Historia & Tradición // History & TraditionSalta fue fundada el 16 de abril de 1582 y aún posee una marcada fisonomía hispana que la destaca del resto de las ciudades del país y la convierte en una de las capitales de mayor identidad.

Su perfil urbano está delineado por casas de un solo piso, calles y veredas angostas enmarcadas por cerros circundantes.

El casco histórico concentra los principales exponentes del patrimonio arquitectónico, siendo un área ideal para caminar o detenerse a disfrutar del paseo peatonal alrededor de la plaza 9 de Julio.

La ciudad cuenta además con un balcón natural, el cerro San Bernardo, a cuya espec-tacular vista panorámica se puede acceder por un teleférico, a través de un pintoresco camino o escaleras.

Salta was founded on April 16th, 1582 and still today has a marked Hispanic physiognomy that stands out from the rest of the country’s cities and makes it one of the capitals with the greatest identity.

RECADO150 gr. de carne picada cortada a cuchillo2 cebollas blancas1 papa mediana1 cucharada de sal1 huevo duro1 cucharada grasa pellaCebolla ver de cantidad necesaria.Pimentón, ají, comino a gusto.

FILLING150 gr. of minced meat cut with a knife2 white onions1 medium potato1 tablespoon of salt1 boiled egg1 scoop of greaseGreen onion, paprika, chili and cumin.

LA MASAAgregar a la harina, la grasa pella y salmuera (agua tibia con sal) y armar una masa no muy gruesa estirada con palote. Marcar los discos (con molde de unos 10 cm de diámetro). Agregar pimentón, ají, comino a gusto.RECADOFreir la cebolla blanca en 1 cda. de grasa pella, agregar la carne picada a cuchillo bien fina, condimentar con sal gruesa, una cucharadita de pimentón dulce y ají molido. Para ayudar a su ebullición, agregar un poco de caldo de la papa hervida.Añadir papa hervida y cortada muy chiquita (al dente) y co-mino molido. Usar la cuchara de madera para remover el recado, agregando huevo duro y la cebolla verde picada. Reservar en la heladera.ARMADOTomar los discos de masa, colocar el recado, simbar (repul-gar) entre 17 a 19 repulgues dándole forma.Si las cocinamos al horno... Horno temperatura moderada a fuerte de 5 a 7 minutos.Si las freímos… Ideal olla de hierro con grasa pella muy caliente.

DOUGHAdd the grease, warm water and salt to the flour, and make a not very thick dough, then strecht with the rolling pin. Cut round discs (with mold about 10 cm of diameter). Add ne-cessary amount of paprika, chili and cumin.THE FILLINGFry the white onion in grease, add the minced meat cuted with knife, spice it up with salt, a teaspoon of sweet paprika and ground chili. Cut the potatoe in small pieces and boil it. Add it to the filling with ground cumin. Use a wood spoon to mix it, add boiled egg and the chopped green onion. Take it to the fridge.FINAL ASSEMBLYTake the pastry disc, put some filling, and seal it.To seal the “empanada”, fold the disc and seal the edges by pressing the pastry with your fingers. If you are having a hard time sealing the edges, you can use a fork.If you cook them in the oven... Bake them in a pre-heated oven at 375F-400F. The “empanadas” will be ready once they turned gold.If you fried them ... it is best to do it in a iron pot with very hot grease.

El Milagro Es la celebración religiosa más grande con la que cuenta Salta, en donde todos los 15 de Septiembre desde 1692, una multitud de fieles se dan cita en la procesión por las calles de la ciudad con las imágenes del Señor y la Virgen del Milagro y culmina en la renovación del llamado “Pacto de Fidelidad”.

Cada Septiembre, el pueblo salteño desborda de fe y fidelidad a sus Santos Patronos. A partir del 1 de septiembre comienzan las peregrinaciones. El Triduo Solemne se realiza los días 13, 14 y 15 de Septiembre.

This procession is uninterrupted since 1692.

Every September the people of Salta overflow with faith and fidelity to their Saints Patrons. Beginning on September 1st, the pilgrimages begin and the Solemn Triduum takes place on September 13th, 14th and 15th.
