Banoffee Pie 2 x 395g cans of Top n' Fill Caramel* 180g unsalted butter, chopped 375g digestive biscuits 60ml thickened cream Vanilla essence 75g icing sugar, sifted 4 bananas 30g dark chocolate, finely grated

Melt butter in a small saucepan then cool slightly. Crush biscuits into fine crumbs, add butter & combine. Press crumb mixture over base of a greased 28cm loose based tin, refrigerate for 30 mins. Spoon caramel evenly over biscuit base & refrigerate overnight until firm. Whisk cream, vanilla & sugar to stiff peaks. Cut bananas into thin slices. Remove pie from tin & place on a plate. Spoon half the whipped cream over the caramel filling, then place bananas in an overlapping circle working from the outside in. Top with remaining cream & sprinkle with grated chocolate. Cut into slices with a hot dry knife and serve immediately. *you can use sweetened condensed milk that has been caramelised by boiling for 2 hours, just make sure the pot doesn't boil dry...trust me, it's not fun to clean up!

To the editor... While I commend council for funding a new garden, landscaping, sculpture, etc of the area immediately in front of & around the corner of the Services Club to the tune of $37,800, WHO will maintain this area. I would have thought it was the Club's area to look after, my husband & I have to beautify & maintain our nature strip. The park across the road is lacking in maintenance with Council employees unable to keep up with the weeds, etc. Not enough time allocated for this purpose. The Garden Club have been approached to help in this area. I really believe gardens, parks, etc are COUNCIL responsibility. Morris Park in Rodd Street is also sadly in need of maintenance. Have any of the councillors walked through there in the past 6-12 months? The paths are all overgrown with grass, the only area that looks good is where the Canowindra Garden Club maintains. The lawns (with no thanks to Council, except for the mowing) are nice & green thanks to Mother Nature. This park used to be a showpiece of Canowindra & this year will be 80 years old in August. With maintenance & TLC it could once again be what the Boree Shire had in mind in 1932. I (along with many others) think our money should & could be spent on what we already have not a new garden that doesn't have any plans, as far as I understand, for maintenance. OPEN GARDEN DAY Autumn is a wonderful time of year with warm days and cool nights. It is also a perfect time for gardens to look their best before preparing for Winter, and six generous households are giving you the opportunity to appreciate their hard work. On Sunday 15 April the Canowindra Garden Club are holding their Open Garden Day, where six gardens in town will be opened to the public between 10am to 4pm at a cost of $10 for all six gardens. Payment will be taken at the Primary School garden, where visitors will receive a map with directions which will be stamped at each garden viewed. The gardens open will be: The Canowindra Primary School (one of Sally

Bourne's designs); John and Jill Stone 22 Robinson Street; Ian and Betty Brown 3 Short Street; Trevor Gaut and Dave Watts 61 Clyburn Street; Jim and Jean Goodacre 4334 Belubula Way; Annette Lynch corner of Hospital Lane and

Belubula Way. The Canowindra Garden Club was established by the late Margot Chick in the 1980s, and the gazebo in Mill Street was erected by the Club as a memorial to Margot. The Club now has 30 members, who meet on the third Wednesday of the month at different locations around the town. The Club members planted 200 roses at Morris Park for the bicentenary year as our gift to the town, in the old gardens beds that had been bare of plants for years. The daffodils were planted later, in memory of Joanne White. Members continue to water, weed, fertilize, and mulch the gardens on a roster system. SYDNEY CONSERVATORIUM CONCERT On Sunday 29 April, Sydney Conservatorium with Director of Ensembles David Miller AO, are returning to Canowindra for their 12th annual concert at All Saints’. What started in Canowindra in 1998 has grown to be the Con’s “Grand Western Tour”, which now takes ten days, with concerts, school visits and master classes in about eight towns throughout central west NSW. The whole spectrum of wind, string, keyboard and percussion instruments, and voices have been performed across many classical and contemporary genres of music and every year David and his students bring something unique. The atmosphere is always magnificent with the afternoon sun pouring in through beautiful stained glass windows at All Saints’. The 2pm concert will be followed by afternoon tea and a wine tasting in the church hall as usual, where concert goers can chat with the musicians. This year’s concert includes two violins, viola, cello, guitar, piano (David Miller) and a baritone voice. The student musicians, all in their early twenties, started playing their respective instruments aged 5 or 6. They have CVs as long as your arm already, and each has a list of distinctions, merit awards, scholarships and multiple accolades. The repertoire they have been working on this year, from which pieces will be performed in Canowindra include compositions by Saint Saens, Mendelssohn, Debussy, Schubert, Schumann, Bach, Dvorak, Ravel, Paginini, Beethoven, Brahms and others. Tickets for the 2pm concert will be available at the door for $20 per person ($15 concession). EXERCISE FOR ALL Tai Chi was originally developed as a Chinese martial art, it has been practiced for general health and fitness purposes since the 16th Century. The essential principles of Tai Chi include the mind integrating with the body; fluidity of movement; control of breathing; and mental concentration. Health benefits derived from Tai Chi include improved fitness, increased flexibility and muscle strength, alleviates stress, improved balance, improved posture, helps to prevent falls, promotes inner peace and tranquillity. Cheryl Shirvington and Sandra Nicholson from Forbes are qualified and experienced Tai Chi for Heath and Community Instructors and have held classes in Canowindra for the past five years. With 12 loyal students over this time, Cheryl and Sandra are now offering a completely new form called Tai Chi Fan in which beginners are welcome to participate. It is not necessary to have previous experience to join these classes. Classes will be held weekly Tuesdays 5:30-6:30pm at the Canowindra Primary School Hall from 24 April to 26 June 2012. Classes are scheduled to fit in with school terms, so that family holidays are not disrupted and lessons aren't missed. The cost is $10 per class over 10 weeks, payable in advance to assist in motivating you to continue each week. Fans can be purchased from the instructors. Anyone regardless of age or level of fitness can practice and benefit from Tai Chi. Loose, comfort-able clothing and flat shoes should be worn to classes. THE GOAL IN SIGHT- NEW DEVELOPMENTS Canowindra's five year old Read triplets, Anwen, Mahalah and Gideon, are about half way to their goal of new power wheelchairs. Including off line and online donations, the community, friends and family have contributed amazingly towards this achievement, raising $28,000 already! A few important developments have happened since the last article in the Phoenix: specialised chairs similar to the 'Snap Dragon' chairs that were being considered can possibly be sourced locally. This option would mean the government could partly pay for them and maintain them (still leaving about $30k gap). We could be closer to our goal than we thought. The final decision as to what chair to go with for each child is yet to be made - as they all have different requirements - but one bonus of local sourcing is the reduced ongoing maintenance cost. The Reads are very much looking forward to this Saturday's Balloon Glow event in Canowindra, where a collection will be taken up on their behalf. Volunteers to assist in this collection are desperately being sought. Jemimah Read is thankful that the triplets were chosen to be recipients of this local collection, and wishes to thank the community for all the goodwill and support they have received.
