Resident of the Month Efrem Fudim
Dr. Efrem Fudim was born in Zhmerinka, Ukraine. He was
an only child of Vladimir and Maya. His father was re-
ported missing during WWII and he was raised by his
mother from the age of 3. Efrem and his mother are Hol-
ocaust survivors and were in a ghetto during Nazi occupation from the time Efrem
was 3 until 8 years old.
He married in 1965 to Margarita Sinayuk in Moscow, Russia
where he was living during graduate school. They were
married for 27 years and have one daughter, Natasha Fu-
dim. Efrem also has 3 grandchildren.
Efrem excelled in school and earned a PhD in engineering.
He left Russia with his wife and daughter in 1979 and ini-
tially moved to New Jersey but he was quickly recruited by
Johnson Controls which brought the family to Milwaukee,
Wisconsin. He worked for Johnson Controls for several
years before forming his own company, Light Sculpting,
which was involved in 3-D manufacturing. He invented the
first 3-D printer in the 80’s and held patents in many coun-
tries all over the world.
Efrem has traveled to many countries around the world.
For his 70th birthday he and his daughter traveled back to
Russia for the first time in 28 years after immigrating to the
U.S. He moved to San Diego in 2014 and came to live at
Sunshine Care in May of 2016.
Efrem enjoys many different foods, classical music and at
Sunshine Care he enjoys the peaceful scenery and joking
around with Vika.
We are glad to have Efrem as part of our Sunshine family!

Employee of the Month
Mariya Leighton
Mariya was born and raised in Billings, Montana. She is the oldest of six children.
She has two sisters and three brothers.
Mariya moved to San Diego in June of this year with her husband, Anthony who is in
the U.S. Marine Corps. She started working at Sunshine Care one week after moving
to San Diego. Mariya and her husband have been happily married for two years and
they are expecting their first child in April.
Mariya is going to school to become a nurse and expects to be graduating by fall of
2017. On her days off, she likes spending time with her husband and their two puppies. She also enjoys
quilting and sewing.
Mariya really enjoys her job at Sunshine Care and has been very flexible and always works with a big smile
on her face. When asked what she likes best about her job, Mariya’s response was, “I really love the one-
on-one interaction with the residents and I also enjoy working at the ranch homes because of the quiet
and peaceful environment.”
Congratulations Mariya and keep up the great work!

GARDEN GATE
HAPPY HOLIDAYS FROM THE GARDENS!!
The deciduous fruit trees are dropping leaves, the tangerine trees are giving us fruit, the lettuce is crisp and beautiful, rose hips are
forming in the rose garden and the sweatshirts are out of the closet- all signs that we are approaching winter. The lights are hang-
ing from the eaves and the Christmas trees are being decorated by the residents and local youth volunteers. You can hear the carols
in the air and of course cookies and hot chocolate are close at hand.
I’d like to thank all of the attendees and speakers that have made our classes successful horticultural experiences in 2016. What
else could you ask for- brilliant speakers on timely topics, delicious refreshments from the kitchen, door prizes and tours of our gar-
dens and greenhouse? They truly are educational, engaging and entertaining social events.
Please note: There will be NO DECEMBER Garden Lecture. There are way too many activities happening at Sunshine Care and peo-
ple are off celebrating the holidays with family and friends. We will return with our free Garden Lecture Series starting January 21st .
The topic will be” Drought Tolerant Beauties from Down Under” with Joe and Julie Walker from Obra Verde Growers in Valley Cen-
ter. Waxflowers are their specialty but they will talk about many other low water users and have plants for sale. Please check our

Preheat oven to 350°.
Place bread on to baking sheet and place in oven for about 10 minutes turning & stirring halfway through to crisp the bread up.
Remove from oven and place into large bowl.
In another bowl combine milk, eggs, sugar, molasses, spices and vanilla and whisk until combined.
Pour over bread and stir until absorbed, let sit for about 10-15 minutes.
Meanwhile spray a 2qt baking pan with non-stick cooking spray.
Spoon bread mixture into pan and place in oven and bake for about 45-60 minutes or until center is set and no longer jiggly. Remove from oven to cool slightly.
To make Vanilla Sauce: in sauce pan add sugar, butter and sweetened con-densed milk and stir until combined. Cook over medium-high heat until melted and creamy.
In large bowl beat egg, add a little bit of sauce at a time to temper the egg so it doesn't scramble, and whisk together.
Stir in vanilla. Pour over bread pudding and serve.
Gingerbread Bread Pudding with
Vanilla Sauce Prep: 15 min. Cook: 45 min.
INGREDIENTS:
1. 1 loaf Texas Toast, cut into 1" cubes
2. 2 1/2 cups milk
3. 5 eggs
4. 2/3 cup brown sugar
5. 1/4 cup molasses
6. 1 tsp ginger
7. 1 1/2 tsp cinnamon
8. 1/2 tsp nutmeg
9. 1/2 tsp all-spice
10. 1 tsp vanilla
VANILLA SAUCE:
1. 1 1/2 cup sugar
2. 1 1/2 stick unsalted butter, slightly melted
3. 1 (14 oz.) can sweetened condensed milk
4. 1 egg yolk
5. 2 tsp vanilla

It’s that time of year again! In response to the many family members who wish to recognize our
Caregiving Staff’s exceptional work throughout the year, Sunshine Care facilitates an annual Sun-
shine Caregiver Christmas Fund Drive.
All non-management employees will receive a share equal to their length of service this year and
based on full or part-time status. This allows all staff who help to make Sunshine Care a great
place to live to be recognized and rewarded.
