Amish iendship Bread ucake Prep time - 1 hour Cook time - 1 hour Total time - 2 hours An edible, non-traditional fruit cake that people will actually appreciate getting! Tammy: [email protected] Recipe type: Quick Bread Serves: 10 slices Ingredients 1 C Amish Friendship Bread Starter 2 C AP Flour 2 teaspoons Pumpkin Pie Spice 1 teaspoon Salt 2 teaspoons Baking Powder 3 Eggs ¾ C Brown Sugar ½ C Butter (1 stick) Juice of 1 Orange, ~1/4 Cup 1 C Rum, or enough to cover the dry fruit 1 C Dry Fruit - any mix. I used a mix consisting of blueberries, cranberries, cherries, raisins, goji berries and pumpkin seeds. We got this mix at Costco. ¾ C Apple Sauce ½ C Candied Ginger, chopped 1½ teaspoons vanilla Instructions 1. Combine the dry fruit and rum and allow to sit for several hours. 2. If you are short on time, microwave the fruit & rum for 1 minute and allow to sit while you prepare the rest of the recipe. 3. Spray large loaf pan with non-stick spray 4. Cut a piece of parchment paper to the line the bottom and two sides of the pan (like a sling for the bread) 5. Preheat oven to 350° 6. In a large bowl, combine the flour, salt, pumpkin pie spice, and baking powder, set aside. 7. In a smaller bowl, combine the eggs, brown sugar, butter, oj, vanilla, apple sauce and C of the rum from the dry fruit. 8. Pour the FB Starter over the dry ingredients, then add the wet ingredients and stir to combine. 9. Add in the drained fruit and candied ginger, stir until just combined. 10. Pour batter in loaf pan. 11. Bake at 350° for 1 hour or until toothpick comes out clean 12. *Please remember I'm baking at 8,000 feet and I used a stoneware pan. You will need to adjust cooking time for elevation and the type of pan you are using.
