NZMA has secured its place as New Zealand’s top hospitality and cookery school, taking out the title of Training Establishment of the Year at the NZChefs National Salon 2015.
The Salon is one of the most eagerly anticipated events on the hospitality industry calendar. Previously known as the NZ Culinary Fare, it showcases the crème de la crème of industry talent from all over the country.

and 17 year-olds and is offered at Waikato and Auckland South
Campuses.
Vocational Pathways: Service Industries (Level 2)
What will I learn? This programme gives you all the basic skills you’ll need to be
successful in the booming service industry. From food handling to
customer service and beverages, you’ll gain a solid foundation that
you’ll draw on at higher levels of study and in the workplace. It’s a
great way to achieve NCEA Level 2 whilst gaining great practical skills.
After finishing, you’ll be ready to take on further study in our
hospitality or cookery pathways.

is an alternative to the National Diploma that provides a
pathway to further study at Level 6 and above.

This 2-year programme is offered at NZMA’s Auckland South

The first 18 months of this programme consist of the Certificate

This 18-month programme is offered at NZMA’s Sylvia Park
campus.
The first 12 months of this programme consist of the Diploma in
Hospitality Management Level 5. The remaining 20 weeks consist
of more advanced material.
What will I learn?This programme will fine-tune your practical skills and provide
you with a sound knowledge of operations management and
systems management in the hospitality industry. It is intended
for people with no prior experience in hospitality but who wish

This 20-week programme is only offered at NZMA’s
Sylvia Park Campus.
What will I learn? All great careers begin with a solid foundation. This practical
entry-level programme gives you those all-important basic
cookery skills that every commercial chef relies on. If you haven’t
had formal cookery training before then our practical training
kitchens are the perfect place to start.
Programme content includes: • Food safety
• Knife handling
• Stocks, sauces, and soups
• Basic pastry and dough dishes
• Food costing
• Basic fish and meat dishes
• Commercial kitchen skills
What qualifications will I gain? • New Zealand Certificate in Cookery (Level 3)

Certificate in Cookery (Level 4) 20 weeks
This 20-week programme is only offered at NZMA’s Sylvia
Park Campus. You must have completed the Certificate in
Cookery (Level 3) to enrol.
What will I learn? This intermediate-level programme really helps to build on your
cookery skill set. You’ll learn about a wide range of cookery
techniques and disciplines, and gain confidence working in a
commercial kitchen environment. At NZMA you learn by doing,
so you’ll spend 80% of your time in the kitchen putting your skills
into practice.

Diploma in Professional Cookery (Level 5) 40 weeks
This 40-week programme is only offered at NZMA’s
Sylvia Park Campus. You must have completed our
Level 3 and Level 4 Certificates in Cookery to enrol.
What will I learn? You will build on the knowledge and techniques
developed in the first year, and gain the expertise
required for progression as a chef in the hospitality
industry.
This programme produces graduates who are proficient in
advanced cookery skills as well as allied administrative and
kitchen management skills. As part of your programme, you
are required to apply all the skills you have developed to
plan and implement a live dinner service.
Programme content includes: • Menu development
• The application of management skills in the
development of products and services
• Research and evaluation of current innovations
• Development of practical application and management
principles of food and beverage service
• Understanding and experiencing the principles and
concepts of food production management
Students choose to major in either Patisserie or
Gastronomy.
In the final semester, students are required to complete a
research project based on a full-time 600 hour internship.
There will be a campus-based alternative from mid-2017.

NZMA has partnered with the Waikato Institute of Technology (Wintec) to offer their Certificate in Building (Level 4) at our trades facility in Otahuhu.
New Zealand’s trades industry desperately needs more workers. Completing our Certificate in Building will give you the best possible foundation to start your career in construction. We’ll have you finished and graduated in just 20 weeks so you can get into the job market as quickly as possible.
What will I learn? This programme will set you up to enter the
building and construction industry as an
apprentice or entry-level employee. It has a
strong vocational focus, so you’ll gain loads
of hands-on, practical experience, starting
off with small workshop projects and
eventually building a sleepout, toolbox,
and sawhorse!
On the programme, you’ll also complete a
significant portion (120 credits) of the theory
component of the National Certificate in
Carpentry (Level 4) - the qualification that
you will complete as an apprentice builder.

Entry Assessment All students must complete an entry
assessment when they first enrol at NZMA.
We use the results of this assessment to
ensure students have the required literacy
and numeracy skills to complete the
programme successfully. If a student has
completed an entry assessment in the past,
they do not need to complete a new one
when staircasing.

requirement. Youth Guarantee programmes
also have a maximum age of 19 to qualify for
fees-free study.

Programme highlights:
The programme taught me a lot and most of all it made me
believe in myself. It’s a really nice environment for learning,
we also got to take part in a live campaign for an insurance
company which gave us some great hands-on experience
and helped me build my confidence.
How did you get your job?
Doing a contact centre programme definitely gives you
an edge because it shows you’re keen and motivated to
get into the industry. After graduating from NZMA I got my
first contact centre job at Countdown, and I’ve been here
ever since. I’ve worked my way up from CSR, to Senior
Supervisor, to Team Leader and now Assistant Contact
Centre Manager. I never thought in a million years I’d end up
in a management role like this! I love my job. I work with a
fabulous bunch of people from different cultures and every
day is different. I’ve been in the industry for eight years yet
I’m always learning something new!
Aims for the future?
Eventually I want to become manager!

Why did you want to study Construction
at NZMA?
I’d just graduated from Baradene College. A lot of my
classmates headed off to university to do commerce,
engineering or law, but none of that appealed to me. For
me it was a toss-up between building, becoming a sparky
or joining the navy, like my older sister. I talked to some of
my dad’s friends who are builders and they said due to the
Auckland housing shortage and the Christchurch rebuild
there would be a lot of building work coming up, so I thought
I’d give it a shot.
Programme highlights:
I look forward to coming to my programme every day and
I’ve learnt heaps already — health and safety, foundations,
cladding, roofing, concrete. All the guys are really friendly —
they don’t care that I’m a chick. There are five girls on the
programme, although I’m the youngest. The rest of them all
have kids, and some even have grandkids! The tutors are
really great. They’re knowledgeable, approachable and happy
to help. They really care about the students and want us to
succeed.
Aims for the future?
After graduating from NZMA my
goal is to get an apprenticeship.
I’ll just start at the bottom and
work my way up.

How does it feel to be named NZ Bartender of the Year?
Winning this title means a lot to me because it will improve my chances of landing a managerial role in New Zealand and help build my reputation in the hospitality industry here.
I spent about eight weeks training. I didn’t enter to participate — I entered to win! It was pretty full on, trying to juggle training with my NZMA studies and my job at Ascension.
We had to compete in three categories: Wine and Beverage Service, Classic Cocktails and Innovative Cocktails. My innovative cocktail, ‘Homage’, was inspired by speakeasies and the end of prohibition in America. It was a mix of dark chocolate, Marsala wine and chip-infused rum. For the classic cocktails I made a Sidecar and a Margarita. It’s the first time I’ve ever entered a bartending competition, but I’m very glad I did!
Why are you studying at NZMA?
My wife and I wanted a better place to raise a family. I decided to come to New Zealand and gain an internationally-recognised qualification from NZMA so that I can launch my career here, and bring my family over. I’ve got my sights set on management.
How are you enjoying the programme?
It’s fantastic! I already know how to make cocktails, but there is so much more to it than that. I am learning a lot about management and also about how the hospitality industry works in New Zealand.
