Fresh Rhubarb Bread Pudding

8 slices bread without crusts, toasted, cubed

1 1/2 cups milk

1/4 cup butter or margarine

5 eggs

1 1/4 cups white sugar

1/2 tsp ground cinnamon

1/4 tsp salt

2 cups diced rhubarb (about 5/8 lb)

Place bread cubes into a buttered 2-qt casserole dish.

Combine milk and butter in a saucepan, and heat just to boiling point.

Pour over bread cubes.

In a medium bowl, whisk together eggs, sugar, cinnamon and salt.

Stir in rhubarb.

Pour over soaked bread, and stir gently until evenly blended.

Cover. Refrigerate overnight.

Let sit out 30 minutes while oven heats to 325° F.

Bake, uncovered, for 50 minutes, or until nicely browned on top.

Let stand for 10 minutes before serving.

Makes 8 servings.

Rhubarb Bread Pudding

4 slices bread

3 Tbsp butter

1/2 cup granulated sugar

3/4 tsp cinnamon

3 cups rhubarb, cut into 1-inch pieces

Preheat oven 375° F.

Grease an 8x8-inch baking dish.

Spread each slice of bread with 1 tsp of butter.

Cut buttered bread into 1/2-inch cubes.

Combine sugar and cinnamon.

Arrange half of rhubarb in bottom of prepared baking dish.

Top with half of bread cubes and half of sugar mixture. Repeat layers.

Dot with remaining butter. Cover.

Bake for 20 minutes.

Uncover and bake 20 to 25 minutes more or until lightly browned.

Makes 8 servings.

Chocolate Orange Bundt Cake Recipe #47434

1 (18.25 oz) box Devil’s Food cake mix

4 large eggs

1 (8 oz) ctn sour cream, softened

1 cup orange juice

1/2 cup vegetable oil

2 Tbsp orange zest

1 cup powdered sugar

Cocoa Bundt Cake

1 2/3 cup all-purpose flour

1 1/2 cup sugar

1/2 cup Hershey cocoa

1 1/2 tsp baking soda

1/2 tsp baking powder

1 tsp salt

2 eggs

1/2 cup shortening

1 1/3 cup buttermilk

1 tsp vanilla

CHOCOLATE GLAZE

2/3 cup powdered sugar

1 Tbsp unsweetened cocoa powder

1 Tbsp water

1/2 tsp vanilla

Preheat oven 350° F. Generously grease and flour 12-cup Bundt pan.

In large mixer bowl, blend flour, sugar, cocoa, baking soda, baking powder and salt; add

remaining ingredients.

Beat on low speed 1 minute, scraping bowl constantly. Beat on high speed 3 minutes, scraping

bowl occasionally. Pour into prepared pan.

Bake 50 to 55 minutes or until wooden toothpick inserted in center comes out clean.

Cool 10 minutes; remove from pan to wire rack. Cool completely; place on serving plate. Drizzle

with Chocolate Glaze.

GLAZE: Sift together powdered sugar and cocoa in medium bowl. Add water and vanilla; mix

well. Add more water, 1 tsp at a time, until of desired spreading consistency.

Makes 1 cake.

GLAZE

1 orange, juiced

Sift together flour, baking powder, baking soda, salt, pumpkin spice and cinnamon; set aside.

In a large bowl combine sugar, applesauce and oil. Blend in vanilla and pumpkin. Beat in eggs one

at a time. Gradually beat in flour mixture. Stir in nuts (opt). Spread batter into prepared pan.

Bake for 50-60 minutes, or until a knife inserted into center of cake comes out clean. Allow to

cool.

FROSTING: In a medium bowl, cream together cream cheese and butter until creamy. Mix in

vanilla. Gradually stir in confectioners' sugar. Thin with milk for drizzling. Makes 1 cake.

4 cups miniature marshmallows

Preheat oven 350° F.

Ultimate Carrot Cake

1 (18.25 oz) pkg Betty

Crocker SuperMoist

carrot cake mix

1/2 cup water

1/2 cup vegetable oil

4 eggs

1 (8 oz) can crushed

pineapple in juice

1/2 cup shredded coconut

1 (16 oz) tub cream cheese ready-to-

Heat oven to 350° F. Grease and flour bottoms only of 2 (8 or 9-inch) round pans.

Beat cake mix, water, oil, eggs and pineapple in large bowl on low speed 30 seconds.

Stir in coconut and raisins; pour into pans.

Bake 8-inch rounds 40 to 45 minutes.

Bev's Chocolate Pie

2 cups white sugar

5 Tbsp unsweetened cocoa powder

1/4 cup all-purpose flour

1 (12 oz) can evaporated milk

1 tsp vanilla extract

4 egg yolks

1/4 cup butter

1 (9-inch) single crust pie pastry

4 egg whites

1/4 cup white sugar

Preheat oven to 350° F.

In a saucepan, whisk together sugar, cocoa and flour. Blend in evaporated milk and vanilla.

Beat egg yolks, and stir into pan. Add butter. Heat, stirring constantly just until butter is melted.

Pour filling into unbaked pie shell.

Bake for 35 to 40 minutes, or until pie is not shimmy when shaken.

Beat egg whites until soft peaks form. Gradually add remaining sugar, beating constantly, until

stiff peaks form. Spread meringue on pie.

Return pie to oven.

Bake until meringue is golden.

1 cup all-purpose flour

1/4 cup caster sugar

1/2 cup cold butter

3 cups fresh rhubarb

sliced 1/2-inch

Classic Minute Rice Pudding

3 cups milk

1 cup Minute® White Rice, uncooked

1/4 cup sugar

1/4 cup raisins

1/4 tsp salt

2 each eggs

1 tsp vanilla extract

1/4 tsp ground cinnamon

Combine milk, rice, sugar, raisins and salt in medium saucepan. Bring to a boil, stirring

constantly. Reduce heat to medium-low; simmer 6 minutes, stirring occasionally.

Beat eggs, vanilla and cinnamon lightly in a small bowl. Stir small amount of hot mixture into

eggs.

Stirring constantly, slowly pour egg mixture back into hot mixture. Stirring constantly, cook on
