- £40 -One of Scotland’s most northerly islands, Orkney is steeped in a rich

history dating back to the Norse era with legends of sea monstersand pagan gods. Now this windswept but breathtakingly beautiful island

is home to two Single Malt Distilleries, one of which produces the4th best-selling Single Malt in the United Kingdom - Highland Park.

This Flight starts you with the industry renowned and beloved Highland Park 12 Year Old, with its rich honey tones, floral heather and subtle smoke coming in to play. Moving on to

Highland Park 18 Year Old, awarded ‘Best Spirit in the World’ not only once but twice that delivers a truly refined and complex experience. The final dram is Highland Park 21 Year Old,

a fine example of a single malt whisky that has truly come of age.

HIGHLAND PARK 12 YEAR OLDSweet heather honey, ripe pear and a hint of pineapple developing into smooth malty

finish with notes of brioche and a hint of smoke.

HIGHLAND PARK 18 YEAR OLDManuka honey, notes of nutmeg & marzipan with a soft floral heather and delicate

wood smoke -an incredibly intricate dram.

Highland Park 21 Year OldSweet vanilla and toffee on the fore of this dram, develop into a richer and deeper floral

palate with a more prominent Wood Smoke. A more complex finish that slowly fades.

- £13 -Scotland’s beautiful and rugged terrain is exemplified by its gorgeous coastline and stunning isles -This selection of drams starts up on the windswept northern isle of Orkney with Highland Park and moves down to the world famous island of Islay

(pronounced “Eye-Lay”!). Islay’s legendary status is derived from their abundance of Peat, the substance that makes Scotch whisky “Smokey”. It use over the centuries has

defined the very iconic style of Islay’s Single Malts. Islay is currently home to 8 distilleries, all of which are unique and equally beautiful; however two stand with

a heritage and fame above the others –Bowmore and Laphroaig.

A journey for the more adventurous, staring up on Orkney with the industry renowned Highland Park and its Viking heritage. Moving south you’ll land on the shores of Islay’s unofficial Capital -Bowmore. This is where

one of the oldest distilleries in Scotland produces a deep and intricate dram with maturation warehouses dating back to 1779 and the Legendary Bowmore No1 Vaults allowing the casks to soak up the salty sea air adding a

depth and complexity to the BOWMORE 12 YEAR OLD. The last whisky of this flight is regarded with both equal parts infamy and fame; however it’s universally respected as one of the Smokiest whiskies in the world,

another Legend of Islay, LAPHROAIG 10 YEAR OLD.

HIGHLAND PARK 12 YEAR OLDSweet Heather Honey, Ripe Pear and a hint of Pineapple developing into a

smooth malty finish with notes of Brioche and a hint of smoke.

BOWMORE 12 YEAR OLDSweet Sea Spray, plenty of Oak Smoke and a Tropical Fruits develop into a deeper smouldering

Peat Smoke with Dark Fruits and hints of Citrus. A medium to long finish with a deep earthen note.

LAPHROAIG 10 YEAR OLDBig and Bold, powerful rich Peat Smoke laced with Salt and a Medicinal note.

Beneath the surface is bright Vanilla and Yellow Stone Fruits. A long and smouldering finish.

The Lowlands are home to 50% of Scotland’s population, and therefore (due to demand) some of the most easy and palatable drams from the country.

This Flight focuses on the incredible flavours that derive from special Oak Cask we often use to mature our Whisky in. To do this, we travel over to the

West Coast just North of Glasgow to Auchentoshan Distillery.

Starting with the beautiful light, and crisp yet smooth AUCHENTOSHAN AMERICAN OAK –matured in exclusively high quality Ex-Bourbon Casks. Next you’ll try the more deep and complex

AUCHENTOSHAN 12 YEAR OLD with notes of Dried Fruit and Cinnamon deriving from the Oloroso Sherry Butt used in its second maturation. Finally finishing with a rich and very complex

whisky, often described as like drinking warm fruitcake covered in toffee and chocolate – the AUCHENTOSHAN THREE WOOD sequentially aged in Ex-Bourbon, Ex-Oloroso and finally

Ex-Pedro Ximenez for a full bodied, powerful flavour.

AUCHENTOSHAN AMERICAN OAKInitial Zesty Citrus and Ripe Pears, with notes of desiccated Coconut -developing into rich

and full Vanilla on the palate, remarkably refreshing. AUCHENTOSHAN 12 YEAR OLD

Heaps of Vanilla Cream, Crisp Grapefruit, White Peach and Lemon Meringue. Delicate spices coming to the fore with Cinnamon and Cloves, still a light dram that develops and opens into a

smooth finish. AUCHENTOSHAN THREE WOOD

Soft and waxy, with a depth and complexity matched by few drams, Fruitcake, malty tones, Dark Toffee, Milk and Dark Chocolate, a smooth viscos finish, incredibly moreish
