Coconut Juice:The Fluid of Life
Coconut juice or coconut wateris aptly called, The Fluid of Life, because of
its profound and highly beneficial impact on your health. In a way, it is
virtually the blood of the coconut tree.
Just to be clear, coco juice is not the same as coconut milk. Coco milk is theliquid extracted from the white meat or flesh located along the inner walls of
the mature coconut. Coco juice is the watery liquid you hear sloshing aroundinside a fresh coconut.
This tonic or buko juice as we call it here in the Philippines, is relatively clearin color and looks more like water than it does milk. It's my favorite
beverage of all. I prefer the juice of the young green coconut because of itsmildly sweet and nutty flavor. Plus, it normally contains a lot more water.

Coconut Water - The Fluid of Life
Coconut water is the nutritious and refreshing liquid found inside immature coconuts.Coconut
wateris not the same thing as the coconut milk found in mature coconuts. As the coconut
matures, much of the coconut water is changed into the meat of the fruit, so the liquid is only
found green coconuts.
People in tropical regions have always drunk coconut water. On tropical islands where
coconut trees are abundant, this liquid is one of the main sources of hydration for thenative people. The liquid is consumed directly from the fruit. Once the husk is removed,a hole is cut in the fruit to allow the person to drink the contents. This is the best way toconsume coconut water. Today, street vendors will sell the water direct from thecoconut to tourists who are not quite ready to climb a tree and harvest their owncoconut to drink from. Drinking the beverage directly from the coconut adds anotherbenefit. Because the drink has not come in contact with anything except the straw, it isnaturally sterile when consumed fresh from the fruit.
Coconut water is as hydrating as pure water. It is considered an isotonic beverage,because it has the same electrolyte balance as human blood. Because of this property,
coconut water was actually used as an emergency plasma transfusion for woundedsoldiers who were fighting in the Pacific front in World War II. This use gave theingredient the nickname of "the fluid of life."
Today, many people drink coconut water as a sports drink. It helps replenish electrolytelevels without the added calories and sodium that are found in traditional sports drinks.In fact, fresh coconut water actually contains substantially more potassium than sportsand energy drinks. A 100 ml drink of coconut water contains almost 300 mg ofpotassium, compared to just over 100 mg in a typical sports drink. It also contains ahigh amount of chloride, along with calcium and magnesium. It has few sugars and justenough sodium to help replenish electrolyte levels during exercise.
One problem with selling coconut water commercially is the fact that it degrades quicklyonce exposed to air. The delicate liquid will begin to ferment almost the moment it isexposed to air, and this causes it to lose its nutritional benefits, so bottling and selling ithas been a challenge. Some companies have sold coconut water commercially byselling the immature coconuts whole.

One way to get around the problem of packaging coconut water safely is to use a high-temperature, short-time pasteurization method. This is the same method used to makeshelf-stable milk. The problem with this process is that it destroys most of the naturalflavor of the coconut water.
In 2007 the Food and Agriculture Organization of the United Nations announced a newcold preservation technology that could be used to preserve the benefits of coconutwater. The new process keeps the beverage fresh for up to three weeks, which allows itto be shipped internationally and sold in areas where coconuts do not grow naturally.The main feature of the new bottling system is keeping the drink at a very controlledcold temperature throughout the bottling and shipping process. Once it reaches theretailer, the coconut water must remain at a very low temperature and away from toomuch light in order to keep it fresh. With this new technology, people across the globewill soon be able to experience the unique taste and refreshment that comes fromdrinking fresh coconut water.
Coconuts - a Substitute for Blood Plasma
During World War II when blood supplies were running low, doctors
discovered that the liquid inside young coconuts can be used as a substitute
for blood plasma. India's National Newspaper, Monday, Nov 24, 2003
states:
"It (coconut juice) is also considered a close substitute for blood plasma since
it is sterile, cool, easily absorbed by the body and does not destroy red blood
cells. To quote Morton Satin, Chief of Food and Agricultural Organisation's
