Creamy Chicken and Wild Rice Soup Recipe
Ingredients
uncooked wild rice blend – 1 Cup
boneless, skinless chicken breast – 1 Pound
chopped Onions – 1 Cup
Chopped celery – 3/4 Cup
Chopped carrots – 3/4 Cup
Minced garlic – 4-5 cloves
low sodium chicken broth – 6 Cups
salt-free seasoning blend – 2 Teaspoon
olive oil – 2 Teaspoon
Butter – 3 Teaspoon
All purpose Flour – 1/2 Cups
Milk – 2 Cups
Water – 2 Cups
Bay Leaves – 2
Salt and pepper – As you need
Preparation Methods
Step 1: Under running water, rinse the rise. Then in a slow cooker, place uncooked rice,
chicken breast, onions, celery, carrots, garlic, bay leaves, chicken broth, water, and poultry
seasoning.
Step 2: Cover and cook in the high setting for about 3-4 hours. Then, in the last ½ hour of
cooking, remove the chicken from the slow cooker. Allow to cool slightly before shredding using
two forks. Once the rice is cooked, and then add the shredded chicken back into the slow
cooker.
Step 3: In a saucepan, melt the butter and oil. Add the flour and let the mixture cook for about
one minute.
Step 4: Then add the milk in the mixture and Whisk the mixture slowly until without any lumps.
Allow the mixture to thicken and become creamy.
Step 4: Add this creamy mixture to the slow cooker and stir well to combine. If the consistency
is thick, add additional water or milk.
Season it with salt and pepper to taste.
