2018-19 Outgoing President Caroline Gilmore

Thank you for joining TVOS this year in Pigeon Forge! I hope

you’ll enjoy all the offerings we’ve planned for the Annual Con-

ference! This brochure/registration packet is designed to help

you navigate the conference and make the most out of your edu-

cational and fun weekend.

About 2018-19 TVOS President Caroline Gilmore:

Caroline Gilmore was born and raised in Memphis, Tennessee. During her childhood her father grew grapes and made wine from vine stock that was transported from Italy by her great grandpar-ents in 1900. This was her first introduction to wine. She attended the University of Memphis and the University of Tennessee at Martin, where she met her husband Dr. Keith Gilmore. She is a Registered Nurse for the Hospital Corporation of America (HCA). She has lived in Dickson County for the past 32 years, journeyed alongside Caroline and Keith’s three children Preston, Stephanie, and Julia, to adulthood. They purchased a farm, residing on what was once part of the original Gilmore home in 1795. Caroline finds happiness in her hobbies with TVOS, genealogy, local history, read-ing, and hunting arrowheads. In addition, she strives to contribute to the community by participation in the Vanleer Auxiliary and the Dickson County Historical & Genealogical Society, assisting to doc-ument and save local history as well as promote local interest and scholarships. Caroline enjoys every opportunity to spend time with family and friends.

Session synopsis: Dr. Lockwood returns to lead an informative session on pruning and maintaining

your vineyard. Learn how to keep your vineyard healthy from the ground up with his experience

and skill.

About the Speaker: Dr. David Lockwood’s passion for agriculture started young, as he was raised

on a fruit farm in Lyons, NY. He received his PhD in Plant

Sciences from University of Georgia and is currently the

Fruit and Nuts Specialist at University of Tennessee, splits

an appointment at UGA’s Department of Horticulture, and

teaches the viticulture portion of UT’s “Viticulture & Enolo-

gy in the Mediterranean Region” curriculum. His wife, Bon-

nie, is a retired librarian for Knox County Schools. They

have two daughters, Allison, a Transportation Engineer, and

Laura, a Child & Adolescent Psychiatrist. Dr. Lockwood also

has two grandsons, Austin (7) and Daniel (4).

Session Synopsis: VESTA is a partnership among colleges and universities across the country addressing the

workforce needs of the US grape and wine industry. VESTA provides industry-validated online courses, men-

tored field experiences, and technical workshops in Enology, Viticulture and Wine Business Entrepreneur-

ship. If you’re looking to develop your knowledge and skills in wine making,

enhance your appreciation of wine, identify wine flaws, and understand the

diversity of varieties and wine regions of the world, VESTA may be the pro-

gram for you.

About the Speaker: Bill is Special Projects Coordinator for VESTA. His career

includes serving as an Air Force Aerospace Physiologist researcher, teaching at

the Uniformed Services University of the Health Sciences, and managing R&D

programs. He served as a Space Grant Fellow at NASA Johnson Space Center

and assisted in acquiring grants at the UT San Antonio and Missouri State Uni-

versity. Bill received his PhD in Cardiovascular Physiology from the University

of New Mexico. Bill and his wife Marlee enjoy traveling, visiting wine regions, and keeping up with their 4

children, 8 grandchildren and 0.9 great grandchildren.

“Girl Scout Cookie & Wine Pairing” with Emmett Hunt

“A Bubbly Pairing” with Ali Lewis & George Metzger

Session Synopsis:

This fun session pairs Lemonades, Tagalongs, Samoas, and Thin Mint Girl Scout Cookies with a few wines. The hope is that the wines will bring out or enhance flavors in the cookies and the cookies will bring out or enhance flavors in the wines.

About the Speaker:

Emmett Hunt is an amateur wine maker and cook who enjoys comparing and contrasting flavors. He is a former TVOS President and currently serves as TVOS Treasurer.

Session Synopsis: Popular speaker Ali Lewis is back, and this time she’s teamed up with a local chef in this enjoyable session pairing sparkling wines and food.

About the Speakers: Ali Lewis is an enthusiastic amateur winemaker & professional mixologist. Her big-gest fan is her son, Zane, who has in turn inspired her constantly over the last 4 years. The first wine Ms.

Lewis ever made was a blueberry, and she’s been captivated with the pro-cess of fermentation ever since. Beginning in 2015, she has passed on her knowledge in her popular conference sessions. Ms. Lewis serves as a TVOS Board Member and considers TVOS a great gateway into connections in the wine industry as well as meeting new friends.

George Metzger’s passion for food and drinks led him to become a profes-sional Chef. After culinary school, he was a sous chef at Noble’s Grille in Win-ston-Salem, NC, where he helped inspire menu items. He then opened Foot-hills Brewing Co. with friends, where he created a delectable menu incorpo-rating Foothills beers and local fresh ingredients. The next chapter in his life was Bravo, Italian Cuisine, a venture which has taken him in many places. Home for now is in Knoxville, TN, where he nurtures his passion for the craft of fermentation and for Ali Lewis. Ms. Lewis and her family educate George on the fermentation process, and in return he shares his experiments in the

laboratory (kitchen). Using his knowledge to pair food and wine, George shares his passion and new hobby with friends and coworkers.

“Beer 101: A Tasting Course” with Dr. Keith Gilmore

“Italy and Wine” with Dr. Renee D'Elia-Zunino

Session Synopsis: Do you know the difference be-

tween IPA, Irish Red, Bock, Triple, Wheat, or Stout

beers? Enjoy a fun tasting session to learn more

about one of the most popular beverages in the

world. Some examples may inspire folks to think of

beer more like wine. Maybe you will discover that

one beer that proves to you that Yes!!! Life is Good.

About the Speaker: Dr. Keith Gilmore has been homebrewing beer for over 10 years and has experi-ence with extract brewing, partial extract brewing, all grain brewing and currently experiments with the Picobrew system. He’s had interest in different beer profiles long before it became fashionable with the explosion of the microbrew scene.

In addition to brewing and Dentistry, he raises cattle

and hay on his Century Farm (Triple G Farms), is in-volved in his professional organizations at state and national levels, is an occasional wine maker and en-joys lazy days on the Tennessee River sharing a good

wine or microbrew with family and friends.

Session Synopsis: Discover the importance of wine in Italian culture without leaving Tennessee in this in-

formative session sure to inspire you to enjoy more fabulous Italian wines.

About the Speaker: Renée D’Elia-Zunino is a Distinguished Lecturer in Italian Studies at the University of Tennessee, Knoxville, and advisor for the Italian Club at UTK. https://italianclubutk.com

She grew up in Uscio, Italy, in the Ligurian region, and married Laurent Zunino, a Frenchman from Pro-vence. Her paternal family is disseminated between Lombardy, Piedmont, and Puglia, while her maternal family lives in Bavaria, Germany, and some parts of Texas and Georgia, U.S.A. She is very fond of the Langhe area in Piedmont, and has a particular love for Barolo and Barbaresco wines, white truffles, Gor-gonzola, and porcini. She enjoys to teach, write, and cook, and she loves family traditions. She recently published a children’s book, The Curious Adventures of Wickl-Wackl and His Friends, inspired

by her childhood memories of a character created by her grandfather. The illustrator of the book is local

Session Synopsis: Learn about the French art de vivre and France’s special relationship with wine in this

interesting session. Maybe you will be inspired to travel to one of the world’s premier wine destinations!

About the Speaker: Laurent Zunino is a Senior Lecturer in French Studies at the University of Tennessee, Knoxville, and President of the Alliance Française (AF) of Knoxville. The Alliance Française is a French or-ganization that promotes the French language, culture, and traditions all over the world. The website of AF Knoxville is www.afknoxville.org

Laurent comes from a small village in Provence in the South East of France. He grew up making wine, ol-ive oil, and finding black truffles with his grandfather, and father. Laurent enjoys to share his knowledge with others. He also likes to travel with small groups of connoisseurs to discover exclusive experiences in France, and familiarize interested travelers with the French art de vivre.

Session Synopsis: The American Wine Society may

well be a close relative to our own wine-centric so-

ciety. Learn more about why you should consider

utilizing AWS membership and programs to help

you on your wine journey. Who better to explain

the ins and outs of AWS and TVOS but a former

President of both organizations?

About the Speaker: Mr. Porell is a retired U.S. Air Force Lieutenant Colonel with Master’s degrees in Nuclear Chemistry and Industrial Management. He and his wife, Yvonne, have been active members of TVOS since 1981, when they moved to East Ten-nessee. They were the TVOS Amateur Wine Com-petition Co-Chairs for many years. He is the 1997 Past President of TVOS, when the Harry and Laura Westcott Scholarship Fund was initiated, and the

1993 Past President of the American Wine Society.

Mr. Porell is the recipient of the American Wine Society Outstanding Member Award and the 1994 TVOS Homer Blitch Award. He is also the Founder of the American Wine Society Educational Founda-tion.

“Growing Vinifera in Tennessee” with Chuck Belt

“Cider” with Dr. Folarin Oguntoyinbo

Session Synopsis: Learn about all things Cider with in this educational session about the classic refreshing

fermented beverage. About the Speaker: Dr. Oguntoyinbo is an Assistant Professor at Appalachian State

University, teaching fermentation science. His research focuses on the molecular microbial ecology of fer-

mented foods and beverages, biochemical changes, sensory analysis & process opti-

mization. This is aimed at addressing postharvest value addition, food safety, and

security. He attended 2005 Microbial Diversity course of the Marine Biological labor-

atory, was a Georg Forster Experienced Researcher at the Max Rubner-Institut in

Germany and a Newton International Fellow of the Royal Society at the Institute of

Food Research in the UK. He is a previous visiting researcher at the Center for Food

Safety and Applied Nutrition, FDA, and is the recipient of the 2016 Food Safety

Award for a Professional in a Country with Developing Economy of the International

Association for Food Protection. He is an active member of the Society for Applied

Microbiology and American Society for Microbiology.

Session Synopsis: Learn about growing vinifera in Tennessee while enjoying a tasting of Spout Spring Estates Tennessee-grown vinifera wines: Chardon-nay, Cabernet Sauvignon, Sangiovese, and Riesling.

About the Speaker: Winemakers are said to be both engineers and artists. This certainly holds true for Spout Spring Estates owner & winemaker, Chuck Belt.

Chuck managed and later owned a private engi-neering consulting firm in Knoxville, Tennessee, for many years. His interest in the grape and wine in-dustry began in 1974 with the emergence of the California wine industry. He visited Napa twice, and those trips sparked his interest in the science and art of winemaking.

After retirement, Chuck and his wife Alice pur-chased a farm in Grainger County, originally owned by Alice’s uncle, a cattleman. They decided it would be perfect for a vineyard and winery, and a second career blossomed.

Chuck has a unique approach to winemaking thanks to his engineering background. He truly is an engi-neer and an artist.

“Opening a Winery” with Dr. Rick Riddle

Session Synopsis: Find out what it takes to open

your own winery with a returning speaker and Ten-

nessee wine industry expert!

About the Speaker: James R. Riddle, Col (Ret), USAF,

BSC, received his Bachelors and Doctor of Veteri-

nary Medicine from UT, and his Masters of Public

Health from Johns Hopkins. He retired from the Air

Force at the rank of Colonel after 20 years’ service

to our country. Dr. Riddle recently received his Asso-

ciate’s Degrees in Enology from VESTA. He has ex-

perience as a civilian acquisition manager, managing

the USDA Rural Development, Agricultural Mar-

keting Service, and Natural Resources Conversation

Service grants to include Specialty Crop Block

Grants, Value Added Producer Grants, Farmers Mar-

ket Promotion Grants and multiple Tennessee De-

partment of Agriculture grants. Dr. Riddle founded

the Great Valley Wine Trail and helped establish the

Foothills Wine and Cider Trail and the High Country

Wine Trail. He spearheaded efforts on establishing

Tennessee’s first AVA with Nine Lakes East Tennes-

see. Native to rural East Tennessee, Dr. Riddle has

personally experienced and witnessed the decline of

the rich agricultural heritage and demise of family

farms; he is committed to reversing the downward

economic spiral in rural East Tennessee and sees the

grape and wine industry as an important piece of

this economic recovery.

Session Synopsis: Learn more about olive oil and a

fresh new aspect to pairing food and wine with local

olive oil experts.

their real-life experiences have armed them for the

“History of Wine & Spirits in Appalachia” with Dr. Ron Roach

Session Synopsis: This presentation, lead by Dr. Ron Roach, will provide

information on the unique history of wine and spirits in the fascinating Ap-

palachian region, which overlays part of Tennessee.

About the Speaker: Dr. Roach is Chair and Professor of the Department of Appalachian Studies and Director of the Center for Appalachian Studies and Services at East Tennessee State University. ETSU is the only university in the world to devote a full department to study of the Appalachian region, and the department is home to the world’s first baccalaureate degree in Bluegrass, Old Time, and Country Music Studies. Dr. Roach has conducted research on highland development in the Carpathian Mountains and was one of a number of scholars who represented the Appalachian region at the first two Carpathian-Appalachian International Conferences, held in Ukraine and Romania. He wrote his dissertation on the Scottish Enlighten-ment, which comes in handy as he teaches in the department’s study abroad program in Scotland and Ireland. Prior to joining the ETSU faculty, Dr. Roach served twelve years at Young Harris College in the north Georgia mountains, where he was Vice President for Academic Affairs and founded the Center for Appalachian Studies and Community Engagement.

As noted in TVOS’s bylaws, the Annual Meeting will

consist of presenting nominations for leadership

positions, and voting on them. All TVOS members

are encouraged to attend.
