Coffee: Discovered by Goats Once upon a time there was a

goat herder named Kaldi. One day, Kaldi lost track of his goats while he played the wooden flute. He found the herd and noticed his animals were dancing with joy. Intrigued by this peculiar behavior, Kaldi watched his goats eat read berries off a nearby bush. He decided to try the same berry and was overtaken by the feeling of excitement and energy, he too started to dance with joy. The consumption of this berry spread to the monastery where Monks would consume it to stay alert during long periods of prayer and devotion, thus beginning coffee productionhttps://www.youtube.com/watch?v=SR0H1LMwyhU

Product check-in

When receiving check for proper quantity, quality and price on invoice. Ensure quantity by counting amount of product delivered compared to amount ordered. Ensuring quality is difficult but at least check that the correct brand and kind is

delivered. Ensure the price of delivered products matches the previously agreed upon price.

If checking in raw unroasted beans: check for proper packaging usually in natural fiber sacks, ensure the markings on the bags are correct with what was ordered.

If checking in roasted beans or ground coffee: make sure there are no signs of humidity that can be damaging; also ensure bags are not inflated, inflated bags are a sign of beans that have not been allowed to degas properly.

Page 12: EDITED FINAL COFFEE PP

Product storage

Raw unroasted coffee can last for years, usually not kept for longer than 1yr Ideal conditions are 60 degrees F and about 60% humidity. For long storage times beans should be allowed to breathe, use natural fiber

bags Keep out of sun and avoid large temperature swings

Roasted coffee beans or ground coffee has short shelf life: max 2-3 weeks Keep in airtight containers away from light and at about room temperature It is agreed that refrigeration is bad for coffee, so never refrigerate Effects of freezing are debated but generally if longer storage is required it is

okay in airtight containers so that coffee does not absorb other flavors and it is important to avoid any condensation.

Page 32: EDITED FINAL COFFEE PP

Compare and Contrast

Coffee roasting is a large production There should be a huge storage room

filled with coffee Deliveries are to be made by another

company or employee Business owners only do what makes the

most money Long term price contracts Business marketing More certifications like fair trade Brand new up-to-date technology Formal, structured tour Excepted coffee beans would come from

multiple regions

Café Richesse is a simple ware house with three employees.

Only one wall in the store room was filled with coffee bags

Luiz personally delivers the orders Luiz wants his product to speak for the

company. He believes business is personal

Coffee is a commodity so long term price is not possible.

Luiz wants his product to speak for itself so he does not need marketing

Fair trade is not useful for Brazil Coffee roaster was made in 1932 We sat in Luiz’s office sippin’ on coffee Coffee beans are only from Brazil
