• Step 1: In one large bowl mix: 6 cups flour (I use unbleached or whole wheat) ¾ cups organic sugar or 1 cup honey 1 teaspoon salt 2 eggs ¼ cup olive oil

• Step 2: In a smaller bowl mix:1 tablespoon yeast1 teaspoon sugar1 ½ lukewarm water (not more than 100 degrees)
• Step 3: Let yeast water rise for 10 minutes-preferably warm

• Step 4: Mix contents of two bowls together in large bowl

• Step 5: Knead the dough for 15 minutes on floured surface

• Step 6: In a canner boil about 2 inches of water. Put dough in a large olive oiled bowl into the canner with the heat turned off. Cover the dough.

• Monkey Bread: Melt butter, make a cinnamon sugarTear the dough into 1 inch pieces, roll in butter then sugar.Put in greased loaf pan.

• Herb Bread: Add 1 tablespoon Italian Season and 1 tablespoon garlic and knead into bread. Put in greased loaf pan.

• Step 9: Let rise 1 hour, covered. At this stage I put my bread on a cookie sheet and then cover it. Preheat oven to 350 degrees 15 minutes prior to baking.

• Step 10: Optional: Whisk and egg in a small bowl. Take a pastry brush and lightly paint your bread with the egg wash. Cover with sesame or poppy seeds. Poppy seeds make people fail drug testing.
