November 21, 2012
My annual goose watch is nearly over. Last
Saturday one of our fellow Hello Again readers
ran out of Stewart’s as I was backing away,
pointing and yelling, “There go your geese.”
Sure enough, a sky full of geese traveling east
along the south side of our valley. Hundreds, if
not thousands of geese in several V
formations were up there enjoying our valley.
Turkeys don’t fly in a gaggle formation so I
guess my next sky watch will be for Old Saint
Nick and his reindeer. We can be sure Rudolph
with his red nose will be up there in the lead if
he’s not too old. In my mind’s ear I can still
hear Gene Autry, the famous singing movie
cowboy, singing “Rudolph the red nosed
reindeer, had a very shiny nose.”
I imagine wise old Santa already knows to
stay away from the airspace over the thruway.
With all of the trips he has to make, the
thruway would put Christmas gift giving out of
business if the thruway authorities considered
Santa’s sleigh as a truck. Maybe Santa with
his flying sled will fall under a federal
government outreach program and will borrow
money from China to support Rudolph and his
friends. See — we never have to lose hope.
If we could gather around the old chunk
stove at Charlie Hearn’s general store one
more time, what tales we could spin. Our
so-called modern way of life has changed so
much our chatter about the good old days
would sound like a barrel of blarney fresh from
the old country. Pat and Mike would have a field
day in that group.
What do you think the original group of
farmers and townsmen would say if you tried
to convince them that all of the family owned
shops along Main Street USA would no longer
be there. Huge chain stores would force them
out of business, selling clothes, appliances,
and what-have-you’s manufactured in China,
Japan, Taiwan, and countries all over the world
— everywhere, but not in the USA or with
American labor. To top it off, you would have to
drive your car for 20-30 miles, not a three
minute drive or walk down to Main Street. Burn
up to three gallons of gas at $4.00+ per
gallon, park in a four acre parking lot, walk
three hundred feet to the store entrance, find
a cart, walk another two hundred to three
hundred feet while in the store, stand in line at
the cashier, wait for five minutes while they do
a price check. All of this to purchase a product
made in China which drove a family member out
of work. But you can pay for it with your
credit card.
Don’t stand around doing nothing unless you
want your neighbors to think you have a
government job.
Our original printing press was so
un-modern, the rainbow had to be printed in
black and white.
A pathway to easy riches: When a socialist
says he became rich through hard work, ask
him whose hard work and write a book about it.
A few years ago when I first became
interested in writing, “Hello Again,” I was told
to never refer to anyone as poor — they were
needy. Then I was told it was defeating to use
the word needy, they were merely deprived.
After a bit I learned that under-privileged was
politically wrong. Disadvantaged would be more
acceptable. I still don’t pretend to write
politically correct but I am gaining a great
vocabulary. I ask — is a bum still a bum or is
he disadvantaged? If such a person refuses
gainful employment, what should we call him?
Maybe…smarter than you and me!
A young dad said his education is growing in
leaps and bounds now that he is doing his kids
homework while they watch T.V.
An agriculture agent was heard saying to a
young farmer, “Before you tackle that field you
should spend time thinking about it.” His
father, an old-time farmer said, “You’ll never
plow that field by turning it over in your mind.”
To not teach your kids to work is like
teaching them to steal.
A world of caution to our local parents: The
Amsterdam Police Department has reported
that a drug probe of the highest magnitude
was successfully carried out this past week.
For this we can say a loud thank you to all of
the participating law enforcement agencies.
Moms and Dads, be very watchful. Don’t let the
drug pedaling bums get near your children.
During the past presidential race I learned
that a candidate did not have to be concerned
with telling the truth. The liberal news media
would not judge or correct, but smooth it over
with two-sided blarney. Remember those great
words, “To tell the truth, the whole truth, and
nothing but the truth, so help you God?”
What has higher minimum wages
accomplished? I can think of two things. A lot
of people no longer have a job at all so they
have learned how to live happily ever after on
the dole. High school and college students
cannot find a job at all due to the too high
salary dictated by the government, so they
grow into adults with their own pockets empty
and their hands in someone else’s. Is this a
good way to train our youth?
Remember some of your mothers or
grandmothers pet saying? Such as, “A stitch
in time saves nine” or “it takes less time to do
the job right the first time than to do it over?”
How about this one? Instead of only saying
to a friend in financial need, “I’ll pray for you,”
reach into your pocket, hand him a ten spot
and quietly pray for him. This is when “action
speaks louder than words.”
On the way home to St. Johnsville I passed a
farmer with a three-horse team plowing and
preparing the field for a crop to be planted
next spring. Every furrow was turned over
properly. It was obvious the man takes pride in
his work and was taught how to do the job the
correct way. He is a neighbor we can be proud
of. Keep up the good work, neighbor. Our
country, especially our young, need to learn
from men like you.
You know how a cup of hot cider and a bowl of
popcorn makes you feel warm and thankful?
When you say hello to a neighbor, it produces
the same results and when you talk over one of
his problems with the Lord, your prayer will
automatically add the appreciated butter.
Put on your long john’s and button up the
back flap. Let’s chat
again next week. Winter
is on its way.

Herkimer County Com-munity College hostedthe 36th annualHerkimer County Artsand Crafts Fair. Thisyear, the fair showcasedover 125 vendors withover 3,000 people comingthrough the doors duringthe weekend long event. The fair was filled with
items that includedhandmade jewelry, cookiedough peanut butter, green olive and garliccheese, maple cottoncandy, hand crafted ce-ramic pots, and Christ-
mas tree ornaments.Loraine Murphy of Mo-
hanna Country Craftshas been selling her win-dow pane shirts at thefair for the past five years, saying that it’s a goodshow and offers a con-venient set up. Kim Kellerof Keller Country Quiltsenjoys selling her array ofquilts at the fair becauseit offers a new base of
customers outside of herusual selling area of Nor-wood.
Many fair goers cameout for the food and oth-ers came out to quenchtheir curiosity. Gloria and
Jim Watts of Ilion comeout to the fair every yearwith a guarantee to findsomething different.Robin and Steven Walsh
have been coming out tothe event since 2005 be-cause they like to buy lo-cal, which many of thebusinesses are.
Not only is this a fun, annual event for the com-munity to engage in butproceeds from the dooradmission go straight tothe Herkimer County Col-lege Foundation, whichhelps provide scholar-
ships to Herkimer CountyCommunity College stu-dents every year. Accord-ing to event coordinatorJan Fuhrer, the craft
fair/fundraiser was origi-nally started by GraceMcLaughlin, who hadgone to a fundraiser justlike this one in Rhinebeckand thought it would be agreat idea to bring a ma-jor fundraiser such asthis to the foundation.Fuhrer has watched thisevent grow over the past13 years that she’s been apart of the foundation
and says there is a warmreception from the com-munity. Jean Stapleton, who has been helping outwith the event for thepast 33 years also feelsthe enthusiasm fromthose that come to theevent. The HerkimerCounty Arts and CraftsFair is considered to bethe top craft show in theNorth East.

• In the U.S., an esti-mated 46 million turkeyswere eaten at Thanksgiv-ing, 22 million at Christ-mas and 19 million atEaster.
• The average weight ofturkeys purchased forThanksgiving is 16pounds.
• When Neil Armstrongand Edwin Aldrin satdown to eat the first mealon the moon, their foilfood packets containedroasted turkey with all ofthe trimmings.
• It’s estimated thatturkeys have 3,500 feath-ers at maturity. The cos-tume that Big Bird wearson “Sesame Street” is ru-mored to be made ofturkey feathers.
• Wild turkeys can flyfor short distances up to55 mph and can run 20mph sustained. Domesti-cated turkeys cannot fly.
• President AndrewJackson ranked turkeyhash No. 1 among his fa-vorite foods.
• A turkey typically hasabout 70 percent whitemeat and 30 percent darkmeat.
• White meat is gener-ally preferred in the Unit-ed States, while othercountries choose the darkmeat.
• Only tom turkeys gob-ble; hen turkeys make aclicking noise.
• A turkey can drown ifit looks up when it rains.Another medical oddity ofthe turkey — it can die offright. Turkeys near AirForce test areas appar-
ently had heart attackswhen the sound barrierwas broken overhead.
• Turkeys sometimessleep in trees at night.
• Wild turkeys have ex-cellent vision — about a270-degree field of visioncompared with the hu-man’s 200 degrees — andthey can see in color. They have no externalears, but have impecca-ble hearing.
• Turkeys are the onlypoultry native to theWestern Hemisphere.

Whether you buy afresh or frozen turkey, proper cooking and han-dling of the bird will en-sure a delicious holidaymeal. Here are some tipsfrom the National TurkeyFederation:
• Purchase one poundof turkey per person to beserved. This formula al-lows for the holiday mealplus a little left over forthe prized turkey sand-wich.
• Check that the pack-aging is intact, and avoidpurchasing a bird withpackaging that has ripsor tears.
• Save on supermarketspecials by purchasingmore than one turkey. A
whole frozen turkey canbe stored in your freezerfor up to 12 months.
• Select the size ofturkey based on numberof servings needed. Thereis no appreciable differ-ence between female(hen) and male (Tom)turkeys in tenderness,white/dark meat ratio orother eating qualities.Hens typically weigh be-tween 14 to 16 poundsand Toms 15 pounds onup, so choose the sizewhich best fits the num-ber of dinner guests youexpect.
• Consider alternativeturkey cuts if you arehaving a small gatheringfor the holiday. Other
turkey products that arereadily available includea turkey breast, tender-loins, cutlets, drumsticksor thighs. Or ask yourbutcher to cut a wholefresh bird in two halves, roast one half and freezethe other half to use later.
Frozen Turkey:• Purchase during spe-
cial value sales and storethe bird in the freezer un-til the thawing time be-gins.
• Store at 0 degrees For below.
• Thaw under refrigera-tion, in cold water, or inthe microwave:
Refrigeration: Allow ap-proximately 24 hours perfive pounds to thaw in the
refrigerator.Cold Water: Allow ap-
proximately 30 minutesper pound to thaw in coldwater; change water every30 minutes. Do not usewarm or hot water.
Microwave: Follow themanufacturer’s direc-tions and begin to roastthe turkey immediatelyfollowing the microwaveprocess.
Fresh Turkey:• Store at 26 F and
above.• Purchase for conven-
ience because thawing isnot required. Cost may beslightly higher due tospecial handling requiredby the store.
• Order in advance to
assure availability.• Place fresh raw poul-
try in a refrigerator thatmaintains 40 F and use itwithin the time frame onthe package label, orfreeze at 0 F.
Hard-Chilled Turkey:
• Store at temperaturesbetween 0 F and 26 F.Treat this bird like afresh turkey; it has ashorter shelf life than afrozen product.

Every day at least one child dies in a home fire. In that same day, 293 childrensuffer from a non-fatal unintentional injury caused by a fire or burn. In a nation-wide effort to educate parents about the importance of fire safety Safe Kids and theUnited States Fire Administration are teaming up to ask every family to create ahome fire escape plan and to practice it with the entire family.
According to a recent NFPA study, 77 percent of American households have notdeveloped and practiced a plan to ensure they could escape quickly and safely dur-ing a home fire. Home fires account for nearly 90 percent of all fire-related fatali-ties, and young children are at a particularly high risk because they don’t perceivedanger as readily and can lack the ability to escape a life-threatening fire situation.
“Fire can spread rapidly through a home, leaving a family as little as two min-utes to escape safely once the alarm sounds,” said Rich McCaffery, Community Ed-ucator at Bassett Medical Center and Safe Kids of Otsego County. “Along with aproperly installed smoke alarm, parents should plan several escape routes out oftheir home and then designate a safe place to meet. Then practice with your kidsso they know exactly what to do.”
Safe Kids and the United States Fire Administration are encouraging everyone tocreate and practice an at-home fire escape plan using the Safe Kids downloadableworksheet. The worksheet provides a diagram to help children and parents worktogether to create and practice their own fire escape plan. In addition to plan, par-ents are encouraged to test all smoke alarms frequently, replace batteries at leastonce a year and install new alarms every 10 years.
“Working smoke alarms reduce the chances of dying in a fire by nearly half,” said[Coordinator], Safe Kids [Coalition] Coordinator. “We recommend that all parentsand caregivers make sure they have a working smoke alarm on every level of thehome, outside every sleeping area and in each bedroom. Installing these importantsafety devices could save the life of a loved one in case of an emergency.”
Safe Kids Worldwide and the United States Fire Administration also want to re-mind families that fires are preventable and we must join together to help reducethe number of home fires, and the resulting deaths and injuries.
“We rely on the fire service to fight fires once they occur; however, the preventionof fire is up to all of us,” said McCaffery.“Fire is everyone’s fight.”
Additional tips for planning and practicing how to escape from a home fire in-clude:
• Make sure all windows and screens can be opened quickly.• Security bars should have a quick release device so you can open windows and
doors in an emergency.
• For upstairs windows, have an escape ladder that fits your windows. Make sureyour children know that the escape ladder is for emergencies only and is not a toy.
• Practice feeling the door, doorknob, and cracks around the door with the backof your hand to see if it is too hot. Help your children practice this step.
• Teach children to “get low and go” if there is smoke when they are leaving thehome.
• Choose a safe place to meet in front of your home where you can be seen fromthe street.
• If you cannot safely escape your home or apartment, stuff the cracks aroundthe door and air vents with duct tape, towels or clothing and call 911.
For more information about fire safety for children and families, to receive a firealarm, as well as helpful tips call 607-547-4812 or 607-547-5256 or visitwww.safekids.org.
