Brown Sugar and Citrus Glazed Ham By Chef Nate Davis INGREDIENTS 10 lb. bone in smoke ham 1/4 cup dark brown sugar, packed 1/3 cup orange juice (not from concentrate) 1 whole fresh orange, sliced into thin rounds 1/2 stick unsalted butter 1/4 cup honey INSTRUCTIONS Pre-heat oven to 350 degrees. Remove ham from packaging and trim excess fat. Score the fat with a sharp knife and place fat-side up on a wire rack. Cover roasting pan with parchment and foil. Bake for 45 minutes. Melt butter and brown sugar together on low heat until sugar is dissolved, stirring with wire whisk. Whisk in orange juice and honey while increasing heat to medium-low. Bring to a boil while stirring constantly. Remove from heat and allow to cool. Remove ham from oven, discard foil and parchment paper. Ladle 1/3 of the glaze over ham, use toothpicks to garnish ham with orange slices. Increase heat to 400 degrees and place the unwrapped glazed ham back in the oven for 15 minutes. Add 1/3 more of the glaze halfway through. Remove ham from oven and ladle the remaining glaze over the top.
