WHAT IS SURVIVAL FOOD? Survival food is like any food you might eat. It’s got vegetables, sauces made from tomatoes or cheese or milk and grains; it’s got a mix of protein and carbohydrates and fats; and it tastes great and fills you up. Survival food really only differs from restaurant food in two ways.

1. Survival food has all the water removed. We use a mixture of freeze drying and dehydrating to remove the water. Some things, like peas, rehydrate to a lovely fresh pea consistency when freeze-dried. But they remain chewy and are hard to

rehydrate when dehydrated, so we freeze dry our peas. Our cream sauce, however, takes up less space, costs less and still cooks up beautifully when dehydrated, so we dehydrate it. Each 4Patriots Survival Food recipe is tested and taste-tested to get just the right ingredients that have their water removed in just the right ways, so your meal tastes like freshly-cooked foods once you’ve prepared it.

2. We use packaging that keeps out light, water and oxygen. You know that 4Patriots Survival Food can last up to 25 years with great nutrition and flavor. That might seem like magic, but it’s all in the science. Food goes bad or becomes spoiled for really only a few reasons: it’s infected with bacteria, it’s infected with fungus or the oils have gone rancid. When we remove the water and place our food in an environment with close to zero oxygen, like we do, bacteria and fungus simply can’t survive. Our specially-designed pouches make sure that moisture, light and oxygen can’t seep in over time either, so the food continues to stay fresh. Oils going rancid is a chemical process that can’t

be completely stopped by blocking light, oxygen and moisture, so we take care in limiting the amount of oils in most of our food and we make some recommendations (see below) on storing your kit in a way that helps prevent that chemical process.

STORING YOUR FOOD KIT We at 4Patriots really want your food to be there for you if and when you need it, so we do all we can to make your food last. We package it in specially-designed pouches and we send it to you in strong totes that not only make it easy to store, but also help deter rodents. However, there are a few things you can do once you receive your Food Kit to make sure it lasts.

Consider Your Food Storage Location

As we mentioned above in the What Is Survival Food? section, one of the things that can shorten the shelf life of your 4Patriots Survival Food is rancid oils. That chemical process speeds up under heat. For that reason, we do not recommend prolonged storage at temperatures over 75° F. So, under your bed or in a closet are perfect places for long-term storage. While an insulated garage

or shed could be great, an un-insulated building might get too hot for prolonged periods, depending on your latitude.

Preventing Rodents

Mice, rats and chipmunks are just a few of the creatures that customers tell us have enjoyed their 4Patriots Survival Food. If you want your survival food to be there for you, it needs to not be the food source for wildlife. While our totes are thick plastic with locking lids, a determined mouse can and will gnaw holes in even our thick plastic totes. The most important step is not letting mice know that a storehouse of delicious food is available. We recommend washing the packages and tote in warm, sudsy water, just like you were hand-washing dishes, prior to long-term storage – especially if you are storing them outside. The outside of the packages often have food powders clinging to them because of warehouse accidents and spills. The smell of those powders can attract pests that will greedily chew holes in your 4Patriots Survival Food packages. The rinse will wash off those smells and keep your stash secret from unwanted creatures.

Open Packages

The 25-year shelf life for our food stops the moment the package is opened. Once oxygen and moisture get into the package, bacteria and fungus can begin to grow. As such, we recommend cooking and eating any open package within two weeks of opening. You can re-seal the package or put it into a zipper bag to extend that time frame, but we cannot recommend opened food over one month old. Cooked food should be treated just like fresh food, going into the refrigerator for short storage and appropriately reheated before eating again.

PREPARING A PARTIAL PACKAGEOur food scientists design our food to be cooked one whole package at a time. The multi-serving packages save on packaging costs and allow more people to be able to afford our great food. At the same time, we know that you might want to prepare part of a package and save the rest to be cooked at a later time. These steps will help ensure that your food has the same great flavor and texture that you can expect from the full package.

1. Dump the entire contents into a clean tray or cooking sheet.

2. Using your hands or a spoon, try to get an even distribution of large bits, like pasta, and fine bits, like sauce powder, all around your tray.

3. Once your mix is spread out, you can use a spoon or spatula to divide the mix into the number of servings listed on a package. Most are eight servings, so you would divide the mix in half, then in half again, then in half a third time so you end up with

eight equal piles. Each pile is a serving. You can move those piles of mix to zipper bags or sealed containers for use later.

4. When you prepare your partial package, remember to divide your water too. 4 cups divided by 8 is 1/2 cup. 4.5 cups divided by 8 is 1/2 cup plus 2 tablespoons. You may need to do some math to figure out your water needs. When preparing smaller portions, you may find you need a touch more water than math would indicate.

5. Cooking times will remain about the same as the recipe indicates.

Oatmeal SconesWe’re not going to be a bit ashamed to say that what we often want for breakfast is a cookie. A healthy cookie that’s not going to leave us hungry. Why, hello you delicious oatmeal scone; where have you been all my life?

1. Preheat oven to 375° F. Lightly grease baking sheet.

2. In a medium sized bowl, combine flour, Granny’s Sweet Oatmeal, brown sugar, baking powder, salt and 1/2 teaspoon cinnamon.

3. With pastry blender or a fork, cut in the 1/2 cup of butter. The mixture should be crumbly but have no lumps of butter larger than a small pea.

4. Pour in the milk and stir it just until all the ingredients are moistened.

5. Dust a smooth surface with flour and turn the dough out onto it. Gently knead the scone dough about 5 or 6 times. Move the dough over to the baking sheet and pat it into about a 6-8 inch round, about 1 1/2 inch thick.

6. Mix together the melted butter, sugar and cinnamon for the topping. Brush the topping mixture over the round with a pastry brush.

7. Cut the scone dough into 8 wedges and gently separate the pieces from each other with a 1/2 to 1 inch space.

8. Bake at 375° F for 20 to 30 minutes or until the scones are golden brown. Serve warm.

1 1/2 cups all-purpose flour

1 cup 4Patriots Granny’s Sweet Oatmeal (stir the packet before you scoop)

2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

Porcupine MeatballsThese are a hit with kids. They are so easy to make, even young ones can do it and everybody loves the spiny little meatballs. Grab a kid or grandkid and have a blast. Don’t try to pan fry or dry bake these meatballs; the rice won’t cook – you’ll need to bring out the slow cooker for these super easy meatballs.

1 package 4Patriots Creamy Rice and Vegetable Dinner

2 1/2-3 pounds lean ground beef

3/4 cups water

1 jar pre-made spaghetti sauce or 1 can of crushed tomatoes

1. Remove oxygen absorber and mix package of Creamy Rice, ground beef and water together in a large bowl. Use your (kid’s) hands to be sure everything is well mixed.

2. Pour a little spaghetti sauce in the bottom of slow cooker bowl, just to cover bottom.

3. Roll meat mixture into meatball-sized balls and set into slow cooker. Feel free to add layers, if you need to.

4. Pour remaining spaghetti sauce over raw meatballs.

Rice and Veggie FrittersThese little fritters make a great appetizer on their own, substitute for falafel in pita sandwiches, and are lovely on a salad. You can add additional spices (cumin and cayenne are nice) prior to chopping if you’d like to change up the flavors. (Approx. 20 fritters)

1. Cook Fireside Stew according to package directions using 2 cups of water.

2. Allow to cool 15-30 minutes. The Fireside Stew should have soaked up nearly all of the liquid. If it has not, drain off any remaining liquid.

3. Transfer cooled Stew into a food processor and pulse 4-5 times. Add 1/4 cup breadcrumbs and pulse 2-3 more times. (You can do this by hand with a potato masher, if needed). Check consistency – you want a ball that is moist but will hold together. Add an additional 1/4 cup breadcrumbs, if needed.

4. Drop mix by rounded tablespoons into remaining breadcrumbs. Gently roll ball around until it is entirely coated with crumbs. Set aside and continue rolling all of the mix.

5. In a small frying pan, heat 1/4-1/2 inch of oil. Gently add fritters and fry 3-4 minutes, or until bottom is golden brown. Flip fritters and continue frying, another 2-3 minutes, until other sides are golden as well. Gently remove from oil and allow to drain on a paper towel.

2/3 cups 4Patriots Fireside Stew dried mix (half a bag)

2 cups water

1 1/2 cups dried breadcrumbs

oil for frying

Lasagna FlorentineIf you aren’t growing spinach at home, you should. It grows from inexpensive seed and can be grown in a window box or flower pot if you don’t have a garden. It does well from early spring to late fall with only a few weeks of hating the summer’s hottest heat. It’s a powerhouse of great vitamins and minerals. And it’s completely non-fussy. Pick it young, pick it old – it’s always “ripe” and perfect for munching raw or cooked.

1. Mix entire package of Nonna’s Best Lasagna-Style Marinara with 2 1/2 cups water and place on stove as per package directions. Simmer for 15 minutes.

2. After 15 minutes, mix in chopped spinach. Continue to simmer for an additional 5 minutes.

3. Spoon lasagna into individual serving bowls and top each with a heaping tablespoon of ricotta cheese.

Loaded Baked Potato DipThis makes a ton of dip. If you are just making it for your family, rather than for a full gathering, you might want to halve the recipe. This is great with potato chips, but if you are feeling extravagant, it’s wonderful with waffle fries.

1. Bring 2 cups of water to a boil in a medium saucepan. Add 3/4 cup Cozy Potato Soup, return to boil and then simmer for 20 minutes. Allow the soup to cool completely (overnight is great).

2. Mix cooled soup, sour cream and cream cheese together. You can use an electric mixer or mix by hand.

3. Stir in 5 pieces of bacon, crumbled, and 1/2 cup cheese.

4. Place in serving bowl and garnish with additional 3 pieces of bacon, 1/4 cup cheese and sliced green onion.

5. Cover and refrigerate until ready to serve.

3/4 cup 4Patriots Cozy Potato Soup
