The mission of NELCF is to improve the independent innovation capability and break through the constraints of key technology and equipment in the Chinese cereal fermentation industry through research and major equipment development of core technology. NELCF focuses on four major research areas:1) cereal processing engineering and technology;2) brewing technology and engineering; 3) optimal control and scale-up technology of fermentation; 4) bioseparation engineering.

There are alkaline, surfactant and enzyme three kinds industrialized rice starch preparation methods. Our results show that rice starch enzymatic preparation, the breakage rate of the smallest particles; particle size distribution chart shows, rice starch enzymatic preparation has the smallest particle size. Integrated indicators, enzymatic method for preparing rice starch with respect alkali and surfactant law have a higher superiority can better maintain the natural characteristics of rice starch.
