Are you serving a slow-cooked ham with an apricot-Dijon glaze? Or is it a brown-sugar or spicy maple glaze? Or perhaps a Brandy-peppercorn-honey glaze? Whatever you settle upon, the Stéphane Aviron Vieilles Vignes Moulin-à-Vent 2017 has the subtle depth and power, as well as the ripe cherry, blackberry and smoky tones, to work in concert with the ham without either being overwhelmed by or overpowering your recipe. Even simpler is to serve something like the Brilla Prosecco. This light, fresh sparkling wine is a lovely palate-refresher, with high- toned fruit �avours that make it easy company for the meal.

If you’re serving poached salmon with lots of fresh herbs, the herbaceous and citrus tones of the Yealands Estate Single Vineyard Sauvignon Blanc 2018 will complement the meal’s �avours beautifully, as will the wine’s fresh, zesty acidity and silky texture. For grilled, smoked or roasted salmon or one in a butter-and-cream sauce, try the Gérard Bertrand Perles de Grenache Rosé 2018. The red fruit, depth, structure and saline minerality of this wine make it a versatile match for these smokier styles of salmon.


Crispy-skinned pan-seared salmon will pair quite nicely with the Masi Serego Alighieri Monte Piazzo Valpolicella Classico Superiore 2015 (page 45).

Turkey is so beloved, in part, because it permits such exibility with the sides: cranberry sauce, butternut squash, roasted or mashed potatoes, baked acorn squash with chestnuts – the options are as delicious as they are legion (and let’s not forget your super-duper-ultra-secret stu�ng recipe!). That’s a lot of heavy-duty dining, which makes a wine like the Radford Dale Vinum Chenin Blanc 2017 ideal. Fresh and bracing, it’s a wonderful palate- refresher but also has the fruit tones to supplement the varied avours of the meal. The inty accents in the bright, juicy, dry Allram Strass Grüner Veltliner 2018 will partner well with the roasted notes from the turkey, while the juicy tropical fruit, vanilla and oak spice in the Ironstone Chardonnay 2018 make it a classic choice.

Portugal’s reputation for wines that provide both excellent value and quality is a product of the expressive, dynamic blends produced here. Though imported grapes such as Syrah, Cabernet and Chardonnay are permitted, the soul and strength of Portugal’s winemaking is centred squarely on its over 250 indigenous grape varieties. Such diversity allows for a virtually inexhaustible array of must-try, elegant, refined, food- friendly expressions. This astonishing variety might suggest a confusion of styles for consumers to wrap their heads around, but Portugal’s winemakers focus on just a handful of grapes as the foundation for their blends. Touriga Nacional, Touriga Franca, Aragonez (Tempranillo) and Trincadeira are the most common contributors to the country’s red blends, providing a familiar baseline for fans to lock on to. Producers then draw on the wealth of native grapes at their disposal to season these blends and reflect their own styles. Similarly, Albariño (Alvarinho), Loureiro and Encruzado are some of the more important white varieties used in Portugal’s white blends.

The wine was aged for 12 months in stainless steel to allow full expression of the ripe red and black fruit. Expect a round, soft, easy-to-enjoy crowd-pleaser that would be great with a meatball-and-sausage casserole.

FOOD FOCUSED

Vinho Verde’s aromatic whites, with their tones of white flowers, apple and lime-citrus, along with bright driving acidity and mineral notes, are perfect for seafood in a rich, creamy sauce.

Reds with more pronounced, muscular tannins call for beef dishes or rabbit in red-wine sauce to match their intensity, rich ripe fruit and dense mouthfeel.

Chardonnay is the most popular white grape in the world, beloved for its ability to communicate a true sense of place and for the vastly different expressions, flavours and textures of the wines it can produce. It’s a grape with near-limitless appeal, equally adept as a base for sparkling wine and for crafting still wines that range from light and crisp to rich and full-bodied. The same conditions that make Niagara so ideal for Pinot Noir naturally benefit this other Burgundian star. Flat Rock Chardonnay has a rich, intense style and delivers layered, complex apple, pear and peach, with a lifted acidity that brightens the cedar, spice and caramel tones of the oak influence. It also has that pure minerality that’s such a prized characteristic trait of Niagara Chardonnay.

Cabernet Franc also traces its origins to France, though in this case to Bordeaux and the Loire. In Bordeaux, Cabernet Franc is a key component in some of that storied region’s longest-lived, most complex and most profoundly intense blends. In the Loire, it delivers taut, lean, vibrant wines with a silky texture. Niagara’s Cabernet Franc fits nicely between both poles, delivering lighter-styled Cab Francs that are generously flavoured and textured. Cabernet Franc has always done well in Niagara’s cool growing environment, and as this aromatic, spicy, fruit-filled example from Featherstone attests, recent vintages have seen a marked increase in the already considerable quality of the Cab Franc produced here. This speaks to an excellent future in Niagara for both this noble grape and those who love it.

Pinot Noir is a famously challenging grape to grow and requires a very particular set of circumstances in which to shine. This is why Pinot is only successful in small pockets of vineyards outside its Burgundian home; Niagara ranks high on this exclusive list. Niagara’s cool-climate growing conditions allow for the development of Pinots that are approachable, vibrant and full of ripe fruit, without sacrificing the elegance, depth and character that make Pinot so special. With its lithe, delicate, food-friendly character, bright mixed berry fruit, spice, earthy tones and polished structured tannins, Tawse Growers Blend has a Burgundian spirit and a Niagara soul, perfectly illustrating the nuanced disposition of Niagara Pinot.

For lovers of Ontario’s signature Icewines, these are exciting times. Innovative winemakers have introduced a wide range of styles, with some producers now fashioning sparkling versions. Icewines based on Riesling, Gewürztraminer, Chardonnay and Chenin Blanc are becoming increasingly popular, as are tantalizing expressions crafted from Cabernet Franc, Cabernet Sauvignon and Shiraz. But with all the experimentation, the heart and soul of Niagara Icewine remains in those made from the thick-skinned, winter-hardy Vidal. The palate was vibrant, with acid strawberry flavors. It is very immediate, approachable, round and juicy, perhaps not with the depth and longevity of the 2014 but really pleasant and drinkable.
