When the soup station converts to hot oatmeal in the AM, it makes the perfect stage for our premium corn muffin. It’s the classic “less is more” opportunity where minimalist merchandising highlights a single product for maximum advantage. Our premium corn muffin is a stand-out product. By placing a limited number on an attractive narrow platter, you spotlight the product and increase its desirability. Assign a staffer to check and restock the platter frequently.

The toasted squares hold up very well without crumbling or breaking. You can toast/griddle the cornbread square ahead to be used in a variety of menu applications.

Cornbread squares.

Lightly coat the griddle with blended oil. Place cut cornbread squares on griddle at medium heat.

Jalapeno and Sweet Cornbread croutons can be used as: • Toppings for chili along with shredded cheddar, chopped sweet onions, angel hair pasta and fresh herbs i.e. cilantro, chives, Italian parsley

• Toppings for a variety of Cobb Salads

• Toppings for Southwest Caesar Salad with chicken

• Displayed in toppings bowl at the self-service salad bar

• Displayed in toppings bowl for Corn Chowder at the self-service soup station

Once dried, drizzle with blended oil, fresh herbs (chives & parsley) salt, pepper and other appropriate seasoning based on desired outcome.

Return to oven and bake at 250° for approximately 30 minutes until crisp.

Place cubes on sheet pan and dry in oven at low temperature, 145° to 150°.

Cut cornbread square horizontally then vertically into cubes.

SWEET OR SAVORY CORNBREAD MIX FOR BATTER

Our cornbread batter recipe with Jalapeno and Sweet cornbread as a base is perfect for coating chicken, fish or shrimp.

With the high sugar content and moistness of the cornbread it’s important to dry out the cornbread before placing cubes into a food processor to blend. Pulse until mixture is fine.

Set aside for future use.

Check for dryness before placing cubes in food processor.

Process the cornbread into cornbread crumbs. Return to oven under low heat to be sure to mix is dried.

Dry by placing cubes in oven at low heat, 135° to 150° for 2 hours.

Cut cornbread square horizontally then vertically into cubes.

SWEET OR SAVORY CORNBREAD BEER BATTER RECIPE

Cornbread Beer Breading Mix:4 cups Cornbread Crumbs (see instruction for drying out the sweet or jalapeno cornbread)

1 ½ cups Soda Water

12 oz. Beer (lighter beer)

3 cups All Purpose Flour

2 tsp. Baking Powder

½ tsp. Salt

Assemble as follows from bottom to top:1. In a stainless-steel bowl

2. Combine all the above ingredients

3. Wisk until smooth

Seasoning Options – Depending on the flavor profile you desire for the finished product. Add either ½ tsp. Cayenne pepper or ½ tsp. paprika or both

Note: Cornbread beer batter works with any seafood i.e. tilapia, flounder, shrimp, etc.

CRISPY JALAPENO CORNBREAD BATTER ONION RINGS• Dip fresh cut onion ringlets into jalapeno cornbread beer batter to coat completely.

• Slowly drop the cornbread encrusted onion rings into frying oil.

• Cook until golden brown.

CRISPY JALAPENO CORNBREAD BATTER NORTH ATLANTIC COD with pickled red onions, dill pickle chips, and arugula on a toasted Brioche bun.• Dip North Atlantic cod fillets into jalapeno cornbread beer batter to coat completely.

• Slowly drop the cornbread encrusted cod fillets into frying oil.

• Cook until golden brown.
