organisation of the vineyard The Domain disposes of 23 hectares of Pinot
Noir, 13 hectares of Pinot Gris and 46 hectares of Cabernet Sauvignon, planted at a
density ranging from 5.000 to 6.250 plants per hectare. The orientation of the plants
is from North to South, on a mix of argil and gravel, placed over a limestone layer.
The pruning type is single Guyot. The yield was 8 to/ha.
winemaking method The grapes were hand-harvested. Short skin-contact
maceration (4 to 6 hours) was used for Pinot Noir and Cabernet Sauvignon and
longer skin-contact (12 hours) for Pinot Gris. For Pinot Noir and Pinot Gris, aging
was made in stainless steel tanks with bâtonnage, whereas Cabernet Sauvignon
was barrel - aged for 4 months in new French oak.
