As head chef, Song will engineer all of the resort’s gastronomic experi- ences, including menu creation and execution for some of China’s most eminent events, galas and wed- dings hosted at The Ritz-Carlton Sanya, Yalong Bay. Song first developed his culinary dexterity at the precocious age of 13, when he would prepare meals for his two brothers and parents when they returned home from work in the evenings. His skills soon gained official recognition at the age of 18 when, as a young infantryman, he was selected as an armed forces ser- vice supervisor during his army service, and sent on culinary mis- sions throughout the Asia-Pacific region for two years. Travel fed his vocation as he instinctively pursued a career in hospitality at one of Singapore’s most renowned luxury hotels. Accumulating over 20 years of experience as a chef and nearly a decade as an executive chef across Singapore, the Maldives and China, Song brings his expertise in French, Italian, Oriental and American cuisines, along with dynamic management skills to the culinary brigade of The Ritz-Carl- ton Sanya, Yalong Bay. A meticulously-made menu is always drawing in a steady flow of food connoisseurs to the town and its dining establishments. Chaoshan’s chefs are set apart for their deft handling of food preparation and ingre- dients, in particular the way they’re able to extract the best of each flavor by employing one of various fine-tuned cooking methods, and applying these detailed processes even to the simplest of dishes. In nearby metropolis Shenzhen, a tra- ditional Chaozhou restaurant is always a stone’s throw away. An exceptional example is a restaurant near Sea World called Chaozhou Cuisine, where up to 100 different types of Chao- zhou delicacies can be found on the menu.
