The vibrant blue skies dotted with velvetyclouds over the Cantal plateau lead us in thedirection of our next addition to Life inProvence. This is a rich and ancient regionwith eroded volcanic peaks, high hills and rivergorges. Part of the greater Auvergne province,Cantal is one of the least populated and isolatedregions of France; situated in the south-central

portion ofthe country.This distinctrural andundisturbedquality hasmade it adestinationfor tourism,especiallythose

seeking escape from urbanization. The hillcastles, extinct volcanoes and craggy mountainsare hiking adventures; especially the highestpoint of Plomb du Cantal at 1855 meters!

The central location of Cantal brings weatherfrom divergent origins, both Atlantic rains fromthe west and warm winds from theMediterranean. The mountains trap much ofthis moisture that creates lakes, waterways andgorges. In winter much of the region is ladenwith snow, so hearty food and cheese becamehistoric staples.

The tradition of farming in Cantal isexceedingly old, especially dairy and cheese;perhaps two thousand years or more, back intoancient Roman times. Some famed fromagecomes from this region, such as its namesakecheese Cantal, Salers from the eponymousmountain commune, and Laguiole; all three withcoveted AOC status. Our selection for Life in

Provence is somethingquite different fromthese giant mountaincheeses, as it draws onthe traditions of blue inthe region and theabundant and flavorfulcream that is readilyavailable. Our VeloursBleu is a white moldripened cheese withenough crème added tomake it velvety smooth

and not too far off from butter. The externalwhite mold flora, reminiscent of the snowyCantal Mountains, ripens the cheese and makesit more flavorful and even smoother in texture;yet it also has the addition of mild blue culturesthat work internally to intensify the velvetypaste. The blue itself is but a whisper running intiny streaks or bright dots within the ivoryinterior of the cheese, a faint tangy flavor burstamid the creaminess of the cheese.

Life in Provence Velours Bleu can be enjoyed asa dessert cheese with Champagne and somesweet nut bread, as the effervescence of the wineplays well with the buttery qualities of thecheese.
