Healthy Slow Cooker Chicken And Wild Rice Soup

Chicken Wild Rice Soup is a creamy and debauched soup recipe that you can throw in your

slow cooker and dwelling to an amazing meal which will warm you up on cold winter days. Even

scientists agree that this healthy soup definitely acts as a cold remedy.

The soup is creamy, rich and tastes like something delicious. Just throw everything in the slow

cooker on your way out the door in the morning, and a scrumptious soup will greet you on your

return. The whole family will like this down to the home soup.

And my kids especially loved it when I packed this chicken and wild rice soup in their school

lunch and Surprisingly you can have an entire serving for under 300 calories and get 20 grams

of protein.

This easy recipe cooks a whole chicken along with veggies in a slow cooker for a flavorful and

simple chicken soup; add noodles or rice before serving.

Creamy Chicken and Wild Rice Soup Recipe

Ingredients

uncooked wild rice blend – 1 Cup

boneless, skinless chicken breast – 1 Pound

chopped Onions – 1 Cup

Chopped celery – 3/4 Cup

Chopped carrots – 3/4 Cup

Minced garlic – 4-5 cloves

low sodium chicken broth – 6 Cups

salt-free seasoning blend – 2 Teaspoon

olive oil – 2 Teaspoon

Butter – 3 Teaspoon

All purpose Flour – 1/2 Cups

Milk – 2 Cups

Water – 2 Cups

Bay Leaves – 2

Salt and pepper – As you need

Preparation Methods

Step 1: Under running water, rinse the rise. Then in a slow cooker, place uncooked rice,

chicken breast, onions, celery, carrots, garlic, bay leaves, chicken broth, water, and poultry

seasoning.

Step 2: Cover and cook in the high setting for about 3-4 hours. Then, in the last ½ hour of

cooking, remove the chicken from the slow cooker. Allow to cool slightly before shredding using

two forks. Once the rice is cooked, and then add the shredded chicken back into the slow

cooker.

Step 3: In a saucepan, melt the butter and oil. Add the flour and let the mixture cook for about

one minute.

Step 4: Then add the milk in the mixture and Whisk the mixture slowly until without any lumps.

Allow the mixture to thicken and become creamy.

Step 4: Add this creamy mixture to the slow cooker and stir well to combine. If the consistency

is thick, add additional water or milk.
