Cranberry Almond Breakfast Bars

Ingredients

1 cup almond butter1/4 cup honey1 teaspoon vanilla extract1/4 teaspoon cinnamon3 cups old­fashioned rolled oats1 cup sliced almonds1/2 cup dried cranberries3 tablespoons chia seeds

Directions

1. Preheat oven to 350ºF. Spray a 9­inch square pan with canola cooking spray.2. Combine almond butter and honey in a heavy­bottomed sauce pan over medium­high flame. Whisk until melted — 3­5 minutes. If your almond butter is really thick, add a little water orcanola oil to this mixture to thin it out.

3. Stir in vanilla and cinnamon.4. Add in oats, almonds, cranberries, and chia seeds.5. Bake for 15 minutes. Let cool completely and cut into nine equal squares.

1 egg, whisked1/3 cup canned black beans, rinsed and drained1/8 teaspoon kosher salt1/8 teaspoon cumin1/8 teaspoon chili powder1/4 of an avocado, sliced or cubed1 sprouted grain tortilla

Directions

1. Heat olive oil in a medium skillet over medium high heat.2. Sauté red pepper until it begins to soften.3. Turn heat to medium and add egg, black beans, salt and spices.4. Let eggs set for about 30 seconds, then move with a spatula to lightly scramble, about 1 minute 30 seconds.5. Remove from heat and add burrito filling to the tortilla, warmed for 10 seconds either on the skillet or in the microwave.6. Top filling with avocado7. Tuck in the sides of the burrito and roll to close.

Quinoa, Maple Mustard Salmon With Roasted Veggies

Ingredients

2 tablespoons olive oil, divided4 medium carrots, chopped into 3/4­inch pieces1 red pepper, cut into 3/4­inch pieces 1 medium yellow onion, quartered3/4 of 1 bulb fennel, sliced into 1/2­inch thick slices (chop and reserve the other 1/4 for later in the week)1/2 teaspoon kosher salt1/4 teaspoon black pepper8 ounces salmon, skin on or off 2 teaspoons maple syrup2 teaspoons dijon mustard1 1/3 cups uncooked quinoa

Directions

1. Preheat oven to 400 degrees. Add veggies to a large baking sheet or pan.2. In a small bowl, mix olive oil salt, pepper, and any additional dried herbs of choice.3. Drizzle olive oil and seasoning mixture evenly over vegetables, then toss to make sure all vegetables are coated well. Space vegetables evenly on the baking sheet.4. Roast vegetables for 20­25 minutes, or until soft and golden in color, tossing once halfway through cooking time.5. While vegetables are cooking, prepare quinoa according to package directions.6. While quinoa is cooking, mix the maple syrup and mustard together in a small bowl. Brush the mixture evenly over the top of the salmon filet. Bake for 6 minutes in the 400 degree oven.Then broil on high for an additional 2 minutes, or until fish is flaky and cooked through.

Flourless Chocolate Brownie Cake

Ingredients

1 1/4 cups semisweet or dark chocolate chips1 (19­ounce) can garbanzo beans, rinsed and drained4 eggs1/2 cup white sugar1 teaspoon vanilla extract1/4 teaspoon cinnamon1/2 teaspoon baking powder

Directions

1. Preheat the oven to 350 degrees F.2. Add chocolate chips to a microwave­safe bowl. Microwave for 2 minutes, stirring every 20 seconds after the first minute.3. Grease and flour a 9­inch square baking pan. Place the chocolate chips into a microwave­safe bowl. Cook in the microwave for about 2 minutes, stirring every 20 seconds after the firstminute, until chocolate is melted and smooth. If you have a powerful microwave, reduce the power to 50 percent.

4. Combine the beans, eggs, and vanilla in the bowl of a food processor. Process until smooth.5. Add the sugar, baking powder, and cinnamon and pulse to blend. Pour in the melted chocolate and blend until smooth, scraping down the corners to make sure chocolate is completelymixed.

6. Transfer the batter to the prepared pan. Bake for 40 minutes in the preheated oven, or until a knife inserted into the center of the brownies comes out clean. Cool in the pan on a wire rackfor 10 to 15 minutes before inverting onto a serving plate.

7. Cut into 12 pieces and wrap up individual pieces in plastic wrap to freeze leftovers.
