Viticulture- The science and business of growing wine grapes.

Harvesting- When the grapes are matured they are checked to as certain the level of sweetness and are then harvested.

Stemming – is the separation of stem and grapes( Grapes send to the press).Crushing- the grapes separate the must send for the fermentation.

Draining- Liquid wine is drained from vat without being press and go into barrels (free run wine). The remaining pulp retains about 20% of the wine.

Pressing- the remaining pulp after draining is press to squeeze out the press wine.

Mixing- the free run wine & the press wine always from the same source , are mixed together in appropriate ratio to obtain the desire balance.

Fermentation- Sugar and acid that naturally react with wild yeast.The vineyards have their own yeast’s. It could take 10 days to 30 days to convert natural sugar to alcohol.

Aging- the final stage of vinification is aging the wine. At this point the clarified wine is transferred in to the oak wood cask or metal vats in which wine is allowed to further mature and develop flavor.

Bottling- after maturation of wine , done bottling.

Corking- The cork of still wine is purpose to allow the wine to breath and to prevent it from turning into vinegar .
