    I have enjoyed eating a highly nutritiousdiet since I was in high school and I supposemy inspiration or this was due to losingboth my ather and my sis ter to cancer.We live in such a toxic world and we haveto be our own health advocates.     1. Soak the quinoa and barley in waterovernight or or a ew hours. You wantthe water to cover the grains. Thishelps to break down the phytic acid inthe grains and aids in digestion.

    . Chop the onions, celery and cilantro.

    . Bring the water to a boil and add thequinoa and barley to cook or 10 minutes.

    . Toast the walnuts, seeds and onionsin the oven at 0F or 10 minutes.

    . Mix the dressing together and pourover all ingredients in a large bowl.

    1. Line either a small mufn tin or tartlet tins with plasticwrap and set aside. Grind the nuts and dates in a oodprocessor until well-mixed. Add a tbsp. o water. Press 1tbsp. o the mixture into each tart orm to make an evencrust. Put the tart shells in the ridge or reezer to hardenor approximately 0 minutes.

    . In a blender add cashews, water, agave syrup, cherries, andvanilla extract and blend until smooth. Put aside in a bowl.

    . Remove the tart orms rom the reezer Fill each tart wit hsome o the cashew mixture. Set in the rerigerator tochill and harden. Arrange the cherries on top o each tart.Use a ew resh mint leaves as garnish. Best servedimmediately, but will keep days in the ridge.Yields approximately 1 small tarts.
