Christmas Morning Brunch – Fruit with Coconut Yogurt: How to Clean and Cut Fresh Fruits

Kiwi: 1. Remove the Ends Wash the kiwifruit. Place it on its side and cut off both ends. Kiwi: 2. Peel the Skin Turn the kiwifruit upright and cut off the skin in long strips, following the curve of the fruit. Slice thinly to preserve nutrients near the skin. Cut into coin-‐size slices.
Pineapple: 1. Cut the Ends Thoroughly rinse and scrub the pineapple with a clean produce brush. Use a knife to cut off the bottom stem and the green crown of the pineapple.
Pineapple: 2. Slice Off Peel Stand the pineapple on one end and slice off the peel in strips from top to bottom. If desired, make narrow wedge-‐shape grooves into the pineapple to remove as many “eyes” as possible.

Pineapple: 3. Quarter With the peeled pineapple standing on end, cut it into four pieces by slicing down from the top to bottom. Then cut the fruit away from the core on each quarter and discard the core.
Pineapple: 4. Chop Up Cut the quarters into spears, chunks, or any other desired shape.
Mango: 1. Cut Place the mango upright on its end. Using a small chef’s knife, slice down along one side of the pit to remove the fleshy face.
Mango: 2. Discard the Pit Turn the mango around and slice off the other face, keeping the knife as close to the pit as you can.

Mango: 3. Score the Flesh Using a paring knife, score the flesh in each half in a check-‐ erboard pattern up to, but not through, the skin.
Mango: 4. Remove in Cubes Turn the skin in to push the cubes of mango flesh out. Cut the cubes of mango from the skin with the paring knife.
Papaya: 1. Wash the Fruit Cut the papaya in half lengthwise. Wash the papaya to clean away traces of fertilizers and dirt residue that might contaminate the pulp.
Papaya: 2. Cut in Half Cut the papaya in half lengthwise.
Papaya: 3. Remove Seeds Scrape out the papaya seeds. Save them if you like—they make a great substitute for black pepper. To remove the fruit, carve it out with a melon scoop or use a knife to peel away the skin and chop.
