To make the cake, measure out 300g of mashed banana, then stir in 2/3 cup of rice bran oil, 1/2 a cup of sugar, and 1 tsp of vanilla extract, essence, or paste. Stir until well combined. Sieve in 1 and a 1/2 cups of flour of your choice, 1 tsp of baking power, 1/2 a tsp of baking soda, and a pinch of sea salt. Fold lightly until combine, then pour into a lightly greased cake tin and bake at 180 degrees Celsius for 35-45 minutes. Allow to cool completely before icing with a basic glaze of 1 and a 1/2 cups of icing sugar, 1 tsp of vanilla extract, essence, or paste, and water until the desired consistency is reached.
