American Cuisine: United Plates

Diana Henry celebrates some American classics.

We tend to be snobbish about American cuisine. It's about all we don't like: fatty burgers, pizzas and super-sized buckets of cola. But I prefer eating in the States than in any country in the world.

Why? Because just as America has given us bad taste TV reality shows and shopping channels, it has also given us the Sopranos and the Wire. When it's bad, it's very bad, but when it's good it's fabulous. So it is with food. There are chefs who are impressive on the international culinary scene. Alice Waters in California for example. She has had a profound effect on the way we eat. She was talking about "local, simple, and seasonal" 35 years ago. She influenced Jamie Oliver.

We may denounce burgers but a good burger is a pure heaven. Americans are best at the share-with-friends kind of food. Barbecued ribs, coleslaw, deep fried onion rings and traditionla cheesecake. It's generous. So do yourself a favour and offer tortilla chips and a big bowl of guacamole to start and chill a pack of beer. Bake sweet potato wedges or saut potatoes to serve on the side. Eat and smile.Adapted from The Daily Telegraph, 23 June 2009
