Chicken Fried Steak with Gravy

TRANSCRIPT

Chicken-Fried Steak

Ingredients2 ¼ tsp. salt, divided1 ¾ tsp. black pepper,

divided6 (4 oz.) cube steaks38 saltine crackers (1 sleeve), crushed1 ¼ cups flour, divided½ tsp. baking powder½ tsp. ground red pepper4 ¾ cups milk, divided2 large eggs3 ½cups peanut oil

Sprinkle Salt & Pepper over steaks

Combine Cracker Crumbs, flour, baking powder, salt, pepper & red pepper

Mix ¾ cup milk and eggs

Dredge steaks in cracker mixture, dip in milk mixture then cracker mixture again

Heat oil in 12-inch skillet to 360˚

Fry steaks...

…each side about 4-5 minutes.

Keep steaks warm in a 225˚ oven

Carefully drain oil, reserving cooking bits and 1 tbsp. drippings in skillet

Mix ¼ cup flour and 4 cups of milk, salt and pepper

Pour mixture into reserved drippings in skillet

Whisk constantly, 10-12 minutes or until thickened
