whipped cream1 refrigerated rolled piecrust3 large eggs¼ cup firmly packed light
brown sugar1 15-ounce can pure pumpkin½ cup whole milk1 teaspoon pure vanilla extract¾ teaspoon ground cinnamon¾ teaspoon ground ginger½ cup plus 6 tablespoons pure maple syrup1 cup heavy cream ¼ teaspoon kosher salt
1. Heat oven to 350°F. On a lightly floured surface, roll the piecrust into a 12-inch circle. Fit it into the bottom and up the sides of a 9-inch pie plate; trim the overhang ½ inch from the edge of the rim. Fold the overhang under itself and crimp as desired. Refrigerate until ready to fill.
2. In a bowl, combine the eggs, brown sugar, pumpkin, milk, vanilla, cinnamon, ginger, ½ cup maple syrup, ¼ cup cream, and salt. Pour into the prepared crust and bake until the filling is set in the center and the crust is golden brown, 60 to 65 minutes. Let cool.
3. Ten minutes before serving, use an electric mixer to beat the remaining 6 tablespoons maple syrup and remaining ¾ cup cream until soft peaks form. Serve with the pie.
