    Phn hai: "NATTO" l g?

    Natto l nhng ht u nnh luc chn c vi Enzim (Bacillus natto) mt mi trng40oC trong vng 14-18 gi ln men thnh nhng ht u c mu nu, nhn nht cao vbn (cha nhiu Acid Glutamic), c mi nng nc (ca nc tiu) rt kh chu vi ngi khngquen. Theo kinh nghim ca nh sn xut cho bit khi nht cng cao th cht lng Nattocng tt v v cng ngt.

    L mt mn n dn d rt ph bin nng thn Nht Bn, h thng n cm sng vi Natto,nc tng vi rong bin phi kh (Nori) v trng g sng. Ngy nay Natto cn c ch bintrong cc mn n xo nu vi tht, lm sandwich kp natto hay bnh m gi l Natto-burger(!).Natto l mt c sn thin nhin, khng qua ch bin (nu, xo, hp) v vy nhng t cht bdng cho sc khe u c gi nguyn vn trong enzym Nattokinase l mt hot cht snsinh trong qu trnh ln men t nhin c xem l hot cht c hiu qu trong vic ngn ngacc chng bnh tim mch - mt pht hin v cng l th bi nh nghin cu sinh l hc NhtBn ni ting, GS Sumi Hiroyuki vo nm 1980 (xem phn 3).

    SHIH (bnh tu h ngt) m ngy nay vn cn lu li qua dng tng bng u en. Qui trnhlm ra Tan-Shih c ghi li trong sch v Nng nghip Trung Quc Chi-Min Yao-shu utin vo nm 535 trong thut li rng u nnh c nu chn, phi trong phng m ri gitrong rm v ln men t nhin thnh Koji, sau ra li bng nc sch, ly xc qun chtbng vi trong nhiu ngy, cui cng phi kh hay sy kh lm thnh bnh. Trong rm hay rc cha loi enzim Bacillus Subtilis v d ln men trong iu kin nhit cao (40oC) v to racht nhn, mi hi nh k.

    Hachiman Taro Yoshiie

    Hachiman Taro Yoshiie l tn gi thn mt ca Minamoto Yoshiie, mt Samurai ni ting con calnh cha Minamoto no Yoriyashi thi Heian ca Nht Bn. Yoshiie l v tng anh hng trongcuc chin ko di 9 nm Zenkunen (1051) v trn chin 3 nm Gosanen (1083) trong nhngcuc dp lon cc s qun min bc. V vy unnh c xem l phng php tr liu an ton gip ph n vt qua thi k ny thay v dngcc phng php tr liu bng Hormon thay th (Hormone Replacement Therapy) c nguy cgy ung th cao.
