Principal’s Corner
Our 5th grade students have been busy this past month. We
held our annual DARE Graduation on November 29th when
we recognized our 5th graders for their completion of the
DARE Program. Officer Kevin Bauer was the DARE Officer
this year and we want to thank him for all of his support of our
students this first semester. Congratulations to all 5th graders.
This past Wednesday our 5th graders went to an elderly living
facility, Salem Terrace, where they sang songs, played their
string instruments, presented the residents with a number of
items they made and played games with them. I want to
thank Mrs. Schmidt, Mrs. Buchanan, Mr. Maus and Mrs.
Rasmussen for organizing this event and for allowing our
students this experience of connecting with elderly in the area.
I have been fortunate to be able to attend this event each year
and I am always impressed by our students as I watch them
interact with the elderly.
The 2nd & 3rd graders will be presenting a concert this coming
Thursday, December 15th at 6:30 in our school gym. Our
music teacher, Mrs. Schmidt, has been working hard these
past many weeks to help to get students prepared. We look
forward to seeing many of you here this Thursday evening.
There is an exciting event coming up Friday, December 16th
beginning at 7:00 at the EcoPark. One of our third grade teachers, Deb Klaeser, has organized a Moonlight Hike. This
hike across the marsh trail is open to all families and will be led by the Education Direction at the park, Stephanie Hannah.
Snacks and hot chocolate will be provided at the center. We are excited to offer this experience to all families and friends
of Summit Environmental School.

The Art Room needs your help to collect and gather plastic bottle caps to use in a variety of art and school wide projects. The bottle caps can be from any household grocery item. Milk jugs, OJ boxes, sour cream/yogurt lids, detergent lids, soda pop lids, water bottle lids, shampoo caps, etc. As long as they are plastic...any color and any size will work. I would request that the donated caps be PRE-CLEANED-VERY-WELL. Usually a rinsing with soap and water will do. Dear Summit Environmental Families,
December is a very busy time. It’s not only a time for holiday traditions and
travel, but it’s also a time to give to others. In our L.M.C., Student Council has set up
Summit’s “Giving Tree.” This year Student Council has decided to donate to WAFER.
If you are able to donate, please send non-perishable food items to school with your
child. We will be collecting food from Monday, December 12 till Thursday, December
22. Here is a list of non-perishable foods to consider.

Classroom Gifts We know what a struggle it can be to buy gifts during the holiday season. Each year families purchase gifts for classroom teachers and other staff. This is so very thoughtful…but unnecessary and stressful! We have a suggestion that may make it easier. If your child would like to purchase a gift…a gift for their classroom would be wonderful (and greatly appreciated)! We’ve attached classroom gift ideas from Summit teachers. Our hope is that this reduces the stress that families feel both financially and otherwise. This will also provide teachers with items they can use in their classrooms. Although your thoughtfulness is always appreciated, please remember it is not necessary to provide ANY school staff with gifts.

Carrots were originally grown as medicine and not food.
Despite what you see in cartoons, hares, which are wild rabbits, do not eat carrots.
Carrot varieties grown in the US are usually orange, but can also be yellow, white, red, and purple.
Uses
Carrots are a great addition to stir frys, cakes, quick breads, soups, coleslaws, casseroles, and side salads.
Add shredded carrots to your raw beef or turkey before making burgers.
Family Friendly Activities
Cook carrots and conduct a taste test using several different seasonings such as ginger, parsley, garlic and honey.
Ask your child to compare the texture, size, color, taste and shape of carrots to other vegetables.

Pick:
•Choose firm, bright carrots without cracks that look
slightly moist.
•Large carrots with the greens attached will have the
sweetest flavor.
Store:
•Remove the greens from carrots and store tightly sealed in a plastic bag in refrigerator
for up to two weeks.
Prepare:
•The peel of the carrot is edible; gently scrub and rinse
carrots prior to eating.
•Enjoy carrots raw or cooked by microwaving, steaming,
sautéing, roasting or baking.

December Carrots
Rainbow Roasted Roots
Serves 10 (1/2 cup per serving)
Ingredients:1 pound carrots (scrubbed and sliced)
1 pound sweet potatoes (scrubbed and cubed) 1 pound potatoes (scrubbed and cubed)
1 pound beets (peeled and cubed)
2 Tbsp. olive oil 1/2 tsp. salt
1/4 tsp. pepper
Directions: Preheat oven to 400 degrees. In a medium bowl mix all ingredients. Place
mixture onto a sheet pan and roast for 25-35 minutes or until vegetables are tender and lightly browned. Add onion, garlic or other veggies for a twist!
