3 small apples, chopped (about 2 1/4 cups)
1 Tbsp lemon juice
4 medium cucumbers, sliced (about 6 cups)
1/2 cup red pepper, diced
1/4 cup red onion, diced
1/2 Tbsp fresh dill, chopped
1/4 cup vegetable or olive oil
2 Tbsp white vinegar
2 tsp honey
2 Tbsp apple juice
Salt and pepper to taste

1. In a small bowl, whisk the oil, vinegar, honey, apple juice, salt, and pepper to create the dressing.
2. Core and slice the apples, leaving the skin on. In a large bowl, toss the apples in the lemon juice to prevent browning.
3. Add the cucumbers, red pepper, red onion, and dill to the apples. Then add the dressing and toss to thoroughly combine.
yields 12 cups, serving size 3/4 cup
note This recipe makes enough for a crowd; if feeding a smaller group cut the amounts in half.
