Agronomic and Wine-Making Experience

Diesel Farm DIESEL FARM is a biosphere. It extends over a hundred hilly

hectares pre-Alpine land, in the north of Vicenza province, and includes

ancient forests of deciduous and coniferous trees, pastures, olive groves,

orchards, vegetable gardens and vineyards, of course.

The intention is to preserve the ecosystem integrity, in which man, as

a guest, will be able to identify the subtle balance of flavour that nature

seasonally condendes in plants by the ripening of the strawberries,

cherries, apricots, grapes, apples, olives and chestnuts.

Yields and productions are the anthitesis of the modern industrial

production logic and commercial needs; special care is aimed to balance

and pleasure of sharing the experience of nature depth and intimacy,

which in this environment is a special combination of the warmth of

the Mediterranean climate and the freshness of the Alpine foothills, of

the flavour of paleo-lake seabed and the acidity of basaltic depths of the

ancient volcanoes, of the plain and the mountain.

This is how wine and oil, being products of a passionate and

innovative research of perfection, sometimes obsessive, involve the

constant development of technical methods and approaches, capable

of producing flavours having a real character and personality; they are

genuine because not artificially modified.

The two main aims are:

1. The digestibility of the products: both in the environment (intended

as sustainability of human productive activity in the ecosystem) and

food (aiming at reducing allergens, residues, sweeteners, preservatives,

etc. to zero); a quality food should combine lightness and flavour;

2. The longevity of the products: the ability to evolve positively over

time without the use of preservatives, thus aligning all productive

variables, which virtuously allow a natural and healthy aging.

Wine Paradise Diesel Farm is set in the green hills of Marostica. An estate of

over hundred hectares that extends to an altitude of 300 meters,

sunny and breezy. The calcareous soil and the combination of pre-

Alpine winds with those coming from the Adriatic Sea, makes this

area unique, ideal for the cultivation of vines and olive trees.

All the vineyards have southern exposure; Merlot and Cabernet

Sauvignon, are grown in the milder side of the estate while the

cooler side with greater temperature range is dedicated to the

cultivation of Chardonnay and Pinot Noir. This territory has

stayed intact for centuries and will continue to be so thanks to the

vision of those who decided to preserve it, in full respect of nature,

so that it becomes an area subject to “environmental constraints”.

Nature, Tradition and Innovation According to Renzo Rosso, the most important thing in life are

love, friendship, family, food, beautiful things of nature ….and of

course, good wine. This is the reason why he is proud of Diesel

Farm, where he can welcome friends and guests, both for a business

meeting or for a casual lunch.

“Thanks to my origins I can understand and appreciate every moment

spent in wine making... Diesel Farm has a special relaxing atmosphere:

it’s a timeless environment that follows the rhythm of nature, a fully

authentic place and a part of this region’s history”.

Advanced technology is used to respect nature without altering

it, but according to the tradition of our forefathers, the bottling

period is determined by the phases of the moon, which - Renzo is

sure - plays a key role in nature.

Gift Of Land When Renzo Rosso purchased the property, there were

already Merlot, Cabernet and Chardonnay vineyards. The

vines were old and exhausted; production techniques were

obsolete and aimed more at quantity rather than at quality.

Since then, the production has been reduced to about one

bottle per plant: after the first harvest of 1999, the results were

encouraging. Today Diesel Farm has more than five hectares

of vineyards planted with Chardonnay, Merlot, Cabernet

Sauvignon and - as from 2003 - Pinot Noir. Diesel Farm wines

are available in limited production, and they are particularly

sought after by fans and collectors. 1,000 bottles of wine were

produced in the first year. Now the target is 5,000 bottles of

each type. Diesel Farm is inspired by passion, not by the profit.

The will to make wine is not enough: extensive experience is

also needed. The meeting with Roberto Cipresso, founder of

Winemaking, was fundamental for Diesel Farm. Renzo Rosso

considers him one of the future “gurus” of winemaking.

Mutual friends, the passion for the hills of Marostica and the same

approach to work are all ingredients that led to a special partnership

as from 1999. According to Cipresso “working in these vineyards is

like attending the restoration of a forgotten masterpiece”. The hill

soil where Diesel Farm is located, is exceptional. This is proved not

only by the wine quality, but also by the elements that make this area

fascinating. The special combination of altitude, exposure, climate

and quality of light makes this area particularly suitable for growing

vines”.

Cipresso has provided his expertise at each stage of wine production,

by working in close contact with Renzo Rosso and the staff of the

Farm. The resulting products are: Bianco di Rosso - a Chardonnay,

Rosso di Rosso - a combination of Merlot and Cabernet Sauvignon,

Nero di Rosso - Pinot noir grapes.

Marriage ofInstinct and Technique

Made from Chardonnay grapes, Bianco di Rosso is

fermented in French oak barrels which preserve and

enrich its flavour. It matures in oak barrels for twelve

months during which the wine undergoes the ageing

process, and then its clarified and bottled.

Though maintaining good acidity, the best result

is achieved after an ageing period in the bottle. The

opaque yellow Bianco di Rosso is not filtered in order

to ensure its aromatic richness, characterized by notes

of peach, lime and acacia. The taste is round and full,

the closing is vigorous and flavourful, with a light taste

of peanut.

Rosso di Rosso is obtained from the combination of

Merlot and Cabernet Sauvignon, which are harvested

respectively in the second decade of September

- sometimes on the 15th, an “historical” date because it

is the producer’s anniversary - and in the first decade of

October. The wine is processed in oak vats using ancient

and traditional methods that respect the characteristics of

grapes variety. It is stored in French oak barrels to maintain

its structure and integrity. Same as Bianco di Rosso, it is

not filtered to preserve its richness in a natural way.

The color is a deep ruby red with dark highlights. The

smell is a combination of blackberry and cherry aromas

with fresh and balsamic sensation recalling the moss.

Full and velvety, it expresses all its voluptuousness in the

middle of the mouth, while closing is warm and fragrant.

A wine of great prestige, from Pinot Noir

grapes, Nero di Rosso is a real challenge for Diesel

Farm, because it requires the greatest care during

production. The vines, harvested for the first time

in 2003, are located in really suitable areas thanks

to their climate characteristics. The wine is made

by the use of techniques respecting the fruit and

its integrity. The fermentation takes place in

steel containers, by previous maceration at low

temperature, manual punching-down and ageing in

French oak barrels. Nero di Rosso is an important

wine with fruity notes recalling fig jam.

Diesel Farm is not only known for its wines: there

are two special varieties of oil that are produced on

these hills and particularly sought after.

The Farm olive tree groves are set in one of the

traditional olive growing northernmost area in the

world: the Pedemontana del Grappa (Foothills

of Mount Grappa). Although it is difficult to

calculate the precise age of the plants, it is assumed

that many of them are centuries-old. Younger

plants range between 20 and 50 years age. The

combination of these key factors gives a unique

flavour to the oil produced by Diesel Farm.

Olio di Rosso

The first variety, Olio di Rosso, comes from

olives grown at 300 meters above the sea level,

on a very steep land. It is mainly produced from

Leccino olives with an added portion of Frantoio

and Ascolane olives, followed by a cold-squeeze

within 5 hours from collection.

The very short time between harvesting and

extraction allows to achieve low-acidity oil having

organoleptic characteristics of great freshness.

Olio di Rosso Riserva

The second variety, Olio di Rosso Riserva, comes

exclusively from Grignan olives. The cultivation of

these olive trees is particularly difficult, because

of the fragility of the branches and the hard

collection of the fruits, which makes harvest very

delicate. This is another reason why the cultivation

of Grignan olives is very rare and therefore the

result is a unique and valuable oil.

Grappa di Rosso

Grappa di Rosso is obtained from marc distillation

of Merlot, Cabernet Sauvignon and Pinot Noir

coming from the fermentation of Rosso di Rosso

and Nero di Rosso wines.

The distillation is performed by some craftsmen of

the prestigious Capovilla distillery of Bassano, by a

rare bain-marie process in small copper stills. The

brandy is diluted with spring water and brought to

44% vol. proof without adding sugar or flavours. The

storage period ranges from one to two years in a

stainless steel container.

The result is a soft, fragrant, velvety and aromatic

grappa. It is recommendable to let the distillate

breathe for few minutes at a temperature of 12° in

order to bring out all the flavours for the best tasting.

The Wealth of Diesel FarmThe innovative design of the bottles reflects the creative and original spirit

of Diesel, with respect for tradition. The wine name is printed directly on

the bottle glass just like the typical bottles of Madeira, and each piece is

hand-numbered and signed by the producer.

Rosso di Rosso The opulence, the depth and the synergy of the

two major characters in red wines world: Merlot and

Cabernet Sauvignon.

The richness of the contents comes from man

sensitivity when interacting with nature.
