    This is our first year in the Monticello farmer's market! My name is Katie Lillo. I live in Big Lake and stay at home raising my three kids, ages 5, 3, and 1. I had been wanting to join the farmer's market for the last couple of years, and thought - now is a better time than any! I have always had a love for cooking and baking, and in the past couple of years, I have been trying my hand at canning select items as well. I grew up learning how to bake from my mom and I'm now passing that passion on to my children! Monticello market goers seem to love variety as much as I do! I try to offer a little bit of everything each week, such as, sweet breads, muffins, flatbreads, granola bars, pies, bars, cookies, canned goods, and other sweet treats. My motto is: If you bake it, they will come! :) My parents, Roger and Rhonda Cornelius, also share a booth with me. They have 40 acres located about 25 miles north of Big Lake. They have a large garden and grow a variety of vegetables that have been available at the market this year. These items include: onions, several varieties of peppers, peas, turnips, rad-ishes, beets, leafy greens, summer and winter squash, zucchini, cucumbers, pumpkins, and more. They also offer veggies at their vegetable stand at their farm. They raise laying hens that are free range on their property. You can certainly taste the differ-ence in their delicious farm-fresh eggs! We have enjoyed getting to know the vendors and customers each week and look forward to continuing those relationships in the years to come!

    Recipe of the Week: Pico de Gallo

    Rita will be demonstrating how to make Pico de Gallo at 3:45 at her booth. Stop by for a sample!

    Pico de Gallo 3 large tomatoes (about 3 cups) diced 1 large red onion diced fine 1 small jalapeno (seeded and ribs removed) diced fine 4 sprigs fresh cilantro finely chopped (about cup) 2 green onions finely chopped 1 teaspoon garlic powder tsp salt tsp pepper 1 Tablespoon fresh lime juice Prepare and mix vegetables. Add seasoning and lime juice Mix. Chill hour before serving. Use within 2 days Refriger-ate. Can add: 1 can black beans drained and rinsed 2 ears sweet corn kernels Wear gloves and eye protection when seeding and chopping jalapeno. Do not touch face while preparing pepper. Cilantro and jalapeno pepper amounts can be adjusted to taste Paste tomatoes work best. If using regular tomatoes let drain after dicing to remove juice
