BELLAVITA ITALIAN PAVILIONTravelling to eleven cities worldwide, this feature brings the very best in Italian food and beverage. Bellavita exhibitors shared their passion for authentic Italian food and high quality bespoke artisinal products. Traditional tips and innovative ways to create the iconic Neapolitan pizza were also experienced.

THE FOOD TRUCK ‘N EXPERIENCEJB Innovative Solutions presented the Food Truck‘N Experience, to bring sample bites from Toronto’s top food truck vendors including The Arepa Republic, The Kathi Roll Express, Temptations, Get Your Own Taters, Alijandro’s Kitchen and 6 Spice Rack.

START UP LANERC Show is dedicated to showcasing the next generation of hospitality entrepreneurs and this year’s show had a wonderfully diverse mix of products. Hand crafted wood serving vessels, Ethiopian dishes, all manner of hot sauces and marinades as well as ready to go foods were all on offer.

RESTAURANT OF THE FUTUREWhere industry leaders brought to life an interactive pop-up restaurant experience where good design, quality materials and products demonstrated how you can effectively build your business.

DESIGN The design and building of this experience was made possible through partnerships with Navigate Design, Build it by Design, Contract Supply, Caesarstone, Marble & Granite Stonecraft, Anony, Juiceworks, Autonetics, Kwik Signs, Libbey and Spirit China.

LOCAL STAGEThis stage hosted sessions on Indigenous culinary tourism, Indigenous culinary demonstrations and FeastON produced the ‘Best of FOODstock tastings’ that showed the positive impacts buying local can have on menus.Presented by Dairy Farmers of Ontario, Egg Farmers of Ontario, Garland, Victorinox, Culinary, FeastON, OntarioFresh, Greenbelt.

BAR & BEVERAGE WORKSHOPAn intimate setting that allowed for hands on learning about such topics as how to set-up a cocktail menu, seasonality of drinks, curating a diverse wine list, daily pairings of cheese with whisk(e)y, beer and bourbons.Presented by Labatt, Beam Suntory, Perrier, GotSkill, Seedlip, AMEX, Higgins, Beer Store, Libbey.

COFFEE COMPETITION STAGEHome of the Coffee in Good Spirits and National Latte Art Competitions. Guests watched three days of elimination rounds as competitors worked to brew a perfect shot of espresso and etch the microfoam to exacting standards.Presented by Natrel, Specialty Coffee Association, Mahlkonig, Puro by Urnex, Ditting, Dalla Corte, Libbey

RC LEADERSHIP CONFERENCEA half-day leadership conference where top research companies were brought together to share industry insights. Expert speakers delivered information on how to sustain your customers, your staff and your operations as well as gain inspiration from unconventional wisdom to overcome roadblocks and achieve success. Presented by PepsiCo, Diversey, GFS, KPMG, Skip the Dishes, Nespresso.

TOP-TO-TOP RECEPTIONAn invite-only exclusive reception where industry leaders gathered to enjoy a culinary experience and network with peers with inventive sips and bites. Presented by Chase, Silver Chef, GFS, DFO, Labatt, Beam Suntory, AMEX.

INDUSTRY NIGHT OUTThe official party of the RC Show where hospitality professionals came together for the ultimate networking experience, to cheer on Speed Rack competitors and to let loose and party. Presented by SOCAN, Labatt, Speed Rack, GotSkill, Brandm3dia.

BREAKFAST WITH CHAMPIONSA power breakfast where attendees learned about the new trends transforming the world of hospitality and heard from the game-changers leading the industry in new and exciting directions. Presented by PepsiCo, Egg Farmers of Ontario, Diversey, Dairy Farmers of Ontario, Organic Meadows, Nespresso.

FOODSERVICE ENERGY FORUMA free half day workshop designed to introduce attendees to the array of energy-saving tips, rebates and initiatives the IESO has to offer. A virtual walk-through of a working restaurant was conducted by Stephen Dixon who showed that even small changes to technology, policy and behaviour can add up to big savings. Three operators in each segment of the industry shared the positive steps they’ve taken to become more energy efficient. Restaurants Canada announced the four participants of the Foodservice Energy Challenge, follow their journey at: restaurantscanada.org/energychallenge. Presented by IESO, Restaurants Canada and Ontario Restaurant Hotel Motel Association (ORHMA).

BOCUSE D’OR COMPETITIONThe country’s top culinary titans competed for a chance to represent Canada at the world’s most prestigious gastronomic competition. Winner Chef Samuel Sirois will move on to represent Canada in the Continental selection round.

JOHN BIL OYSTER SHUCKING COMPETITION A match up of speed, precision and presentation with first place going to Eamon Clark. Presented by Raspberry Point

BEST ONTARIO VEAL SANDWICH COMPETITIONCulinary students competed to create the ultimate veal sandwich. Tender, fresh, flavourful and locally sourced. Lambton College students took home first place followed by Centennial & Humber colleges respectively. Presented by Ontario Veal.

SPEED RACK COCKTAIL COMPETITION Elite female bartenders went head to head in a fierce battle of the cocktails with the top four competitors; Colie Ehrenworth, Marta S., Monique Godinho, and Adrianna Cavarra, qualifying to compete in the Speed Rack Nationals. Speed Rack and Restaurants Canada helped raise $6,750 for the Breast Cancer Support Fund. Presented by Speed Rack.

COFFEE IN GOOD SPIRITS COMPETITIONS Mixologists competed to develop boozy coffee beverages that highlighted the best of both worlds. Graham Hayes took home first place followed by Nelson Foo and Stacey Landry respectively. Presented by Natrel, Specialty Coffee Association, Mahlkonig, Puro by Urex, Ditting, Dalla Corte, Libbey.

NATIONAL LATTE ART COMPETITIONCompetitors ground and made coffee, steamed and poured milk, then drew and even etched with foam. Vivian So took first place follwed by David Kim and Bruce Lee. Presented by Natrel, Specialty Coffee Association, Mahlkonig, Puro by Urex, Ditting, Dalla Corte, Libbey.

GARLAND CANADA CULINARY COMPETITIONTwelve chefs faced off over three days of elimination rounds to craft their most sustainable dish. Judges based their decisions on plate presentation, texture, cooking techniques, efficiency, timing and use of ingredients. Chef Nick Chindamo won first place, followed by Trevor Hay. Presented by Garland Canada, Victorinox, Dairy Farmers of Ontario, High Liner Culinary, Canada Beef, Chicken Farmers of Canada, KitchenAid, Chef Works, San Pelligrino.

BEYOND THE RAIL COMPETITIONCanada’s finest bartenders showcased their skills crafting cocktails that challenged innovation, sustainability and creativity. Congratulations to Madi Homewood who took first place followed by Tyler Newsome and Tyrel Shaw respectively. Presented by Beam Suntory, Canadian Club, Jim Beam, Maker’s Mark, Courvoisier, Banff Ice Summit, Auchentoshan, Laphroaig, Sipsmith, Hornitos, Macallan.

COMPETITIONS Chefs, bartenders, baristas, oyster shuckers, and students went head to head for cash, prizes or to continue competing further.

RC LEADERSHIP AWARDShanna Munro, President and CEO, Restaurants Canada and Robert Foy, Vice-President Pepsico, co-presented the award to Jean-François Archambault, CEO and Founder La Tablée des Chefs, for his outstanding and pioneering contribution to the Canadian Food Industry. La Tablée des Chefs has diverted 750 tonnes of food waste from landfi lls last year alone. This diverted food was turned into two million meals served.

RC CULINARY EXCELLENCE AWARDCo-presented by Edward McDonnell, CEO of the Greenbelt Fund and Friends of the Greenbelt Foundation and Shanna Munro, President and CEO of Restaurants Canada to Chef Brad Long, Cafe Belong and Belong Catering, who was recognized for his outstanding contribution to the culinary landscape, his commitment to the local movement and his advocacy for sustainability.

RC INNOVATION AWARDPresented to W.D. College for Sally the Robot by Chowbotics. Sally the Robot helps to reduce food waste and labour costs, while creating thousands of healthy and fresh made to order meal options ready at the touch of a button in places fresh food wouldn’t normally exist.

BAR AND BEVERAGE PAVILION This pavilion was full of vendors eager to share their innovative products. Contain-ing both a stage and a workshop area that hosted programming to teach you how to build your bar business including; how to elevate your sports bar offering; building an intersectional bar space, the future of whisk(e)y as well as how to craft a non-al-cohol cocktail.

ONTARIO PAVILIONThis area showcased the best of Ontario food and beverage products. The Local stage hosted Feast ON producing the best of FOODstock tastings that demonstrated the positive impacts buying local can have on your menu.

CANADA PAVILIONThe Canada pavilion was all about variety and sustainability. Vendors showcased seafood from both coasts while Canada Beef hosted a pavilion addressing beef’s place on the table and in the ecosystem. Québec high-lighted traditional and family businesses.

COFFEE, TEA AND SWEETS PAVILIONEthical and sustainable coffee was the order of the day. Served with Natrel milk and brewed with filtered water provided by Danamark. There were energy efficient roasters, grinders, brewers, and coffee makers of every description. Zuccarini ran latte art labs throughout the Show.

TECH PAVILIONThis pavilion was presented by Silverware POS, and represented the largest showcase of technology. It was also home to Workers Safety and Prevention Service’s Learning Lounge where daily content sessions ranged from how to build a sustainable business, to ergonomically smart kitchen design.

ECO PAVILIONHome to Save On Energy’s Eco Stage which offered panels and workshops on sustain-ability initiatives. This pavilion presented in part by Waste Management and Enbridge also showcased waste solutions, utility company rebates and incentives on how to green your business.

SPECIALTY PAVILIONThis pavilion was the destination to expand your menu offerings with on trend products and was definitive proof that allergen-,glu-ten-free and plant based products can be satisfying and delicious.

WORLD PAVILIONHome to vendors from feature countries Italy, Mexico, South Africa and Spain, the World Pavilion had the colourful feel of a neighbourhood market. Bellavita Italian Expo Toronto was on hand to represent the latest and best Italian and Spanish food and beverage to the world. The nearby Food Truck N Experience gave visitors the chance to see what food trucks can really do. The selections to taste and try were original, international and adventurous.

RC Show 2019 was a dynamic immersion in all aspects of the industry, and was our most ambitious event yet. More than 800 exhibitors covered 250 000 square feet of the show floor with wares, services, brands and experiences of every description across five pavilions, eight stages and four hospitality events, all with an eye on sustainability. Attendees were able to shop top trending food products, purchase the most delicate smallwares to the largest pieces of equipment, while taking part in eight competitions, and experiencing the first ever RC Show pop up, Restaurant of the Future. The show offered something for absolutely everyone.
