Host sites are the beating heart of the SHARE Food Network. They are where the proverbial “rubber meets the road.” The hundreds of thousands of pounds of food that pass through the SHARE ware-house every year are on a journey and the destination is the point at which host sites provide the food to people who need it. The effectiveness of the host sites in find-ing people who can benefit from SHARE and enlisting them is critical to the overall success of the program. Because SHARE leverages its volume purchases to the ben-efit of its clients and customers, increased sales is a key goal. When host sites are able to expand the number of people they serve, it helps everyone involved in SHARE.

There are many ways that host sites can expand. They can increase promotion within their own communities by write-ups in church bulletins, building email lists or announcements from the pulpit. But an even more effective way to grow the pro-

In my opinion how we see our-selves has a LOT to do with how others will perceive us. Do we feel like victims – constantly exhausted by the demands of our children, co-workers, spouse, etc? Bemoaning how tired we are and how we “just can’t get anything done”? Is this who you want to be? If this is you, do you enjoy how you are feeling? Yes, there will be times when life’s chaos will overpower even the best laid plans, but you don’t (and shouldn’t) have to pitch a tent and accept this is the only way it can be; because you have “so much going on”. No, I don’t “know” anyone’s circumstances but my own – how-ever I know what I’ve overcome and I believe everyone (with the right support) can conquer their own demons. Here’s the “trick” – you have to decide if the pain you will suffer (and there will absolute-ly be pain) in the short term is worth the potential improvements over the

long term. I want to be clear, I mean “potential”. Sadly I have no way of guaranteeing everything one does to improve one’s position will have positive results – although I abso-lutely believe if we are clear about what we want to accomplish, and open to assistance, we will either get closer to where we want to be or have a much clearer understanding of what is keeping us from it (may-be unrealistic expectations, maybe resources, etc). But, and this is a BIG BUT, the situation is YOURS! It’s not your neighbor/friend/rela-tive, even if they’ve seemingly gone through something just like you’re experiencing now. Their suggested solutions may work, but they should never be taken as guar-anteed success. YOU have to do the heavy lifting, and you have to own your mistakes as they occur. I’m not an island, and I hope no-one else expects/wants to be. My “sup-ports” have changed over the years, as my needs evolve and I overcome various obstacles. I do my best to remain open-minded, acknowledg-ing I do not have the world’s de-pository of knowledge between my ears. And I try to pay it forward, sharing what has worked, and what hasn’t, in the hopes of easing the journey for others. I ask everyone reading this to do the same.

National Grilling MonthSummer is the time for the best out-

door cooking, so it is no surprise July is National Grilling Month. Don’t let im-properly prepared food ruin your summer. Use these grilling tips keep you grilling and enjoying the beautiful weather all season long.

• Wash your hands. Use hand san-

itizer when clean water isn’t readily avail-able where you are grilling.

• Keep food cold until you are ready to put them on the grill. Letting them sit allows bacteria to grow.

• Don’t mix raw and cooked foods. Keep raw foods separate from each other. Once cooked, use a clean dish to place your final masterpiece. The bacteria

from the raw food will contaminate the freshly cooked meal.

• Keep hot food warm to at least 140 degrees Fahrenheit until ready to be placed in a cooler with ice or refrigerator to prevent bacteria growth. For salads and cold foods, keep them chilled on ice.

HOW TO OBSERVEInvite some friends over and throw

some delicious SHARE meats and veg-gies on the grill. Be sure to have some cold beverages and play some upbeat mu-sic. Use #NationalGrillingMonth to share on social media.

The Lost Art of Cooking: August 2019Recipes Complied and Edited By Karen Nash

• 1 ¼ lbs. flank steak (thinly sliced)

• ¼ cup + 2 teaspoons cornstarch (divided use)

• 3 tablespoons vegetable oil• 1 ½ teaspoons minced

garlic• 1 teaspoon minced ginger

Asian Beef

DIRECTIONS:1. Place the flank steak and ¼ cup cornstarch in a resealable plastic bag,

shake to coat evenly. 2. Heat the vegetable oil in a large pan over high heat.3. Add the meat in a single layer and season to taste with salt and pepper

(keeping in mind the sauce has plenty of salt in it!)4. Remove the meat from the pan and place on a plate lined with paper

towels.5. Add the garlic and ginger to the pan and cook for 30 seconds. Add the

soy sauce, sesame oil, and water and brown sugar to the pan and bring to a simmer.

6. Mix the 2 teaspoons of cornstarch with 1 tablespoon of cold water. Add the cornstarch to the sauce and bring to a boil; boil for 30-60 seconds until just thickened.

7. Add the meat and green onions to the pan and toss to coat with the sauce. Service over rice if desired. (Taste great with brown and white rice combined mixed with 1 small can of oriental mushrooms and small can of sweet peas).

• 1 teaspoon toasted sesame oil• 1/3 cup water• ½ cup low sodium soy sauce• ½ cup dark brown sugar• ½ cup green onions cut into 1-inch

pieces• Salt and pepper to taste

• 2-4 Chicken breasts (depending on family size)

• 1 small box spaghetti

• ½ (4 oz) stick butter

• 1 Small onion

Chicken Spaghetti Bake• ½ green pepper

• ½ pound mushrooms sliced

• 16oz jar spaghetti sauce

• Small can of cut tomatoes

• 1bag shredded cheddar cheese

Ham and Cheese Scones

DIRECTIONS:1. Preheat oven to 425 degrees. Line a baking sheet with parchment

paper or a silicone baking mat; set aside.2. In a large bowl, combine flour, sugar, baking powder, garlic pow-

der and salt. Add cold butter, using your fingers to work the butter into the dry ingredients until it resembles coarse crumbs.

3. Stir in buttermilk, cheese, ham and chives until a soft dough form.4. Working on a lightly floured surface, knead the dough 3-4 times

until it comes together. Using a rolling pill, roll the dough into an 8” circle, about 1-inch thick, and cut into 8 wedges.

5. Place scones into the prepared baking sheet. Please into oven and bake for 18-20 minutes, or until firm to the touch and lightly browned.

6. Serve immediately.

Jamaican Seafood Salad

DIRECTIONS:1. Cook noodles according to package directions, omitting salt. Drain and

rinse well under cold water until pasta is cool; drain well.2. Combine crabmeat, shrimp, yellow squash and zucchini in medium

bowl.3. Combine vinegar, soy sauce, cilantro, lime juice, sesame oil, ginger, lime

peel and cinnamon in small bowl; pour over seafood mixture.4. Toss to coat evenly. Serve over noodles, chilled or at room temperature.

PREPARATION:Saute’ onion, green peppers and mushrooms set aside. Boil Chicken set aside to cool. Cook spaghetti per package and set aside. Cut cooked chicken into cubes.

Butter casserole dish. Spread small amount of spaghetti on bottom. Add some of the chicken and sauce mixture layer with spaghetti, and end with chicken and sauce. Do not add too much spaghetti as the casserole will be too dry. Bake casserole in a pan with water at 350 degrees for about 1 hour. Add shredded cheddar cheese 5 minutes before removing.

• 2 cups all-purpose flour• 1 tablespoon sugar• 1 tablespoon baking

powder• ½ teaspoon garlic powder• ½ teaspoon kosher salt• ½ cup (1stick) unsalted

butter, cut into cubes• ¾ cup buttermilk• 1 cup shredded cheese• 1/3 cup diced ham—diced

pancetta or bacon crumbles can be substituted.

• 2 tablespoons chopped fresh chives

Yields: 8 servings - Prep time: 15 minutes cook time: 20 minutes total time: 35 minutes

• 6 ounces uncooked vermicelli noodles

• 6 ounces fresh or imitation crabmeat

• 4 ounces cooked medium shrimp

• 1 cup diagonally sliced yellow squash

• 1 cup diagonally sliced zucchini

• 1 tablespoon rice wine vinegar• 1 tablespoon reduced sodium soy

sauce• 1 tablespoon minced fresh cilantro• 1 tablespoon fresh lime juice• 2 teaspoons Oriental sesame oil• 2 teaspoons grated fresh ginger• 1 teaspoon lime peel• 1/8 teaspoon ground cinnamon

• 4 5-once tilapia fillets• Kosher Salt and freshly

ground pepper• ¼ cup all-purpose flour• 6 tablespoons extra-virgin

olive oil• 3 cloves garlic thinly sliced• ¾ cup low-sodium chicken

broth

Lemon-Garlic Tilapia with Spinach

DIRECTIONS:1. Pat the tilapia and dry with paper towels, then season with ½ teaspoons

salt and a of grinds of paper. Spread the flour on a plate; dredge the tilapia in the flour, tapping off the excess. Heat 2 tablespoons olive oil in a large nonstick skillet open medium-high heat. Add the tilapia and cook until golden brown, about 3 minutes per side. Transfer to a plate; tent with foil to keep warm. Wipe out the skillet.

2. Heat 3 tablespoons olive oil in the skillet over medium heat. Add the garlic and cook, stirring, until it starts browning, about 2 minutes. Add the chicken broth, wine, and lemon zest and juice. Increase the heat to high, bring to a boil and cook until the liquid is reduced by half, about 5 minutes; season with salt and pepper. Add the butter and whisk until slightly thickened, about 1 minute; stir in the parsley.

3. Meanwhile, toss the spinach with the remaining 1 tablespoon live oil and a few grinds of pepper.Divide among plates, top with the fish and drizzle with some pan sauce.Serve with lemon wedges.

• ½ cup dry white wine (white cooking wine works as well)

• Grated zest and juice of 1 lemon, plus wedges for serving

• 1 tablespoon unsalted butter• ¼ cup chopped fresh parsley• 1 5-ounce package baby spinach

(about 8 cups)

• 1 (8 ounce) package imitation crab or lobster meat

• 1/4 cup mayonnaise

• 1 tablespoon finely chopped red onion

Seafood Sandwich• 1 teaspoon lemon juice

• 1/4 teaspoon OLD BAY(R) Seasoning

• 1 tablespoon butter softened

• 2 hot dog buns

PREPARATION:1. In a medium bowl, flake the crabmeat, and mix in mayonnaise, onion,

lemon juice and Old Bay seasoning. Cover and refrigerate for 30 minutes to allow the flavors to mingle.

2. Spread butter on the inside of the hot dog buns, and toast under the broiler. Fill buns with the crab salad and serve.
