both have fantasticreputations. Unfortunately both are far too expensive for me.
If you could cook for two famous people whom would they be and whatwould you cook them?Being that I’m a fanatical Chelsea fan, itwould have to be John Terry and FrankLampard. I would treat them both to Seabass with a Fennel Froth accompanied withgrilled vine cherry tomatoes, with quenelleof smoked haddock mousse.
In your experience what is the mostimportant thing about cooking?Knowing your ingredients, most definitely.Using fresh products and doing a taste test before serving is very important. Also having a good kitchen brigade behind you.

Despite their knowledge of pubs, the couple longed for a Restaurant and Bistro.Bacchanalia’s waterside location,with its proximity to the fish
market, made it the perfect choice for thisnew venture. The unusual name is the sourceof much conversation. It was inspired by thewild and mystic festivals held by the RomanGod of Wine, Bacchus, in about 200BC andwhilst Bruce and Lesley-Ann don’t promisethat these ‘orgies’ of food and wine will bereplicated on a daily basis they do hope tobring some of that enthusiasm to the table!
Lesley-Ann says: “We have foundrunning a restaurant is a little bit moretheatre than you get in a pub. It’s our firstproper restaurant and it’s been fantastic.We’ve received lots of positive commentsand we’re very happy here.”
Bistro Bacchanalia’s new look wasrevealed in June 2007 and since then themenu has undergone some fine tweaking tooffer something exceptional. Now, what
was already a well-established restauranthas been transformed into a light, modernone with great food and a fantastic winelist, much of which is available by the glass.
The Bistro is very fish oriented; Plymouth hasa fantastic fish market and the chefs work veryclosely with their fish suppliers to ensure theyhave the very best of what’s available each day.The food is always fresh, local, seasonalproduce – what’s in season influences what ison the menu – and all the dishes are made on-site. Although fish does play a big part, there isalso meat on offer for the carnivores; it’s very
simple food such as surf ‘n’ turf – a 6oz filletsteak topped with garlic prawns and servedwith fries, or a confit of duck.
They also cater for vegetarians with aselection of pasta and risotto dishes suchas creamy asparagus risotto served withlocally made bread, or linguine pasta tossedwith oven-roasted ratatouille topped withparmesan shavings. The menu is alsosupplemented by daily specials and atlunchtimes you can choose two courses fora set price. Customers can take their pickfrom a selection of the starters, main course

Four years ago a pioneering and inspiring ‘vision’ was created for Plymouth by David Mackay – the world renowned architect who revived the fortunes of Barcelona. It advised the council toexploit its wealth of waterfronts, build sky-reaching mixed-use developments and create a Europeancafé-culture. Helen Wasilewska looks at how this vision impacts on the Plymouth dining scene.
Plymouth is surrounded by water,with the River Tavy on one side, theRiver Plym on the other and thePlymouth Sound stretching out tosea. Speak to anyone in the city and
they will tell you they enjoy relaxing by thewater, be it eating out or having a few drinks.
The city has finally realised there is a hugeopportunity to exploit this asset and thecouncil is at last throwing loads of cash intodeveloping many of the waterside sites, suchas Millbay, Devonport and Sutton Harbour,that have been neglected for so many years.
This is all thanks to the genius architect,David Mackay, who produced a list of
recommendations for the council to revive the city and make it more welcomingand prosperous. Creating a café culture,especially on the waterfront, is at the heartof those plans.
There is already evidence of this on theBarbican, where fixed alfresco diningfacilities have been erected.
But now developments in Millbay andSutton Harbour are beginning to take shapeand the city can expect to see morewaterside restaurants filling the ground floorslots of these developments.
While this sounds exciting for the peopleof Plymouth, the few restaurants which
currently boast waterside views will soonface much stiffer competition.
Despite this, it seems most restaurateursare either taking advantage of theopportunity to branch out into newpremises, or they are looking at ways ofcapturing new markets to differentiatefrom the new competition.
Edmond Davari, owner of several cityrestaurants, has already invested in theSutton Harbour developments and he now has his eye on Clyde Quay.
He said: “I’m all for anything that willmove Plymouth forward and turn it into avibrant city like Brighton. I already have two

restaurants on Sutton Harbour and I havetwo more set to open in the new Eau 2building in the next few months – Asia Chicand Rocco and Lola.
“I’m always on the lookout for newpremises and I will certainly show aninterest in the waterside venues in Millbay.”
Others are simply glad to see the citymaking the most of its coastline.
Jo Hocking is manager of Chloe’s finedining restaurant on Princess Street, in thecity centre. Although she has no plans touse the new developments as a window toopen a second Chloe’s, she welcomes theincreased competition.

She said: “We have no intention ofbranching out and setting up another Chloe’son the waterside because when peoplecome to Chloe’s they expect excellent foodand service and we wouldn’t be able to offerthat in another restaurant, because we canonly be in one place at one time.”
She added: “Any self respecting businessperson knows that competition is healthybecause it keeps you on your toes.
“For people in Plymouth, if the waterfrontis being used to its full potential it will bringmore people into the city. Those people won’talways go to the same bars and restaurantsevery time, so we are bound to benefit fromthe waterfront being developed.”
Around Sutton Harbour, sky reachingresidential blocks are springing up withground floor business space for restaurants.Joined Up Whiting is one of the first toarrive on the scene.
The plans for Millbay are set to transformthe city. The £350 million development,which includes a tree-lined boulevard fromthe city centre to the new marina, known as
Clyde Quay, is the biggest facelift the citywill have seen since it was rebuilt after theSecond World War.
Along the boulevard and around themarina there will be shops restaurants, cafésand bars, making the most of the waterside.
Developer English Cities Fund (ECf) andregeneration agency, English Partnership
have put the Millbay plans together.Howard Morris, ECf project director, said:
“Our proposals are going to turn aspectacularly located but largely forgotten corner of Plymouth into a focalpoint for investment, a great place to liveand work and a leisure destination any city would be proud of.”
Someone who will certainly becompeting directly for the new punters isSteve Bowen, owner of The Waterfront barand restaurant on West Hoe. Despite this, he can only see the good in the changes.
He said: “I buy into the Mackay vision forPlymouth whole heartedly. Before I took onthe Waterfront I visited Cornwall from
London five years on the trot and neveronce turned left into Plymouth. I thinkanything that puts Plymouth on the map in terms of cultural reference, regenerationand places to eat out, is a good thing.
“The waterfront is the crown jewels ofPlymouth and yet so few people knowabout it. We need to do everything we canto raise the profile of it.”
Embracing the Mackay vision, it appears,will be a win win situation for the city.People in Plymouth will have a better choiceof places to socialise on the watersidedrawing more diners to the city from far and wide. And restaurateurs all welcome theincreased competition. Some chose to be apart of the new vision, buying into thewaterside developments, while others arehappy to gear up for the increasedcompetition and the growing number ofpeople who are expected to visit the city.

As a rule we, the Brits, aregenerally pretty poor whenit comes to giving positivefeedback or constructivecriticism – both of whichare hugely important to the development of anestablishment and futurecustomer service. We thinkthat when someone feelsthat faint grumble ofdissatisfaction they shouldnot feel embarrassed butspeak up and this is howyou do it…
HOWTOCOMPLAIN
Only occasionally will you heara dissatisfied customer on thetable next to you rant at thewaitress about the fact thatthe chips were cold or that a
glass of red wine arrived when white wasordered. And rarely do you find a member ofthe ‘oh so polite’ British public shouting atstaff in a restaurant or even politelycomplaining to the right people about thefaults with their breakfast, lunch or dinner.
I’ve done a bit of research and have cometo the conclusion that the golden rule isthis; if you’ve got something negative to say,say it immediately (not when the billarrives). I think you will find most restaurantswill try and rectify the problem quickly withlittle objection and minimal upset to yourmeal experience. In fact it is standardpractice for a member of staff to ask you ifeverything is all right with your meal.This is not just a nicety, it is the ethos ofcustomer service. If you are not satisfiedwith something, use this opportunity that isgiven to you. Most of all though, don't beshy - you're the customer and you’re the onepaying for a meal to be served to you andcooked to your liking.
Here are some situations you might well find yourself in:
1The food takes forever to arrive.What is 'too long' anyway? The lengthof time it takes to prepare your meal
will vary depending on the type ofrestaurant. Top quality fine dining is so-called because the food is prepared toorder from fresh ingredients; so don’texpect it to arrive in ten minutes. And a well-done steak will take time! Thatsaid, if you do think the food has takenmuch too long, call over the waiter and askhow long before your meal arrives, as youhave waited long enough. If they don’tknow, ask them to check. If the responsethey give you is not acceptable then you’reperfectly within you rights to cancel yourorder, ask and pay for the bill (if you've had
drinks or starters). Or if you are not in such a rush, you can ask for the managerand explain the situation to them, more often than not they will knock an agreedamount off the total of the bill orcompensate you some other way.
2Your meals arrive at different times.Now this is a tricky one, but not if youspeak to the waiter straight away and
ask for the other meal. If the response ismore than a few minutes, the best option isto return the meal immediately and askthem to be served at the same time. I don'treally think this warrants money off the billtotal, unless of cause you then progress toscenario number three!

3Your food is cold - when it's supposedto be hot! Returning your meal (andyour partner's if necessary) should be
done without thinking. Just don't do this ifyou've ordered Gazpacho soup!
4You can't bear to look at the food let alone eat it! I’ve experienced thisone first hand – Ox tongue was the
culprit on my plate. I like tongue, but I’mtalking fine slithers of it not a tongue in itsentirety! The waiting staff are your bestsource of information here. If you don’tunderstand something on the menu, or thedescription is not clear, ASK! Your waitershould be trained to be able to explaineverything on the menu. If this fails, and you
didn’t expect the seafood salad to containfully-fledged tentacles, you should complainand ask for something different. This onetakes a bit of bottle, but if you send yourmeal back and ask for something else makesure you do this immediately and whateveryou do don’t eat half of it first. A lot ofrestaurants will only charge you for the onemeal but I urge you to check that this is thecase before re-ordering.
5The portions are tiny. Giant plates and small portions are common inrestaurants these days. I would say

You are quite within yourright to complain to the manager if you thinkthe meal is 'not good value'.
6The waiting staff are rude.My pet hate and completelyunacceptable. Always ask to see the
manager at end of the meal and explain thesituation. I guarantee you any establishmentworth its weight will almost certainly begrateful you mentioned it.
7The food Is under cooked. This iswholly unacceptable and if dealing withchicken or some types of shell-fish, then
it could well be dangerous as well. If this is thecase, ask for the manager immediately, explainthe situation and ask for a new meal. If thisupsets your partner's meal, then don’t beafraid to return it also. Just so you understandthough we’re talking about foods that areunsafe to eat raw, not a steak that could becooked a little more and the problem solved.
8You have been automatically chargedfor service that was poor. Anotherpet hate of mine and for many a grey
area. If you have had poor service, buthaven’t complained, then you don't reallydeserve to get anything (including a servicecharge) knocked off the bill. If you don'tbelieve it stated on the menu that theservice charge was mandatory however, thenask to see it again (it has to state this fact bylaw). If it doesn't then you’re quite withinyour right to refuse to pay the extra charge.
Finally. One bad experience does notnecessarily make a bad restaurant –particularly if they do everything they can torectify it. Last of all and most importantly,please please remember to let the venueknow if you’re happy with your experience –there are so many great restaurants out thereand they will always appreciate hearingcompliments! - and then give them a tip - at least 10% should do it!

MG: What is your favourite meal?IH: I’d never tried a properCornish pasty before I came toPlymouth but it didn’t take melong to become a convert.Lovely jubbly.
MG: What food do you dislike?IH: I find it hard to swallowsome of Gordon Sparks’ jokes.Does that count?
MG: Who pays the bill, you or your wife?IH: Are you kidding?
I’m a gentleman, and thegentleman always pays.
MG: Do you leave tips and ifyes what is the biggest?IH: I always tip. What’s my toptip? Don't waste money buyingexpensive binoculars - simplystand closer to the object youwish to view.
MG: Have you evercomplained in a restaurant?IH: Yes – but never about thefood. Once or twice, I’ve made a few comments about somerather poor service.
MG: Do you consider yourself as a bit of a chef?IH: Only the undefeatedPlymouth Flavour Festchampion for two consecutiveyears – Sparksy’s getting a tinybit peeved, I think.
MG: If you opened a restaurant,what style would it be?
IH: It would be called Ollie’s,naturally, and I’d let the Chefchoose the style. I know a fewgood chefs and I’m prepared to bow to their far superiorknowledge.
MG: When you played, whatwas your pre match meal?IH: Always beans on toast. I feltthey gave me extra propulsion!Things have moved on a lotsince I played, with most clubsemploying sports scientists andnutritionists to give the playersthe best possible chance ofplaying to the top of their ability.
MG: What’s your opinion on tv chefs?IH: Well, they are very clever, talking and cookingall these wonderful meals at the sametime. I need all myconcentrationjust to boil an egg.
MG: If you were head chef, who out of your current squadwould be working as pot wash?IH: I’m not sure any of themhave ever done any washing up in their life. I’d have to pickthe one who’d trained the worstduring the week – make it apunishment.
MG: Would you sign GordonRamsay as a right back?IH: No – with his mouth, he’d miss half of our gamesthrough suspension.
