VIDYA DAIRY ENVISIONED BYDR. V. KuRIEN
THE FATHER OF INDIAN DAIRYINGWITH
MISSION OF IMPARTING QuALITY EDuCATION
Dr. V. Kurien whose brain child Vidya Dairy is …The SMC College of Dairy Science, Anand (established in 1961) is a pioneering dairy education center of international repute at Anand Agricultural university, for imparting undergraduate dairy technology education. The college is actively engaged in catering to technical manpower for the Indian Dairy Industry. Till the year 1993 undergraduate Dairy Technology students of the SMC college of Dairy Science, Anand underwent the in-plant training in dairies scattered all over the country. This made it difficult for the college authorities / dairy authorities to closely monitor the students’ progress during the training, leaving them woefully short of ‘hands on’ experience. Because of this the students did not or could not take their training more effectively. A request was made before Dr. Kurien for upgradation of the training of Dairy Science College in the face of burgeoning dairy industry in India and especially in Gujarat to fulfil the increased and diversified manpower requirement. An idea was planted for radically enhancing the training component by way of putting up a Vidya Dairy. The lacuna in the Dairy education system was churned by the great dairy visionary Dr. V. Kurien into conceiving Vidya Dairy to fulfil the dream of providing excellent training facilities to the students of SMC College of Dairy Science, AAu Anand. In concurrence with the joint recommendations of National Dairy Development Board, Indian Council of Agricultural Research (NDDB-ICAR) Panel, the programme was modified from B.Sc. (Dairy Technology) to B.Tech (Dairy Technology). With this vision, Vidya Dairy was established in February 1994 with a financial assistance of Rs. 15 crores from NDDB. Vidya Dairy has also become a Company w.e.f. 10th June 1998. We would always cherish the memory of Dr. V. Kurien who used to come to Vidya Dairy and bless the students every year.
His active contribution for ushering dairy industry as well as in the nurturing and development of Vidya Dairy is praiseworthy and remembered by the Management of Vidya Dairy.

EXPERIENTIAL LEARNING PROGRAMME AT VIDYA DAIRY
Till the year 1993 under graduate Dairy Technology students of the SMC college of Dairy Science, Anand underwent the in-plant training in dairies scattered all over the country. This made it difficult for the college authorities / dairy authorities to closely monitor the students’ progress during the training, leaving them woefully short of ‘hands on’ experience. Because of this the students could not take their training more effectively. Dr. R.P. Aneja, Secretary NDDB, accompanied with Dr. R.C. Zala, the Vice Chancellor, Gujarat Agricultural University and Dr. J.M. Dave, Principal and Dean of SMC College of Dairy Science met Dr. V. Kurien, Chairman NDDB. A case was represented before Dr. Kurien for upgradation of the training of SMC College of Dairy Science College in the face of growing dairy industry in India and especially in Gujarat to fulfill the increased and diversified manpower requirement. The lacuna in the Dairy education system was churned by the great dairy visionary Dr. V. Kurien into conceiving Vidya Dairy to fulfill the dream of providing excellent training facilities to the students of SMC College of Dairy Science, AAU Anand.
An idea was put forward for radically enhancing the training component by way of setting up the Vidya Dairy. In concurrence with the joint recommendations of National Dairy Development Board, Indian Council of Agricultural Research (NDDB- ICAR) Panel, the programme was modified from B.sc. (Dairy Technology) to B.Tech (Dairy Technology). On a day which will be remembered for a long time, in the presence of Shri Amarsinh Chaudhary, Chief Minister, Gujarat, in a function at the B.A. College of Agriculture, Dr. V. Kurien offered to build a dairy plant for Rs. 13.85 Crore (on a consideration of 70:30 loan:grant). He suggested that this plant (later christened “Vidya Dairy”) can purchase milk from Amul and sell its products in markets as decided by its management committee. With this vision, Vidya Dairy was established in February 1994 with a financial assistance of Rs. 13.85 crores from NDDB. Vidya Dairy has also become a Company w.e.f. 10th June 1998.
Vidya Dairy was started as an innovative approach to inculcate professional skills in the graduating B.Tech (Dairy Technology) students of SMC college of Dairy Science, Anand Agricultural University, Anand. This was made possible by providing one year of hands-on experience in Dairy Plant Operations & Management Courses I & II.
Vidya dairy has continuously thrived for excellence, in both providing hands on learning / experience to the students and self sustainability as well as product development activities through best practices. It has been a premium institute in human resource development for dairy business aspects along with study program in addition to imparting knowledge to the participants from all over India for various training programs conducted regularly.
The uniqueness of Vidya Dairy is mainly due to its following features-
• The first dairy in India - operated and run by students
• Not- For- Profit making Organization.
• First Dairy in Gujarat to be certified for all three standards namely; ISO 9001- 2008, ISO-14000-2004 and ISO-22000-2005 from DNV -AS certification, Norway.

Students’ Training
Imparting Hands-on-Experience to B.Tech (Dairy Technology) students of SMC College of Dairy Science, Anand Agricultural University, Anand is the mission of Vidya Dairy. The students are exposed to commercially viable environment that helps students in developing professionalism, confidence and proficiency in all work areas. Initially, the students join the dairy as fresh raw material where they are briefed by the staff about various activities of the departments and their role at Vidya Dairy. All resources such as training manuals, ISO documents, Equipment operation manuals, SOPs, HACCP documents, Forms and Formats, SAP System for accounting, Marketing & Inventory Control are provided to the students and they are molded to grasp various activities and take responsibility at work. By doing so in a module of 30 days, the students learn all the aspects of the section thoroughly. This includes manpower handling, loss control, energy saving, operation procedures, problem solving, trouble shooting, schedule maintenance, communication skills, accounting and book-keeping practices, customer handling etc. Once the students are fully acquainted, the staff hands over the responsibilities of the section to the student trainees. There after the students work with confidence, simultaneously learning the ‘nuts and bolts’ of the commercial practices of the organization.
Upgradation in the process such as revising the
operating manuals, computer systems and partial
applicable automation processes in production are few
new methodologies applied in the recent past, apart
from development of new products such as Edam
cheese, varieties of ice cream like Kheer, Rabdi,
Kewra, Khush, Basundi, Sandwich, Pine apple tid
bits.
During the year 2011-12, 57 students successfully
completed their training and a fresh batch of 58
students joined the dairy on 1st May 2012. Vidya

External Training Programmes
In view of liberalization, effective and competitive skill enrichment of human resource has assumed a pivotal place.
Besides imparting regular training to B.Tech (DT) students, the dairy is also organizing Short- Term Training Programmemes for the benefit of the industry in association with the Faculty of SMC College of Dairy Science, Anand. These programmes are aimed at giving broad orientation of technological and analytical aspects of milk and milk products along with hands-on-experience of the operations to the dairy / non-dairy personnel working in plant and laboratory areas. This program refreshes their knowledge and enriches the skills of practicing

technology challenges including reducing costs,
increasing flexibilities, ensuring consistent high quality
dairy / non-dairy executives which ultimately helps the organization to improve efficiency, reduce cycle time and cost. The training programmes are designed taking into consideration the recent requirements of the dairy industry. Tailor made training programmes are also designed as per the requirement of an organization, to fulfil their needs. The students as well as participants of various short-term courses were taken for visit to various dairy plants for exposure to the working environment and new products manufacturing techniques.
During the year, we have conducted new training programmes as mentioned below:
1. Advances in Fat Rich Dairy Products
The ever increasing consumer awareness for choice of dairy foods like cream, butter and fat spreads
Group Photo of ‘Advances in Automation for Dairy Industry’ Programme
with regard to freshness, taste, health and convenience
is a determining factor in capturing the market. The
demand for low cholesterol food, low saturated
fat content, trans-fatty acids free products and
the one’s rich in MUFA, PUFA and Omega-3
fatty acids containing products has changed the
conventional methods of dairy business. Once the
participants are abreast with the knowledge related to
fat-rich dairy product, they can be instrumental in
new product development in these areas e.g. whipped
cream, whipped butter, low cholesterol ghee etc.
With this in focus, Vidya Dairy in association with
Faculty of Dairy Science, Anand organized a 5 days
training program on “Advances in Fat Rich Dairy
Products.”
2. Advances in Automation in Dairy Industry
There is huge potential of automation in Dairy
Industry. Today, the industry is facing several
Group Photo of ‘FSSAI requirements & Pest Management Solutions in Food’ Programme
and strict compliance to regulatory requirements. If
we have to implement Food Safety and Standards Act
2006, Food Safety Management system (ISO 22000),
automation has to play an important role to have
consistent product quality on continuous basis. The
present day Engineers and Dairy Technologists find
bewildering pace of change in the Instrumentation and
Automation, as applied to Dairy and Food Industry.
Be it the field of milk procurement, reception,
processing and product manufacturing, one cannot
expect good hygienic practices in a Dairy Plant
without automatic C.I.P. System. We must equip
ourself for use of PLC based systems.
With this in focus, Vidya Dairy in association with
Automation Industry organized a 2 days training
program on ‘Automation in Dairy Industry’.
3. FSSAI requirements & Pest Management
Solutions in Food
In recent times, Pest Control and Management
has become an integral part of a food safety
Group Photo of ‘Advances In Fat Rich Dairy Products’ Programme
management system for any food establishment. With increasing focus on pre-requisite programs by all the food safety standards, the food safety manager

has to continuously keep up to date with the new
developments in pest management. Moreover, food
safety regulations are becoming far more demanding
and so is its enforcement.
The presence of pests in food production areas is
absolutely unacceptable. Hence, this course aims to
provide the participants with an opportunity to
learn the fundamentals of pest management in
food establishment and to equip participants with
the knowledge and skills required to prevent pest and
have Good Hygiene Practices (GHP) in line with FSSA
requirements.
With this in focus, Vidya Dairy in association with DNV
had introduced a 2 days training program on ‘Pest Group Photo of ‘Outlines of Dairying’ Programme
Management in Food Industry and Awareness on Food Safety and Standards Act 2006’.
4. Outlines of Dairying

Independent Auditors’ ReportTo The Members of Vidya Dairy Report on the Financial StatementsWe have audited the accompanying financial statements of Vidya Dairy (“the Company”), which comprise the Balance Sheet as at March 31, 2013, and the Statement of Income and Expenditure and Cash Flow Statement for the year then ended, and a summary of significant accounting policies and other explanatory information.
Management’s Responsibility for the Financial Statements Management is responsible for the preparation of these financial statements that give a true and fair view of the financial position, financial performance and cash flows of the Company in accordance with the Accounting Standards referred to in sub-section (3C) of section 211 of the Companies Act, 1956 (“the Act”). This responsibility includes the design, implementation and maintenance of internal control relevant to the preparation and presentation of the financial statements that give a true and fair view and are free from material misstatement, whether due to fraud or error.
Auditor’s Responsibility Our responsibility is to express an opinion on these financial statements based on our audit. We conducted our audit in accordance with the Standards on Auditing issued by the Institute of Chartered Accountants of India. Those Standards require that we comply with ethical requirements and plan and perform the audit to obtain reasonable assurance about whether the financial statements are free from material misstatement.
An audit involves performing procedures to obtain audit evidence about the amounts and disclosures in the financial statements. The procedures selected depend on the auditor’s judgment, including the assessment of the risks of material misstatement of the financial statements, whether due to fraud or error. In making those risk assessments, the auditor considers internal controls relevant to the Company’s preparation and fair presentation of the financial statements in order to design audit procedures that are appropriate in the circumstances. An audit also includes evaluating the appropriateness of accounting policies used and the reasonableness of the accounting estimates made by management, as well as evaluating the overall presentation of the financial statements.
We believe that the audit evidence we have obtained is sufficient and appropriate to provide a basis for our audit opinion.
Opinion In our opinion and to the best of our information and according to the explanations given to us, the financial statements give the information required by the Act in the manner so required and give a true and fair view in conformity with the accounting principles generally accepted in India:
(a) In the case of the Balance Sheet, of the state of affairs of the Company as at March 31, 2013; (b) In the case of Statement of Income and Expenditure, of the surplus for the year ended on that date; and (c) In the case of the Cash Flow Statement, of the cash flows for the year ended on that date.
Report on Other Legal and Regulatory Requirements 1. Since the Company is licensed to operate under section 25 of the Companies Act, 1956, the matters as required by the Companies (Auditor’s
Report) Order, 2003 (“the Order”) issued by the Central Government of India in terms of sub-section (4A) of section 227 of the Act, 1956 are not applicable.
2. As required by section 227(3) of the Act, we report that: a. We have obtained all the information and explanations which to the best of our knowledge and belief were necessary for the purpose
of our audit; b. In our opinion proper books of account as required by law have been kept by the Company so far as appears from our examination
of those books; c. The Balance Sheet, Statement of Income and Expenditure and Cash Flow Statement dealt with by this Report are in agreement with
the books of account; d. In our opinion, the Balance Sheet, Statement of Income and Expenditure and Cash Flow Statement comply with the Accounting
Standards referred to in subsection (3C) of section 211 of the Companies Act, 1956 subject to; i. Without qualifying our opinion, we draw attention to Note No 26 on Prior Period depreciation on Grant, wherein the company has
reviewed the treatment of depreciation on assets acquired through Capital Grants and observed that there was some mathematical error in adjusting the amount of depreciation of earlier year with the amount of respective Capital Grant As a result, depreciation on capital assets of prior year, has been debited to respective Capital Grant by crediting the same to prior period items - Prior Period depreciation on grant. Due to such treatment, surplus for the year has been increased by ` 7,65,297/-, with corresponding decrease in respective Capital Grants balance.
e. On the basis of written representations received from the directors as on March 31, 2013, and taken on record by the Board of Directors, none of the directors is disqualified as on March 31, 2013, from being appointed as a director in terms of clause (g) of sub-section (1) of section 274 of the Companies Act, 1956.
f. Since the Central Government has not issued any notification as to the rate at which the cess is to be paid under section 441A of the Companies Act, 1956 nor has it issued any Rules under the said section, prescribing the manner in which such cess is to be paid, no cess is due and payable by the Company.

1. SIGNIFICANT ACCOuNTING POLICIES
A BASIS OF ACCOUNTING AND PREPARATION OF FINANCIAL STATEMENTS
The financial statements of the Company have been prepared in accordance with the Generally Accepted Accounting Principles in India, to comply with the applicable mandatory Accounting Standards notified under the Companies (Accounting Standards) Rules, 2006 (as amended) and the relevant provisions of the Companies Act, 1956. The accounting policies adopted in the preparation of financial statements are consistent with those followed in the previous year, except wherever specified.
B USE OF ESTIMATES
The preparation of financial statements in conformity with generally accepted accounting principles requires that management make estimates and assumptions that affect the reported amounts of assets and liabilities and disclosure of contingent assets and liabilities on the date of the financial statements and the reported amounts of revenues and expenses during the reporting period. Actual results could differ from those estimates.
C FIXED ASSETS
Fixed assets are stated at cost (net of recoverable taxes) less accumulated depreciation and accumulated impairment losses, if any.
Computer software costs are capitalized and recognized as intangible assets in terms of Accounting Standards - 26 on intangible assets based on accounting prudence and significant economic benefits expected to flow there from for a period longer than one year. Capitalized cost includes direct cost of implementation and expenses directly attributable to the implementation.
The carrying amounts of Fixed Assets are reviewed at each Balance Sheet date to assess whether they are recorded in excess of their recoverable amount which represents the greater of the net selling price of assets and their ‘value in use’ determined with reference to the estimated future cash flows from the respective assets, discounted to their present value at the weighted average cost of capital.
D DEPRECIATION AND AMORTIZATION
Depreciation has been provided on the straight-line method at the rates and in the manner specified in Schedule XIV of the Companies Act, 1956. Depreciation on grant portion of the assets is adjusted to the grant account.
Computer Softwares are amortized over a period of 3 years as estimated by the management.
Fixed assets costing ` 5,000/- or less are fully depreciated in the year of purchase.
E PRIOR PERIOD AND EXTRA – ORDINARY ITEMS
Prior period and extraordinary items are accounted in accordance with Accounting Standard - 5. Transactions arising out of errors or omissions which are considered as material are accounted under prior period transactions.
F INVENTORIES
Inventories are valued at lower of cost or net realizable value. The basis of determining cost for various categories of inventories is as follows:
1. Raw materials – on moving average cost
2. Stock-in-process – at absorption cost
3. Finished goods – at absorption cost
4. Stock in trade – on moving average cost
5. Stores and spares – on moving average cost
G REVENUE RECOGNITION
Revenue from sale of goods is recognized on transfer of significant risks and rewards of ownership in the goods to the buyer which is generally at the time of dispatch to the customer. Sales are recorded net of returns (if any), trade discounts, rebates, other pricing discounts to trade/consumer and value added tax/sales tax.
Interest Income is recognized on a time proportion basis.
Revenue from educational services is recognized over the period of the course programme.

H FOREIGN CURRENCY TRANSACTIONS
Foreign currency transactions are recorded in the reporting currency by applying to the foreign currency amount exchange rate between the reporting currency and the foreign currency at the date of the transactions.
Foreign currency monetary items are reported using closing rate. Non monetary items which are carried in terms of historical cost denominated in foreign currency are reported using the exchange rate at the date of transaction.
Exchange difference arising on the settlement of monetary items or/on reporting a company’s monetary items at rates different from those at which they were initially recorded during the year or reported in previous financial statements are recognized as income or an expense in which they arise.
I GRANTS
Grants are recognized when there is reasonable assurance that the grant will be received and all attaching conditions will be complied with. In case of capital grant related to depreciable assets, the cost of the asset is shown at gross value and the grant thereon is treated as capital grant which is disclosed under the head ‘Reserves and Surplus’. Amount equivalent to depreciation provided on such assets is transferred from such Reserves to Income and Expenditure Account at the year end.
J RETIREMENT BENEFITS
i) Short Term: Short Term employee benefits are recognized as an expense at the undiscounted amount expected to be paid over
the period of services rendered by the employees to the company.
ii) Long Term: The Company has both defined contribution and defined benefit plans, of which some have assets in approved funds.
These plans are financed by the Company in the case of defined contribution plans.
iii) Defined Contributions Plans: These are plans in which the Company pays pre-defined amount to separate funds and does not have any legal
or informal obligation to pay additional sums. These comprise of contributions to Employees Provident Fund and Superannuation Fund. The Company’s payments to the defined contribution plans are reported as expenses during the period in which the employee performs the services that the payment covers.
iv) Defined Benefit Plans: Expenses for defined benefit gratuity plans are calculated as at the balance sheet date by independent actuary in
the manner that distributes expenses over the employees working life. These commitments are valued at the present value of the expected future payments, with consideration for calculated future salary increases, using a discounted rate corresponding to the interest rate estimated by the actuary having regard to the interest rate on Government Bonds with a remaining term i.e. almost equivalent to the average balance working period of employees.
v) Other Employee Benefit: Compensated absences which accrue to employees and which can be carried to future periods but are expected
to be encashed or availed in twelve months immediately following the year end are reported as expenses during the year in which the employees perform the services that the benefit covers and the liabilities are reported at the undiscounted amount of the benefits after deducting amounts already paid.
K BORROWING COST
Borrowing costs are recognized in the period to which they relate, regardless of how the funds have been utilized, except where it relates to the financing of construction or development of assets requiring a substantial period of time to prepare for their intended future use. Interest on borrowings if any is capitalized up to the date when the asset is ready for intended use. The amount of interest capitalized for the period is determined by applying the interest rate applicable to appropriate borrowings.
L PROVISION, CONTINGENT LIABILITIES AND CONTINGENT ASSETS
A provision is recognized when the Company has a present legal or constructive obligation as a result of past event and it is probable that an outflow of resources will be required to settle the obligation, in respect of which reliable estimate can be made. Provisions (excluding long term benefits) are not discounted to its present value and are determined based on best estimate required to settle the obligation at the balance sheet date. These are reviewed at each balance sheet date and adjusted to reflect the current best estimates. Contingent liabilities are not recognized but are disclosed in the notes to Financial Statements. A contingent asset is neither recognized nor disclosed.

It is most satisfying to see the students getting practical orientation in both running and management of a dairy plant. Excellent facilities developed through the advice of NDDB would enable GAU to generate well trained human resource in the field of Dairy Technology. We need to develop similar models in different parts of our country. My best wishes to the staff and students in this endeavour.
RS PARODA, Director General, ICAR and Secretary DARE, New Delhi.
Excellent way to train students in the commercial realities of running a dairy plant. Chr-Hansen is pleased to be able to help with aspects of the training programmes.
