Alfredo Sauce [makes enough for 1 pound of pasta] Needed: 3 tablespoons butter, 3 tablespoons greek yogurt, 1 cup heavy cream, 1 egg yolk, 1 cup grated Parmesan cheese, and salt + pepper to taste. In a small pot melt together the butter and yogurt over medium heat. Whisk in the cream. In a small bowl combine the egg yolk and add a tablespoon of the hot cream—whisk together. This will temper the yolk.

Alfredo Sauce

[makes enough for 1 pound of pasta]

Needed:

3 tablespoons butter,

3 tablespoons greek yogurt,

1 cup heavy cream,

1 egg yolk,

1 cup grated Parmesan cheese, and salt + pepper to taste.

In a small pot melt together the butter and yogurt over medium heat.

Whisk in the cream. In a small bowl combine the egg yolk and add a tablespoon of the hot cream—whisk together. This will temper the yolk.

Now add the yolk to the pot and whisk to combine. Let this simmer for a few minutes to allow the cream to thicken.

Stir in the cheese and season with salt + pepper.

Now you are ready to serve.
