Sometimes you fancy a treat in the morning,something other than breakfast cereal or toast.When you have some extra time to make themthese wheat free breakfast slices are a lovely startto the day, if you want a little decadence. You canfeel quite saintly eating them, knowing that theyare healthy and not laden with refined sugar.

½ cup (70g) brown rice flour½ cup (70g) potato flour½ cup (70g) buckwheat flakes1 cup (140g) jumbo oats2oz (50g) ground almonds½ cup (100g) cooked wholegrain rice1 teaspoon lime juice1 ripe organic pearZest of half a lime½ cup (120ml) coconut milk2 free range eggs1 tsp vanilla extract¼ organic vanilla pod1 teaspoon zanthan gum½ cup (70g) organic sugar freechocolate1 tablespoon Natvia3 ½ fluid oz (100ml) organic dark agave1 tablespoon Biona margarinePinch of salt

Method

Pre-heat the oven to 180 ºc or 350 ºF.Line and grease two baking trays with baking parchment.Put the rice flour, potato flour, half of the oats, ground almonds, rice, lime juice, limezest, pear, coconut milk, eggs, vanilla extract, vanilla beans from the pod, Natvia, darkagave, margarine and salt in a food processor. Blend together until well combined.Pour the mixture into a bowl. Add the other half of the oats, buckwheat flakes,zanthan gum and mix together with a wooden spoon, or by hand if this is easier. Add alittle more coconut milk if it is too dry.Spread the mixture onto the lined baking trays, using the back of a tablespoon and alittle water to prevent sticking. Put them in the oven, near the top shelf.After 10 minutes, check the slices to see if they are golden brown, they may needanother 5 minutes.When they are cooked put them on a cooling rack for 10 minutes.Warm a small pan filled with 1 cup of water on the hob at the lowest setting.Break the chocolate into squares and put into a heat proof bowl. Put the bowl on top ofthe pan and warm the chocolate. They should melt in about 5 minutes.The slices must be quite cool or the melted chocolate will go grainy when spread ontop.When the slices are cool spread the melted chocolate on with a flexible spatula.Cut them into squares.
