Introduction
SUNY GeneseoSUNY Geneseo is a liberal arts college located in the Finger Lakes region of New York with a student body of approximately 5,600 total students and 3,300 residential students. Geneseo has a rich tradition of academic excellence and is one of the most selective public schools in the country. The dining program at Geneseo delivers the same high standards that students at the college have come to expect in the classroom.
Campus Auxiliary ServicesCampus Auxiliary Services, known as CAS on campus, is a not-for-profit company dedicated to serving the SUNY Geneseo campus. We provide several non-academic services to SUNY Geneseo, but are most well-known for our campus dining program. Our mission is to provide the highest quality dining experience for our diverse campus and guests. As part of our commitment, we are able to accommodate those that have special diets, including those who follow a gluten-free diet. We take special diets and allergies very seriously, and have a full-time registered dietician on staff to help us create the best possible food and experience for our guests. Our Registered Dietitian assists the culinary team with preparing menus that incorporate options for guests with specialty diets, educates the staff on specialty diets and how to properly prepare gluten-free and other items to prevent cross-contamination, and meets with members of the campus community one-on-one to help them understand what options are available to them and how we can further meet and exceed their needs.

Menu PhilosophyGluten-free options are abundant on the SUNY Geneseo campus. Our menus consist of a mix of naturally gluten-free items and specialty gluten-free products. Our registered dietitian works with the culinary team to identify foods and ingredients that are naturally gluten-free to be able to create naturally gluten-free recipes. For example, gluten-free deli meat, stocks and bases allow our chefs to create wonderful dishes that have no gluten in them. The registered dietitian also works with the culinary team and management to source the best specialty gluten-free products such as pasta, breads, bagels cookies, and snacks. In addition, many of the food concepts within our on-campus restaurants are made to order, allowing students to choose the ingredient components within their dish and tailor the dish to their personal preference as well as to their dietary needs. This provides the greatest possible amount of variety for our gluten-free students.

Menu LabelingAll gluten-free menu items are clearly labeled with a purple GF symbol so that members of the campus community can quickly and easily identify which foods fit their needs. The label can be found on the online menus, at the point of sale, and on all prepackaged grab and go foods.
At the entrance of every restaurant, a nutrition poster provides a “key” to the symbols, the contact information for our Registered Dietitian, and a rotating healthy eating tip.

Deli turkey is a great source of lean protein.The more protein a brand of deli turkey has per serving, the more actual meat the brand contains (and that means fewer fillers). All deli turkey on campus contains just two ingredients: turkey and salt.

Mary Jemison Dining HallMary Jemison is located in the heart of campus and provides a retail dining experience. Several food concepts exist within Mary Jemison including Levison’s Deli, Grain Bar, Garden Valley Salads and Goodfellas (Pasta Sautes).
The Grain Bar at Mary Jemison features several combination and ancient grain salads. The Black Bean and Quinoa Salad, Lentil Salad with Sundried Tomatoes, Asian Potato Salad, Tuscan White Bean Salad with Olive and Artichoke, Kale Salad with Sweet Chili Vinaigrette, Spicy Asian Cucumber Salad, Colorful Lentil Salad with Walnuts and Herbs.

Goodfellas pasta sautés are made to order as well, and students have the option of choosing gluten-free pasta. For gluten-free sautés, the pasta is cooked in a separate area and the pasta saute is prepared in a separate area using dedicated cooking equipment and utensils. Add ins for the sautes include a rotating variety of 8 different items such as ham, artichokes, sundried tomatoes, sausage, tomatoes, broccoli and mushrooms.
With 8 different add-ins and 4 different gluten-free sauces, there are a total of 1,344 different gluten-free pasta combinations at this station!

Levison’s Deli offers Udi’s gluten-free breads, 6 different gluten-free proteins and a large variety of gluten-free toppings and dressings. Students requesting gluten-free bread will have their sandwich prepared by a trained employee in a separate area utilizing a specially designated cutting board, knife and utensils.

Asada serves amazing gluten-free naked tacos. Students can choose from Pineapple Marinated Grilled Chicken, Chile Rubbed Grilled Steak or Chili-Lime Crumbled Tofu as their proteins with a number of different fillings, toppings and house-made salsas.
Fusion MarketBusy, bustling and bursting with flavor, Fusion Market specializes in ethnic street foods. Fusion Market boasts four different food concepts, each offering gluten-free options.

Clio’s deli at Fusion Market features several made-to-order gluten-free options including the Roberto Sosa and the Luttazzi, both served on Schar baguettes and prepared in a separate area. The Build Your Own option also allows for a large number of custom sandwiches made on the Schar baguettes using Clio’s unique ingredients.

Lotus, a stir-fry station within Fusion Market, features made-to-order stir-fry with several gluten-free options including house-made lemongrass coconut curry sauce, orange sesame sauce and gluten-free tamari. The proteins can be added to any combination of vegetables and rice to create several different stir-fry dishes.

Red Jacket Dining CenterRed Jacket is a pay-one-price restaurant featuring a rotating menu at its several food concepts. In addition to the many foods on the rotating menu, the restaurant offers a mini fridge and freezer stocked with gluten-free foods so that students’ favorite items are always available for them. The fridge and freezer is stocked with items specifically requested by students requiring a gluten-free diet, such as gluten-free bagels, breads, condiments, and entrees. A dedicated gluten-free microwave is on top of the fridge.

Above and Beyond: GF BasketsIn addition to the regularly menued gluten-free foods, we offer a Gluten-Free Basket to our students to allow them to easily stock their rooms with their favorite gluten-free products. The basket contains specialty-brand shelf stable gluten-free items not available on campus including cookies, cereal and crackers. They are available for purchase several times throughout the academic year and can be ordered online and paid for with the campus meal plan.

KashaKasha Gluten-Free Kitchen is a part of the newly renovated Food Studio North, a pay-one-price restaurant in Letchworth Dining Complex. Kasha is completely enclosed by three walls and a service counter and contains all of its own equipment. No foods containing gluten ever enter this kitchen, ensuring no cross-contamination and giving customers peace of mind. Kasha boasts a 3 week cycle menu with foods that are just as popular with customers without special dietary needs as it is with our gluten-free customers.

CAS always welcomes feedback from students on menu items, food quality and service. Our full-time registered dietitian holds a gluten-free forum at least once a semester to allow students to gather and voice their opinions on gluten-free dining on campus, and to allow students to sample new gluten-free products. This information is used in planning menus. Our dietitian works to build and maintain positive relationships with customers and encourages them to provide feedback throughout the year.

Staff Awareness and Dedication to Safe GF Handling / Labeling
The staff at CAS is extremely dedicated to safe gluten-free food handling. Gluten-free training is structured throughout the academic year to ensure that staff is educated in how to prepare gluten-free foods and how to best serve our gluten-free customers.
CAS provides formal bi-annual training on gluten-free food preparation procedures to managers and full-time foodservice staff. Training includes latest developments in gluten-free labeling procedures, new products/menu items and changes to gluten-free dining on campus. With special emphasis on customer service, real-life examples are used to reinforce service excellence. Staff completes a group quiz at the end of the training to challenge their knowledge of gluten-free food preparation procedures, best practices, and customer service skills. Gluten-free customers are coached to look for foodservice staff with a checked hat, which signifies an employee that is trained in gluten-free food preparation.
The Executive Chef and Director of Culinary Operations and the registered dietician have completed the National Foundation for Celiac Awareness’s GREAT Kitchen training program. The GREAT Kitchen training program is an excellent guide to cross contamination prevention in a commercial kitchen. The GREAT Kitchens Program was able to be condensed into an abbreviated version for training purposes, and key points were highlighted for staff.
Specialized gluten-free training is performed throughout the year by our Registered Dietician. She meets with small groups of employees in their restaurants and trains them on gluten-free service and operations. These trainings are specific and tailored to the duties and responsibilites of the staff as well as the menu and service style.

Purple color-coded kitchen utensils, cutting boards and other equipment are used to prepare all gluten-free items. These Purple Allergen Kits provide a visual means of ensuring that gluten-free equipment and utensils are only being used for their intended purpose.

Safe Gluten-free handling has been hardwired into the culture of the restaurants at SUNY Geneseo. To reinforce the importance of safe gluten-free handling and service and to recognize employees who are excelling in this area, a “GF Hero” award is given annually to full-time as well as student foodservice staff. This has become a coveted award given at our annual employee recognition party and has helped to inspire our staff to go above and beyond in regards to service and operations.
This year, 5 full-time staff and 4 student staff were recognized with this award.

Comment on 4/16/14: As a campus tour guide who has Celiacs, I’m always very excited to share with prospective students my own experience with gluten free dining at Geneseo. The variety of options that are offered here, including accurate labeling in dining halls, snack basket availability, and the Facebook forum for GF @ Geneseo, make gluten free living much more enjoyable on campus. Also, the fact that Cory is always willing to help us manage healthy options with a gluten free diet is an invaluable resource. Lastly, one of the best aspects of gluten free dining here is that the dining hall and nutrition services work with people on an individual basis to find the best possible solution to meet their dietary needs. I’m really impressed and excited by the expanding gluten free options on campus and appreciate everything that CAS has been able to provide for our gluten free community. --Katherine Lomazzo
