BELTWAY BREWING COMPANY®HOW TO BREW WITH

Step 1: Are We a Good Fit?Beltway Brewing Company has a 30bbl, four-vessel, brewhouse with 60 and 90bbl fermenters manufactured by Diversified Metal Engineering, PEI, Canada. This allows us to brew batch sizes ranging from 30bbls (minimum) to 150bbls. Separation can be performed via our Alfa Laval centrifuge and fine filtration with our Pall SUPRAdisc lenticular filter. We are currently able to package in kegs, 12oz and 16oz cans, and 12oz and 22oz bottles. From brew day to packaging, appropriate quality control tests are performed on-site, in Beltway’s strongly equipped and staffed lab, to ensure that each batch meets our quality assurance specifications. Beltway also offers recipe design consulting as a service that can be quoted separately from production. Take a virtual tour of our facility, here: Beltway Brewing Company Virtual Tour

Step 3: Recipes, Pricing and Ingredient ProcurementBeltway Brewing Company prices our services on a case-by-case basis and that pricing depends entirely on the recipe of the beer to be brewed. Once a recipe is shared with us, we can provide the brand owner with a detailed proposal for all brewing and packaging services we provide. If you do not have a recipe, Beltway can provide you with a quote for recipe design consulting as a service. Beltway can source raw materials from what is readily available from our suppliers. Any malt, hops or other ingredients that are not readily available from our suppliers would either need to be provided by the brand owner or substituted. If you want to use an ingredient that may be a challenge to obtain, please make sure to secure your contracts well in advance!

Step 2: Apply for a LicenseBeltway Brewing Company prefers that our brand owner clients have either a TTB Brewers Notice and appropriate state brewing license or a TTB wholesale license and state wholesale license in order for us to sell finished product directly to the brand owner. This allows the brand owner to maintain maximum control of their brand and distribution rights as well as a smooth and seamless transaction.

Step 4: Packaging ProcurementFor the most part, Beltway Brewing Company does not provide any packaging materials. All kegs, cans, labels, cases and case trays must be procured by the brand owner. Upon request, we can provide you with contact information for one of the many vendors that Beltway partners with to provide these materials and services. In the case of can packaging, Beltway does inventory can ends and can provide a quote. In the case of bottle-filling, the glass, crowns, and blank master cartons are included in our pricing. Packaging design, manufacturing, and delivery can be a very lengthy process and should be started as early as possible.

Step 6: Brewing Services Agreement (Contract)Beltway Brewing Company’s standard brewing services agreement is based on the brand owner’s forecasted production volume. Beltway will guarantee that the forecasted capacity will be available to the brand owner as scheduled and agreed to in advance. There is no minimum annual production requirement, but we cannot guarantee that capacity will be available if more is needed later in the agreement term. There will be a commitment fee deposit required. If more than 10% of the committed capacity goes unused by the end of the term, the deposit will be forfeited. Our standard brewing services agreement can be provided upon request.

Step 5: Distribution PlansPrior to having Beltway Brewing Company brew, the brand owner should have distribution plans mapped out and (a) distributor(s) chosen. Beltway does not distribute or manage logistics or shipping. Your distributor(s) should be able to help you forecast your production volume.

Step 7: Letter of AuthorizationStandard labels will read “Brewed for [Brand Owner, Brand Owner’s Location] by Beltway Brewing Co., Sterling, VA.” Should the brand owner wish to have the labels read “Brewed by [Brand Owner,] Sterling, VA,” the brand owner must supply Beltway Brewing Company (at the time the brewing services agreement is signed) with a letter of authorization in order to add the brand owner’s brand name to Beltway’s Brewers Notice as a DBA. A sample letter of authorization can be provided upon request.

Step 8: Label and Formula ApprovalPrior to having Beltway Brewing Company brew, labels and formulas (if required) must be submitted and approved by the TTB and the state(s) where the beer will be sold. The brand owner must supply Beltway with the label proofs in advance and Beltway will submit for TTB label and formula approval on Beltway’s brewer’s notice. Any licensing or approval required by the state or local areas where the beer will be distributed must be determined by the brand owner and procured by the brand owner or their local distributor in that area.

Step 10: Let’s Brew!Once all the steps above have been completed and all ingredients and packaging materials are on site at Beltway Brewing Company, we can brew! In a few short weeks we will be able to enjoy your delicious beer. Cheers!

3.

Step 9: DepositAt least two months prior to each desired “ready-by” date, the Brand Owner will provide Beltway Brewing Company with a purchase order detailing the amount of beer and packaging requirements. A non-refundable deposit for 10% of the total quoted price for all brewing services to be provided is required 4 weeks prior to brewing and a deposit of 40% is required 2 weeks prior to brewing. The final balance due will be based on the total number of containers (kegs, cases) filled and must be paid prior to pick-up from our facility. Two weeks of cold storage of completed, packaged product is included. Additional storage time may be possible for a fee.

These days it is really hard to offer a craft beer experience that is unique. Your only option to truly set yourself apart is to produce something on your own that is delicious and exclusive. We found that opportunity late in 2013 with Beltway Brewing Co. While we certainly considered ourselves industry experts at consuming good beer, and we still do, we had never actually made any. We worked with Sten and his team to create a recipe for our new "House Beer" program, a session IPA. With a few recipe tweaks, we developed a beer that was our own and it tasted excellent. Beltway did all the necessary hand holding when it came to cooperage, distribution, inventory management and brew scheduling. Over the past 3 years we have brewed and sold over 7,000 gallons of our beer and in 2016 we won a medal at the Virginia Craft Brewers Cup.

Not only has the project been profitable and so much fun but we now offer an experience that is unique and that was the most important

thing. We are thrilled to continue our relationship with Beltway Brewing and in short order we will be looking to expand the program to some new styles!

Beltway Brewing was a crucial part of our success into production brewing. They not only helped with scaling our recipes from a 2bbl to 30bbl they also assisted in sourcing the correct raw materials and cooperage. The flexibility to brew 30-90 barrels was also an imperative part in keeping fresh product rotated during our growth and seasonality. The expert staff worked with us in every step to make sure our product

was produced just the way we needed. After contracting with other facilities, I can honestly say the quality of final product was some of the best in the industry. So, if you are new to the game or just in need of expansion capability we would highly recommend them for your contracting needs.

Amir Peay first approached Beltway Brewing Company in 2013 inquiring about developing a beer specially designed to be aged in James E. Pepper “1776” Rye Whiskey barrels. Amir told us how James E. Pepper sources their barrels to age their whiskey directly from their cooper so that they have complete control over the age and type of barrels that they use. Thanks to the quality of the barrels and the whiskey that was aged in them, these barrels were highly sought after by many a brewer. For a while Georgetown Trading Co. sold these barrels to a variety of brewers who aged their own brands of beers in them. Amir tasted the delicious products being aged in these barrels and asked the question, “what if we were to design a beer specifically for these particular barrels that could compliment the whiskey?” That’s when he discovered Beltway Brewing Company and asked us if we

could design him just such a beer. Beltway developed an imperial Brown Ale with just a hint of smoked malt to play nicely with the notes of toffee, chocolate, oak, and vanilla from the barrels with a rich rye whiskey finish that can only be found in freshly dumped barrels. No more than 30 days after “1776” whiskey is dumped from the barrels in Kentucky, those barrels are being filled with “1776” American Brown Ale at Beltway Brewing Company in Sterling, Virginia. The result? An award-winning ale that is richly unique, deliciously palatable, and great to share with friends, all year long.

James E. Pepper

History of Beltway and James E. Pepper

Amir Peay, ProprietorJames E. Pepper Distillery

I was inspired to create a fine ale aged in our freshly dumped James E. Pepper '1776' Rye whiskey barrels, and the team at Beltway sat down with me, drank some whiskey and beer, crystalized my vision and created the perfect brown ale to pair with the flavor of our complex whiskey. What started as a fun collaboration and experiment has turned into a beautiful, award winning barrel aged beer that we are all proud to share with other aficionados across the country."
