Between the two wholesale Seafood businesses, we are one of the biggest players at the Fulton Fish Market in Hunts Point, NY.

Reheating Tips

Zuppa di Sette Pesce recipe(serves 4 people)

1/2 lb Monkfish 1/2 lb Swordfish1/2 lb Sea Bass 4 Sea Scallops4 Shrimp 8 Mussels8 Clams 1 oz white wine1 tsp oregano Salt to tastePepper to taste 1 oz Citarella Extra Virgin Olive Oil 3 cloves garlic, chopped 4 pcs Toasted Rustic Italian Bread5 oz Citarella San Marzano Style Peeled Tomatoes

Ÿ Cut monkfish, swordfish and sea bass each into 8 equal chunks. Leave skin on sea bass.

Ÿ Sauté garlic in olive oil on high heat until golden in a 12” 14” sauté pan. Crush in half of the tomatoes by hand. Simmer 5 minutes on medium-high heat.

Ÿ Add monkfish, swordfish, sea bass, mussels and clams. Wait 30 seconds and add sea scallops and shrimp.

Ÿ Add the remaining tomatoes (again, crushing them by hand), white wine, oregano, salt, pepper, and cover the pan. Cook for 1 minute.

Ÿ Serve in soup bowl with toasted, rustic Italian bread on the side.

Approx. 6 servings.Starting with our PRIME first-cut brisket, our classic recipe is a favorite for its unbelievable flavor, juiciness, and tenderness.

Our simple preparation makes it perfect for the holidays. Improving with age, the brisket can even be made in advance. Enjoy.

Ingredients

3 Tablespoons Citarella Extra Virgin Olive Oil 2 Large Onions, sliced thin3 to 3 ½ Lbs of Citarella Prime First Cut Brisket3 Peeled Carrots, cut into ½ inch chunks2 (28 oz) Cans of Citarella Chopped Tomatoes 1 Tablespoon Sugar1 Teaspoon Kosher Salt ½ Teaspoon Pepper1 Bay Leaf

Citarella Old-World Brisket Recipe

Directions

Ÿ Preheat oven to 350 degrees. Ÿ Heat 1 tablespoon of olive oil in a large oven proof pan. Ÿ Sauté onions until light brown, remove from pan and set aside. Ÿ Salt and Pepper both sides of the brisket. Ÿ Add remaining olive oil and heat. Ÿ Once hot, brown the brisket on both sides. Ÿ Add sautéed onions and remaining ingredients. Cover and bring to a

simmer. Ÿ Place in preheated 350 degree oven for about 2 ½ hours until

tender. Ÿ Remove the brisket from the pan and let rest for 15 minutes. Discard

Bay Leaf. Ÿ Slice brisket against the grain and serve with pan juices and

vegetables, straining fat, if necessary. Ÿ To reheat, remove from refrigerator several hours before you plan to

serve it.Ÿ Skim off any fat from the surface and reheat gently on top of the

stove until heated throughout.
