Kanazawa’s food culture
Kanazawa benefits from its
location facing both the sea and
mountains, with an abundance of
fresh ingredients available. These
include seafood such as crabs and
shrimps from the Sea of Japan, as
well as locally produced Kaga
vegetables. Kanazawa’s rich food
culture aims to delight all of your
five senses using its advanced
cooking techniques and
arrangements, serving up dishes
and table manners in addition to
the ingredients. Kanazawa is also
known as the home of Japanese
confectionery due to the fact that
a number of famous sweets were
created in the city, and where the
tea ceremony is very popular.
Kanazawa’s traditional
performing arts
There is a saying in Kanazawa
that goes “Utai (the chanting of
a Noh text) falls down from the
sky.” Ever since the olden days,
Noh plays have been enjoyed
by samurai, merchants, and
even by gardeners. You would
often hear someone humming
a verse from a Noh play while
walking down the street in
Kanazawa, which is where the
above saying comes from. The
unique Kaga Hosho Noh plays
and the Subayashi musical
accompaniment have been
passed down through the
generations, and remain part
of citizens’ lives to this day.
Kanazawa is also known as one
of Japan’s leading cities for
Geisha performers. The tea
ceremony, an essential part of
samurai culture, has also
grown in popularity as a way to
casually enjoy tea.
The castle town of Kanazawa was built by the Maeda family of the
Kaga clan in the late 16th century. The Maeda family promoted the
city’s development by arranging samurai and townspeople’s
residential areas and the temple districts around Kanazawa Castle.
Kanazawa then grew to become Japan’s largest castle town, ruled by
a feudal lord who invested heavily in culture and education as
opposed to military force, in an attempt to create a sophisticated,
traditional culture. Kanazawa was Japan’s fourth-largest city at the
time, behind Tokyo, Osaka, and Kyoto.
Modern-day Kanazawa is one of the largest castle towns in Japan and
retains many streets and cultural elements from the olden days
owing to the fact that the city has escaped damage caused by war or
major disasters for a period of over 400 years. Kanazawa’s unique
charms include the tourist spots of Kanazawa Castle, Kenrokuen
Garden, the long-established fish market, teahouse districts, the
samurai district and tradesmen towns, as well as its traditional culture
such as crafts, entertainment, and food.
Along with its history and culture, today’s Kanazawa also has new
attractions including the 21st Century Museum of Contemporary Art,
Kanazawa, which attracts attention from home and abroad, and
districts that are home to fashionable gallery shops.

spring, crimson leaves in the fall,
and snowy winter scenery, this
hot spring has been visited by
many of Japan's well known
people.
From Kanazawa Station East
Gate, Stop 7, board the
Hokutetsu Bus to Yuwaku Hot
Yuwaku Hot Spring

This hot spring resort is tucked
away in a mountain ravine.
If you take a bath in amber or
coffee colored water, your skin
will become silky smooth.

Facing the Sea of Japan, Ono-machi
is a port town with several houses
that have passed down businesses
such as fishing and soy sauce
brewing for generations.
Even today, because of the fame of
“Ono soy sauce,” it is widely known as
a place for soy sauce brewing.
Recently, galleries and cafés opened
in renovated soy sauce warehouses
have received lots of attention.

elevated road from Kanazawa Station
for about 500 meters), board the
Hokutetsu Bus to Ono (approx. 40

One can summarize the attraction of present-day Kanazawa
as “coexistence of modernity and tradition” .
For example, by simply venturing a little distance away
from the downtown area that bustles with young people,
you can come across a streetscape dating back several
centuries. This is the area that symbolizes the attraction of
present-day Kanazawa. The 21st Century Museum of
Contemporary Art, Kanazawa exhibits a wide range of
modern art by artists from all over the world; you can spend
a long time there without tiring of the exhibits. Kanazawa
Castle Park is a symbol of Kanazawa's traditional culture,
and Kenrokuen Garden was created as the castle garden by
successive generations of lords, beginning more that 300
years ago. As one of the three most famous gardens of
Japan, it attracts many tourists.
This area, in which newness and traditional culture coexist,
is truly representative of modern-day Kanazawa.

This garden originated more than 300
years ago as the garden of the secondary
residence of the feudal lord of that time.
It is one of the best daimyo gardens, and
one of the three most famous gardens in

Kanazawa Castle Park is a park established
by the Maeda family of the Kaga Domain.
Full-scale construction of the castle began
more than 400 years ago.
Many of its buildings were burned down
in repeated fires, but several structures,
such as Ishikawa-mon Gate and Sanjikken
Nagaya, are still standing; others are
being restored with historical accuracy.
Gyokusen’inmaru Garden existed until the
abolition of the feudal domain system,
and was restored in March 2015.

❺ Nakamura Memorial Museum中村記念美術館
The museum has a collection of about
600 pieces, including excellent
tea-ceremony works of art and interior
furnishings. The collection mainly
consists of art/craft objects donated by
the Nakamura family, who run a sake
brewing company. Some pieces have
been designated as important cultural
assets. Visitors can enjoy a bowl of
powdered green tea while admiring the
garden (¥200).

❻ Seisonkaku Villa 成巽閣
This villa was built about 140 years
ago by the 13th lord of Kaga, as a
retirement residence for his mother.
It incorporates two different styles of
architecture. As there are very few
daimyo family residences that have
remained intact, this villa is highly

The area that comprises Ishikawa Prefecture, where Kanazawa
is located, Toyama Prefecture to the east, and Fukui Prefecture
to the west is called Hokuriku. Korinbo/Katamachi is the
largest commercial area in Hokuriku. With its concentration of
various kinds of people and shops, it is the most important
center for both people and products in this area. If you are
walking around looking for a place to have lunch or dinner, or
to have tea, this is probably the area where you can enjoy
yourself the most. People looking for typical Kanazawa dishes,
or those who miss the tastes of their home country can
probably find the type of restaurant they are looking for here.
Of course, this area is also recommended for shopping, and for
people who want to spend an evening in Kanazawa enjoying
some good drinks. If you go a little beyond the commercial
district, you can walk through Naga-machi, an area that brings
to mind the streetscape of samurai days. In this area there are
also samurai residences and museums that evoke the lifestyle
of the feudal period, so if you are interested in samurais and
their culture, you should definitely go and have a look.

This museum displays weapons, art

This is the former mansion site of the
Nomura family. For successive
generations they were high ranking
officials under the Maeda Family.
Inside the building you can see a
ceiling made completely from cypress,
along with painted sliding doors, and

stream surrounded by magnificent
stones.

The glass dome of Kanazawa Station has the nickname
of "Motenashi Dome". Motenashi means "welcoming" or
"entertainment"; it is a word that indicates good
treatment of guests. The dome expresses the hospitality
of the citizens of Kanazawa, who kindly greet and send
off people who come to visit the rainy city, in the hope
that they will not get wet when starting their journey.
Omi-cho Market, said to be the "kitchen of the citizens
of Kanazawa", is located in Musashigatsuji. About 300
years old, it is crammed with rows of seafood and
vegetable shops. Looking around at all of the produce,
you will get a sense of the market's unique vitality.
Owari-cho, which was once inhabited by merchants and
craftsmen, has many old shops that are still in business.
You can enjoy the taste of such treats as old-
fashioned confections and tsukudani (various foods
boiled down in soy sauce). The atmospheric street that
goes from Owari-cho to the Kazue-machi Chaya District
by the Asanogawa River is the perfect place for a stroll.

symbol of the station's East Plaza,

Higashi means "east", utatsu means "east-southeast";
the names of the Higashi Chaya District and Mt. Utatsu
(Utatsu-yama) derive from the fact that they are located in
an easterly and east-southeasterly direction, respectively,
as seen from Kanazawa Castle.
The Higashi Chaya District is one of three chaya districts in
Kanazawa. Its streetscape, which has maintained a strong
feudal-period atmosphere, is still throbbing with life.
For example, in the evening, under the lights of the houses,
you might be lucky enough to meet a group of geisha girls.
These are not meant as an attraction for tourists; they are
definitely one of the sights of modern Kanazawa that have
remained throughout the city's long history. The Higashi
Geisha District is an area where you can see and experience
for yourself the traditional culture of Kanazawa.
Mt. Utatsu is a mountain that Kanazawa citizens are familiar
with as a place to relax that is close to the downtown area.
You can go there in the spring to enjoy its cherry blossoms,
and in the fall to enjoy its crimson foliage.

The residence of Kurando Terashima,
a middle-ranking samurai of the Kaga
Domain.

This park, which extends along the base
of Mt. Utatsuyama, affords a good view
of Kanazawa. From the lookout point on
the summit, called 'Bokodai', one can

park is also popular for its night view.

Tera means "temple". As the name indicates, there are about
70 temples in Teramachi. About 400 years ago, temples that
were dotted around the city were moved to Teramachi and
the base of Mt. Utatsu. Myoryuji Temple, known by its
nickname of Ninja Temple, will probably surprise you with
its various contraptions. The sound of bells at dusk also
makes a deep impression on visitors.

In Kanazawa, where this tradition has been passed down since the Edo period, there are approximately 50 Kanazawa geiko (geisha girls) active in the three Chaya Districts.The old custom where you need the invitation of a regular customer to attend a dinner party in a tatami room is still being passed down today.Although it is normally not possible to meet the geiko, depending on the season, the general public may have the chance to see the dance of the Kanazawa geiko.
If you walk the streets of the Chaya District, you might hear the sounds of the shamisen or taiko drums flowing from the tea rooms.

urban area. It is popular as a spot
from which to see the city at night; if

Kodatsuno is southeast of Kenrokuen Garden. There are
many temples here too, as well as residential
neighborhoods, schools and hospitals; it is a good place for
getting a close-up look at the Kanazawa way of life.
Nodayama is an immense cemetery where many figures of
historical importance to Kanazawa, such as members of the
Maeda family, have been laid to rest. It is said that there are
more than 50 thousand gravestones in the cemetery, and
many people go there to pay their respects.
