Tinie Eilers and her family run Bles-Wold Dairy, which produces yogurt, Greek yogurt and sour cream near Lacombe. They started

producing yogurt for their young diabetic daughter, focusing on a natural product

without a lot of added sugars. They’ve come a long way, now producing around 5,000 litres of yogurt a week. Handling all the production on-site helps the process go smoother. “In the

morning, we milk our cows. The milk goes from our cows directly to our pasteurizing

plant. We’ll be adding cultures this evening. Tomorrow it will be yogurt, and the next day it will be on the shelves,” Tinie explains. “From cow to shelves, we can do it in three days.” For Tinie, she prefers to start her day with yogurt.

“I only eat plain yogurt, although I will sometimes add it to my smoothies.”

We’d really be in a pickle without cultured foods. Just think of all the great foods worth

preserving: there’s beer and bread, cheese and wine, kimchi and sauerkraut, soy sauce and

yogurt. History has shown there’s a lot we can gain from canning. Your mission this week is

to show us which cultured food has fermented its status as your favourite. Your choice should
