The Journals Provide

• A way to communicate directly without theformality of a face-to-face meeting

• A way to remain connected to the coursethroughout the semester

• A way to develop knowledge of currentissues

• A way to enhance critical thinking skills

c) how the information might be flawed/biased

d) the potential impact of the issue or article on the discipline

Journals must be brought to each class.

The instructor frequently asks students towrite in them during class.

Journals are graded on a +/- system toencourage a free-flow of thought.

Journals entries are good to help inform thestudents of current issues and make usaware of what is happening in the world. It also allows us to ask questions and getanswers…

Page 14: Chris R. Calkins, Ph.D. University of Nebraska Professor ... · hard to find stuff to write about. For me personally, I did not like the journals. As you know, I had a hard time getting

I have never had a class of this type whereyou synthesized the ideas that youintroduced in class and saw how it washappening or applied in industry. I foundthat to be a major plus.

Page 15: Chris R. Calkins, Ph.D. University of Nebraska Professor ... · hard to find stuff to write about. For me personally, I did not like the journals. As you know, I had a hard time getting

I thought writing a journal entry each weekwas a really good idea. It gave us a senseof what was going on and the differentissues that were occurring in the meatindustry. I thought it was interesting toread and find a journal article each week.I really didn’t see any disadvantages inpreparing a journal entry each weekexcept maybe sometimes I had a hardtime finding an article that was interestingto me.

Page 16: Chris R. Calkins, Ph.D. University of Nebraska Professor ... · hard to find stuff to write about. For me personally, I did not like the journals. As you know, I had a hard time getting

I think that the journal we wrote during thesemester was very helpful in keeping up-to-date with current issues in the meatindustry. It forced me to look at topicswhich were relevant to fresh meats and ofinterest to me which helped broaden myknowledge of the industry.

Page 17: Chris R. Calkins, Ph.D. University of Nebraska Professor ... · hard to find stuff to write about. For me personally, I did not like the journals. As you know, I had a hard time getting

I think in-class discussion about our journalarticles would be interesting andbeneficial. I don’t think this would beneeded every week, but if a shortdiscussion was allowed a few timesthrough the semester it would be helpful.

Page 18: Chris R. Calkins, Ph.D. University of Nebraska Professor ... · hard to find stuff to write about. For me personally, I did not like the journals. As you know, I had a hard time getting

I liked the journal because it made me readand learn things that I would normally notread. I also had a better sense of whatthe meat industry goes through in relationto serving it’s (sic) consumers andimproving operations. Generally it was agood way of being connected with themeat industry. This is a good way forstudents to learn about different thingsthat happen in the meat industry that theynormally would not know.

Page 19: Chris R. Calkins, Ph.D. University of Nebraska Professor ... · hard to find stuff to write about. For me personally, I did not like the journals. As you know, I had a hard time getting

The thing I liked about the journals was thatit kept me on my toes in keeping up withcurrent events in the meat industry. I alsoliked how we had to go to differentsources each time, like a newspaper ormagazine or another source. Not onlydoes this keep our journals different, but itkeeps us to look at different areas whereinformation can be found.

Page 20: Chris R. Calkins, Ph.D. University of Nebraska Professor ... · hard to find stuff to write about. For me personally, I did not like the journals. As you know, I had a hard time getting

The journals are a good idea. It forces youto look into issues that are going on in themeat industry. However, sometimes it ishard to find stuff to write about. For mepersonally, I did not like the journals. Asyou know, I had a hard time getting themdone by due dates given. I feel with all theother class work in this class and otherclasses, it was hard for me to remember. However, this is my personal opinion, butin general I feel it is a good idea.

Page 21: Chris R. Calkins, Ph.D. University of Nebraska Professor ... · hard to find stuff to write about. For me personally, I did not like the journals. As you know, I had a hard time getting

I liked this at the start. I was readinginformation that I did not normally readand was up-to-date on what was going on.At the end of the semester, I thought of itas more of a hassle than a benefit. Mythought is maybe adding something elseto it like make the student go to the storeand explain how 2 different meat cutswere different than the pamphlet. I think itwill keep the students more interested. The other thought I have is use it more inclass. Maybe have the students write theirthoughts after a lab and what they thoughtof the lab.

Page 22: Chris R. Calkins, Ph.D. University of Nebraska Professor ... · hard to find stuff to write about. For me personally, I did not like the journals. As you know, I had a hard time getting

I think that the journal was a very good wayof making us stay updated with what isgoing on in the meat industry. Eventhough it can be somewhat timeconsuming during “crazy” school weeks, Isee it as a good activity. Before taking thisclass, I had no idea there were so manysources of meat industry news and now Iam subscribed to two servers (they sendme updates daily by e-mail). As asuggestion, I would say that the minimumnumber of entries required should bereduced to 8-10.

Page 23: Chris R. Calkins, Ph.D. University of Nebraska Professor ... · hard to find stuff to write about. For me personally, I did not like the journals. As you know, I had a hard time getting

Added Benefits:

• Students saw this as a way to becomeup-to-date with industry issues

• Students learned about the breadth ofinformation sources

• The activity introduced students toadditional topics in the discipline

Page 24: Chris R. Calkins, Ph.D. University of Nebraska Professor ... · hard to find stuff to write about. For me personally, I did not like the journals. As you know, I had a hard time getting

Improvements:

• Not require an entry every week

• Consider varying the type of activitybeyond published articles

• Conduct more discussions on journalentries during the semester
