Male and female pig meat have a different

smell

Joe wants Sue to develop a quick, easy,

reliable test for evidence of Boar meat

mixed into his Gilt meat

GILT : A gilt is a young female pig that has not given birth to a litter of her own.

SOW : A sow is an adult female pig that has given birth to one or more litters of piglets.

BARROW : A barrow is a male pig that has been castrated or is incapable of reproducing before he reaches sexual maturity.

BOAR : A Boar is an uncastrated domestic or wild male pig.

Two naturally occurring compounds:

androstenone and skatole.

Odor compared to urine and feces

Occurs in boars if not castrated.

Compounds can be detected by taste and

smell when the meat is heated.

Only on the Y chromosome

Tells the embryo to be a boy
