However, increasing global competition necessitates identifying right avenues for investing efforts and resources for such improvements. For this reason, it is important to thoroughly understand various aspects of Food Supply Chain Management (FSCM), the purposes for which it has been used in the past, the benefits of its applications and the obstacles that have been faced in its use. Keeping this in view, this paper presents a detailed review of literature on food supply chains based on 134 papers published in different journals between 1994 and 2009. Furthermore, it develops an elaborate framework for its classification and codification. The aim is to show the evolution of research in this area during these years and to provide a roadmap to facilitate the application of FSCM in the future. Rajurkar is a Senior Lecturer in Department of Mechanical Engineering, Government Polytechnic, Nagpur, India. Presently, he is pursuing his Doctoral studies at Malaviya National Institute of Technology, Jaipur, India, on food supply chain management for perishable food products. He has over 18 years of teaching experience in India. He received his Bachelor Degree in Mechanical Engineering from VNIT, Nagpur, and Master Degree (ME) in Manufacturing Technology from NITTTRI, Chandigarh (India). He has presented paper on challenges in the food supply chain in the international conferences. Rakesh Jain is a Professor in the Department of Mechanical Engineering at Malaviya National Institute of Technology, Jaipur, India. He has over 20 years of teaching, research and consulting experience in India. He has received his BE in Mechanical Engineering from MNIT Jaipur, PGDIE in Industrial Engineering from NITIE Bombay (India) and PhD from Liverpool Business School, Liverpool, UK. He has published over twenty research papers in the area of quality, lean manufacturing and operations management. His research interests are focused around lean manufacturing, supply chain management and total quality management.
