eisure in the countryside constitutes a unique opportunity to understand what countryside is. Those eager for knowledge and sensations can take part in the everyday life of a village and a farm, experiencing with all the senses the colours, shapes, sounds, smells and flavours. Thus the astonishing

world of the Polish countryside delights you with its diversity. Here you can discover how, in the old days, nice smelling bread was baked, how delicious, healthy juices were pressed or how the instruments, whose sound added splendour to, for example, country wedding parties, were played.

Often run by whole families, the enterprises have on offer rich programmes of displays and workshops, which draw the attention of both children and adults. A substantial group of fans is gained by shows during which you may see how cheese is made from fresh milk or what way the harvested grain, before it becomes flour or a loaf of bread, goes. Here you can take a look at the job of a blacksmith, make a clay pot with your own hands or weave a basket. What is more, taking part in a show will allow you to see how the inhabitants of a village worked in the distant days. It is hard to overestimate the engagement of the hosts in preserving the cultural heritage.

A stay on an ‘educational’ farm, particularly for children, can be a good opportunity to, for the first time in their lives, come into contact with farm animals – to milk a cow or to pet a goat. But also adults may experience something uncommon and take part, for instance, in building unique ho-tels for insects. A stay in the countryside teaches respect for nature and taking care about it; it shows how important biodiversity and the preser-vation of the natural landscape are.

ife has made a full circle on lake Sopień. Aleksandra Korecka’s grandfather was a baker, but had died by the time Aleksandra took

interest in bread-making, taking the secrets of his craft to the grave. Many years later, as she was trying to figure out what to do in her life, Aleksandra’s eyes would more and more often dart toward the old bread oven in her coun-tryside manor. It finally occurred to her that that was it. She began to travel thousands of kilometres away just to observe bread-making masters in ac-tion. Each of the people she met along her „bread trail” shared their knowledge and experience of bread-making with her. But it was Aleksandra’s neighbour who proved the biggest source of knowledge. Today, Ms. Aleksandra bakes delicious bread on her own and teaches others how to do it.

As the basic ingredient of bread is grain, each bread-making lesson starts with a presentation of the four basic grain types. The students learn about the farmer’s hardship, which includes removing grain from the ear of the stem and processing into flour. Then the lecturer moves on to discuss the secrets of making the leaven and forming bread. As the bread bakes in the oven, another lesson entitled „The Milky Way” starts, discussing milk and dairy products. Enthusiasts of sweet-smelling honey may choose to visit Ms. Aleksadra’s neighbour, a bee-keeper, who will read-ily explain the secrets of making Winnie the Pooh’s favourite food. All those interested in learning the art of forging should visit the next door forging mill. catch. To ensure the safety of children, the sockets have safety covers and the hallways are equipped with special sen-sors preventing children from leaving the rooms without their parents knowledge. It goes without saying that the country house offers baby beds and chairs.

The house is situated in beautiful surroundings. The charming region of Pojezierze Brodnickie can be explored in a number of ways. While kayaking, biking, Nordic walking or simply walk-ing, you will be exposed to the beauti-ful scenery of this post-glacial land. The nearby town of Górzno, the capital of Polish geocaching, is worth paying a visit too. Geochacing is becoming increasing popular worldwide. Looking

for treasure using a GPS is a perfect game for both children and adults. There are several thousand geocaches hidden all over Poland, many of them near Górzno. The rules are very simple: geocaching is not about getting rich but about finding symbolic treasures, signing logbooks to record your find and replacing whatever you find in a geocache with a treasure of your own.

After a day full of adventures a good idea is to sit at a campfire and listen to stories about the region, the ghosts of knights, vampires and the local aristocrat by the name of Friedrich von der Goltz, whose death from the hands of a poacher is commemorated by a stone memorial.

apple orchard and in it ... an old house. It is inhabited by an old Silesian family of three genera-

tions. They have mastered the seem-ingly easy art of pressing natural and healthy juices. Jens Frasek, the host, came to the Opole region from Brander-burg, a region in Germany famous for its juice pressing tradition. Jens, together with his wife, Iwona, in a magical way turns apples into a golden juice of great nutritional values.

Initially, the juice took a lot of effort and time to produce - first, apples were ground in a meat grinder, the result-ing pulp was then placed on a piece of canvas and squeezed to yield juice. After some time, a professional press was built, which is capable of pressing juices from all kinds of fruit, including

pears, plums, quince, aronia and even red beats. The juices sell out in no time, both to one-time visitors and regular clients, who drop by to collect bottles filled with the delicious drink. If you give it to you children, they’ll drink it at once and demand a refill.

The hosts want to share their passion for juice-making with others. They organize fascinating workshops for both adults and children interested in getting a taste of a harmonious and ecological lifestyle. The workshops are more of a challenge than just shows for bored city folk. Would you like to know what it feels like to drink a juice of your own make? Well, first you have to pick some apples, press them and then clean up and wash the machines. An equally ambitious task is learning to clay-plaster a building. A difficult task, indeed, but if you

manage to plaster even a small portion of a wall, you can be really proud of yourself. Visitors to the Apple Orchard can also take the unique opportunity to assist in building hotels for insects, mainly for bees. They get to make little houses from clay and natural and recy-cled materials, in other words, things that are easily available and free. The oven in which the delicious flatbread is baked was built of clay with the help of visitors. Don’t be surprised to see the solar power station - the hosts make it the point of honour to combine tradi-tion with latest technology.

Iwona and Jens are full of ideas to at-tract visitors. They put special empha-sis on recycling - they show their visitors how to use waste materials to make a toy owl or other toy animals. They build

models of water treatment plants in order to give the visitors an idea of how water circulates in the environment.

But the farm is no just about educa-tion. You can come here to just relax in a cosy atmosphere and interesting surroundings. The key local tourist attraction is Europe’s oldest suspend-ed bridge made of iron, located in the nearby village of Ozimek. It was built in 1827 and is still in use. You can also visit the numerous charming wooden churches or lavish castles and palaces that once belonged to the Silesian magnates. Another landmark located in the vicinity of the orchard is Mount Saint Anne, featuring a 15th century monastery and a cave similar to the famous cave of Lourdes. .

here’s is not a better place for dreams to come true than the countryside. This is obvious to anyone fed

up with the city noise and craving for living a quiet life in peace with nature. Ewa Skowerska and Mariusz Kosmalski - the school’s owners - are the best example of dreams come true. The couple had wanted to move to the countryside for a long time. 20 years ago they decided to take a chance, leave the city and create a little world of their own in the tiny town of Bodzentyn. And they suc-ceeded. Today, they host an ecstatic world of country art that everyone is welcome to visit.

Everything here is connected with art. They both love theatre and ceramics, and it is here that they develop their

passions. You may ask: a theatre in the countryside? Well, yes. Bodzen-tyn may be a small town, but it offers quite an audience. The plays based on the local legends and fairy tales are very popular among both the local people and visitors from far away. The plays are starred by Ewa and Mariusz, who also write the scripts. They couple are also visited by profes-sional theatre groups, who think very highly of their activities. The school’s owners are very eager to share their theatre and music experience through workshops during which they disclose the secrets of actors’ work and teach visitors to play ancient instruments such as the zither or hurdy-gurdy.

Apart from the theatre, Kapkazy is home to ceramics - the domain of Ewa Skowerska, a trained ceramics artists. As the shelves in her home began to

bent under the weight of her ceramic ware, she started to think of creating a gallery. Today, you can visit it not only to admire Ewa’s art, but also buy a unique souvenir. In summer, Ewa hosts the „Summer Ceramics Academy” - workshops held in an old, thatch-roofed cowshed, during which enthu-siasts of traditional handicraft have the opportunity to indulge in their passion, learn new skills and, more importantly, take the results of their work home. They get to make ceramics by hand or using a potter’s wheel. Other attractions offered by the hosts include cooking, herbology and bio-building workshops. It is worth mentioning that the farm features a very interesting building built using the original straw building technol-ogy. The building features a wooden frame filled in with bricks made of pressed straw covered with a lime or clay plaster. This traditional building technique is approached by many with curiosity and disbelief - visitors

are surprised to find that cheap and „green” materials such as clay, straw and wood can be used to build a fully functional house.

In pursuance of the idea of close cooperation with the local community, the hosts encourage their neighbours to become involved in their projects. This way, visitors get to participate in the „homely taste laboratory „ workshop held on the neighbouring farm owned by Grażyna Śniowska and learn to bake the traditional bread or flatbread, or learn about the ben-efits of fresh milk. If you visit Hana Świąckowska’s farm, you will be amazed to discover that many weeds have healing properties or simply taste good - the woman will help you pick the right weeds and then make a tasty brew out of them. You will also get to take home a linen sack filled with dried herbs whose smell will remind of your visit to Bodzentyn for a long time to come.

is one of a few places in Poland where life follows the ancient rhythm. The origins of Ostoja Dworska,

situated in the western part of Świętkorzyskie mountains, can be traced back to 1377, when it was first mentioned in the official records. It used to be home to local nobleman, but it lost its glamour over the years. Fortunately, Grzegorz Szymański, who lives next door, came up with the idea to bring back its glory.

Mr. Grzegorz is a good spirit of this place and its caretaker. Visitors are welcome to the Regional Chamber situated among old trees and to the nearby Polish Countryside Gallery which features a collection of charm-ing wooden sculptures. If you follow your way to the former carriage park,

you will most likely come across a campfire and an overwhelming smell of baked potatoes. And if you decide to stay here overnight, a good choice is the former granary dating back to the 19th century.

In Ostoja Dworska the year begins in September, when the fruit trees blossom in the local orchards. Here you will get to taste some varieties of Polish apples that are hard to buy in stores nowadays, e.g. kosztela, antonowka and malinowka. Children will learn how apples are grown and how to tell one apple tree from an-other. October is the sauerkraut-mak-ing month for the farm. According to the old tradition, the whole family is supposed to participate in the ritual. Visitors have the opportunity to shred cabbage together with the host and listen to him tell stories from the past

and advertise the health benefits of this delicious vegetable. November is the month of St. Catherine. On the eve of St. Catherine’s Day, the young learn to tell fortune from birds’ feath-ers to find out who they are going to marry in the future.

Then comes the cold month of De-cember and with it - Christmas. In Ostoja Dworska you will not see the Santa Clause as we know from TV commercials. Instead, you will learn how Christmas used to be celebrated in Poland years ago. With their mouth wide open, the children will listen to stories about where their great grand-fathers used to get Christmas trees from, how they decorated their homes and what food they ate for Christmas. You will also get to build the tradi-tional Polish Christmas crib using hay

and straw. Winter is a perfect time to learn to tell animal footprints on the snow and to feed wild animals.

Ostoja offers a lot of attractions also in spring and summer. In summer, the host holds lectures on bees and beekeeping. You even get to make a candle from real beeswax. It smells great and gives a lot of light.

Ostoja Dworska is more than just a depository of old Polish countryside traditions. It has also been a witness to dramatic historical events. In 1863, the Polish and Russian armies clashed nearby in what is considered one of the bloodiest battles of the January Uprising. According to a local legend, on each anniversary of the battle, the ghosts of the soldiers who were killed in it can be seen crossing the river...

he tradition of relaxing in the shade of a lime tree dates back to renaissance, when Jan Kochanowski, a great Polish poet, praised

this beautifully smelling tree in one of his poems. He wrote: „Visitor, sit under my leaves and rest!” The Under the Lime Tree country house in Przychojec near Leżajsk is as great a place to rest as that described in Kochanowski’s poem.

It offers peace and quiet, so its suitable for those seeking to slow down and immerse in nature. While staying here, you can take the opportunity to learn handicraft, discover the local customs and traditions and learn to make deli-cious home-made liquors. Czesława Zawadzka, the owner, will guide you through the magical world of the an-cient Polish countryside. Here, the city folk are taught countless ways in which

to enjoy nature, e.g. by eating fruits picked straight from bushes, drinking cool water from a well or observing the sun rise above the fields.

Staying in the country house feels like a travel in time - the farm features a unique museum of the countryside. The two old houses - one built in 19134, the other in 1928 - house a collection of over 1000 different exhibits. Walking through the houses, you will encounter richly ornamented pillows, trunks and boxes, as well as oil lamps hanging down the ceiling. The barn features and exhibition related to vanishing professions. The professions of the cooper, leather-worker, blacksmiths or wheeler have vanished altogether. There’s not much left of them, except for tools and a carefully cultivated memory. Ms. Czesława preserves old tools to prevent them from vanishing the way those who once used them did.

She also organizes shows at which the traditional country-style bread is baked. The old bread oven is quite impressive. And so are the food-making workshops entitled „From Grain to Bread.” In the nearby garden, children learn the basics of herbology. They have the opportunity to take a close look at and touch over 30 different herbs. They also get to taste the syrups and juices made from herbs. An-other item on the farm’s education agen-da is making tissue-paper decorations - the Polish equivalent of the Japanese origami. You’ll be surprised to see what can be made of regular tissue-paper! Flowers and whole bouquets of them, spi-ders, Easter palms... All carefully folded, twisted and rolled. A visit to Czesława Zawadzka’s farm will be an unforgettable adventure for your children.

Adults are welcome to participate in liquor and wine-making classes - the Under the Lime Tree Country House is a reputed

manufacturer of such liquors and wines. Ms. Czesława uses only traditional, ancient recipes. Naturally, she won’t disclose all secrets of the trade, but if look carefully, you will get the idea.

The country house offers rooms and a camping ground. The farm borders on the thick Monastery Forest, full of mushrooms and juicy blueberries, on one side, and the river San, popular among fishermen, on the other. Once there, a place worth visiting is the nearby town of Leżajsk, featuring an early baroque Ber-nardine Monastery and the world-famous Jewish cemetery dating back to the 18th century. Another town you mustn’t miss is Łańcut with its 18th century palace built to the syle of pallazzo in fortezza. After you come back, make sure to help yourself to a glass of home-made wine and take delight in observing the unfor-gettable sunset above the village.

famous Polish educator, once said. There’ll be lots of laughter, joy and emotions once you and your children set out on a trail leading trough the villages of Lesser Poland, a region famous for its beautiful and diverse landscape. It will be quite a learning experience for your children as they will get to know the local customs and traditions, as well as come into close contact with nature. Each of the places along the trail offers a safe and fenced playground, while some of the farms feature additional attractions such as a rope course, a swimming pool, stables or a small zoo. „From Grain to Bread,” „From Milk to Cheese,” embroidery, glass

painting and garland making work-shops rank as the most popular activi-ties offered by the farms. During a guided trip to the forest, you will get to observe its inhabitants and learn about its vegetation. In the evening, your children will get to listen to stories told at a campfire.

To meet everyone’s expectations, the trail runs nearly through the entire region of Lesser Poland. One of the advantages of the farms situated in the villages of Wielka Wieś, Jurc-zyce and Prądnik Korzkiewski is their proximity to Krakow, the salt mine of Wieliczka, dating back to the middle ages, and the Ojców National Park.

The „Grzegorz’s Farm,” situated in Tylicz near Krynica Zdrój, is an ideal place for both children and adults to do sports. Adults will certainly appreci-ate the beautiful landscape of the region inhabited by Lemkos, a small ethnic group, while children will love the attractions offered by the farm: a mini zoo or goat milking lessons. If you want to taste some healing water, you should visit the town of Krynica. The numerous wooden buildings along the local roads will certainly catch your eye.

Kluszkowce, Orawka and Harklowa are ideal base camps for all those who like mountain trekking. Harklowa is well

known for villa Akiko, situated on a hill inside the Gorczański National Park. Owned by a native Japanese woman, apart from beautiful views on the Tatra mountains, the villa offers typical Japanese attractions, such as Ikebana, flower arrangement and Japanese caligraphy workshops. It also offers Polish and Japanese cuisine.

„Adults are forbidden to be lazy and instructed to use every single moment to explain the world to their children in a creative way” - says one of the trail „regulations.” Given the large number of places, people and events in Lesser Poland, breaching this regulation would be rather difficult.

here’s nothing tastier than fresh country bread with freshly made butter. Especially if you’ve made it yourself. The Mazovian

farm of „Julianówka” has proven to many that a farm may offer much more interest-ing things than the virtual world of social media. The emotions accompanying your first ever cow milking will be so great that you will forget about the smartphone in your pocket. You will be even more excited to see the fresh cow milk being turned into the milk or cheese that you know from your local grocery store. Once you’ve mastered the traditional, wooden churn, Mariola Kowalska, the owner of the Julianówek farm, will teach you how to do laundry using a wooden washboard. You will be amazed to find how much time it took your great grandparents to complete this seemingly simple task.

Mariola Kowalska is very eager to tell her guest about the local traditions and

the secrets of living in the country. Can you tell hay from straw? Only a hand-ful of visitors can tell the difference. Those who can’t learn it in no time and are ready to use their knowledge in practice during weaving workshops. While children weave chickens and hens, adults aim at more sophisticated things, such as angel figures or Christ-mas and Easter decorations. There is also a gallery featuring sophisticated masterpieces created by the local ma-gicians of the craft of weaving.

From the gallery proceed straight to Grandma Julia’s Barn that houses a mini museum of farm tools used in the old days - churns, huge trunks, sewing machines, clay pots, flails, harnesses and wooden wheels.

But there is more to the countryside than just craftsmanship. In Julianówka, you also get to learn about the lo-cal folklore and traditions, study the

history of the traditional local clothing and dances, and even learn some of the dances and songs. The hosts can even organize a concert of the famous Mazowsze Folk Ensable.

A good idea is to make a trip to the river Srebrna on which Poland’s oldest pine tree grows. You will find it hard to believe, but it is estimated to be about 370 years old. No wonder that this massive, 22 meters high tree has been awarded the status of a natural monu-ment. But the tree is only a part of the amazing local landscape. Although the region of Mazovia is situated on a vast plain, the farm borders on an unusual range of hills.

The farm offers not only comfortable rooms, but also shaded arbours, a bar-beque place, a playground and a mini zoo with rabbits, horses and African dwarf goats.

any of those who have visited Synow-cówka claim that once you’re here, you’ll never want to

leave. This charming place is so full of ancient artefacts that coming here feels like a travel in time. No wonder - the owners are passionate collectors of ancient furniture, as a result of which the visitors have a unique chance to warm up sitting by an ancient oven, sleep on old and squeaky beds and keep their luggage in beautiful trunks. The black-and-white photographs hanging on the walls add to the ancient atmosphere of the place.

Synowcówka offers delicious food and... kitchen math classes to children. Yes, that’s right. While making oat biscuits children learn the meaning of the word „proportions,” as well as other math-re-lated notions e.g. longer, shorter, lighter,

heavier etc. Math thought in the kitchen is easily absorbed by children. At the end of each lesson, little bakers get to decorate their biscuits with a colourful sugar-icing and proudly present them to their parents.

You can spend a whole day out in the fields or in the vegetable garden learning the secrets of growing grain and vege-tables. You will get to see how flax and wicker are grown, and on the farm next door, you’ll master the art of weaving wicker baskets. And on the farm next to that one, you will learn to weave straw garlands and spiders. In Synowcówka, garlands are woven mainly of linen and then decorated with flowers. In the nearby village of Tkaczewska Góra, flax has been grown for centuries, and its people used to make their living mostly of weaving. students from the Institute of Experi-mental Biology of the University of Łódź. The young biologists prepare funny workshops and each participant gets a researcher’s box, containing a butterfly net, a looking glass and tweezers.

The past lives on in the local memory as the owners of Synowcówka and the rest of the local community share their experience and knowledge with each other. For example, the women of the local farmers’ wives’ association pro-vided invaluable help in restoring the smokehouse. The visitors get to taste the local smoked meats, white cheese and liquors made from the fruit avail-able in the surrounding forests: rowan, bird cherry, raspberries, blackberries or quince. The damson liquor and the

magical and aromatic liquor by the name of żenicha, made of herbs, honey and briar, are real delicacies. Żenicha means a match-maker’s liquor. Back in the day, in eastern Poland, parents would make it and place it in the main window of their house to let all bach-elors knows that they have a daughter that is still unmarried. .

From Synowcówka you can make a trip to Uniejów, a health resort famous for its thermal brines. If you like fishing, a good idea is to go to the nearby trout fisheries. If you are an enthusiast of horseback riding, you should visit the stables of Pustkowa Góra. Synowcówka is not very far from the city of Lodz, famous for unique monuments of 19th century industrial architecture.

he air is filled with the aromatic smell of freshly-baked bread. It will surely make you feel hungry. The beautiful aroma will carry

you away on a trip through the world of ancient cooking traditions. The guide will be Roman Glapiak, the owner of the farm, who bakes bread as it has always been baked in the region of Podkarpacie: using leaven and a special wood burning oven. The bread is made in a unique way and has a unique taste

attributable to adhering to the local tra-ditions. Back in the day, in Bieszczady, bread would be placed on cabbage and horseradish leaves, which facilitated placing it in the oven by means of a shovel. In richer households, boiled potatoes would be added to bread to prevent it from going stale too soon, and whey would be used instead of

water to make the leaven. Today, the bread baked on Flik’s farm is also made using whey and potatoes, and placed on horseradish and cabbage leaves.

Each year, the owner of the farm organizes a Bread Day with the follow-ing motto: „From grain to bread.” The Bread Day is held in August and at-tracts as many as two thousand visitors each year, who have the opportunity to see breads being made in front of their eyes, starting from grinding grain by means of millstones. The event features performances by folk ensem-bles from Poland, Slovakia, Ukraine and Romania. The food stalls sell all kinds of fragrant honeys and jams.

On Flik’s farm you will not only get to eat delicious, traditional bread, but you will also learn to bake it. What’s more, you will also learn the art of making

paper. What does bread have to do with paper? Well, making both requires patience. Bread needs to grow before its placed in wicker baskets and put in the oven. In the meantime, you can learn to make paper. Another skill you can learn on the farm is dry or wet wool felting. Felted wool can be used to make beads or even a smartphone etui. The owner also organizes pottery, glass painting and tissue paper workshops. Their participants always get to take their masterpieces home, including bread, a sheet of paper of their own make or a felted wool ornament.

The farm offers comfortable rooms, a swimming pool, a volleyball and a basketball court, a playground and a barbeque place. Another attraction are tamed animals: a female donkey by the name of Figa, llamas, Shetland ponies and

goats. There are also a lot of attractions around the farm, whose owner, who is also the man behind the idea to create the „Hołe” eco-museum, will be eager to show you. You can set out on a 24-kilo-metre historical tour during which you will discover the complicated local history. The border between Poland and the USSR was moved many times after the second world war, each time resulting in dramatic events. The border poles and the Soviet border guard’s booth recreated by Roman Glapiak are a reminder of those gloomy days. On the Bread Day, the barrier beam is lowered and the men dressed up like Soviet soldiers issue passes allowing visi-tors to enter the event.

Another attraction worth mentioning is the 200 year-old lime tree growing on the premises of the farm. You can also visit the nearby crude oil mine, that still operates using nodding donkeys built at the beginning of the 20th century.
